AZTECA COCOA RICE PUDDING

The Aztecs believed that cacao seeds were the gift of Quetzalcoatl, the God of wisdom who was hated by the other gods for giving cacao to humans. The seeds had so much value they were used as a form of currency. Originally prepared only as a drink, chocolate was served bitter and spicy. Often this gift from the gods was reserved for royalty and religious leadership. It was believed to give strength and so was added to a soldier's rations. Later it was seen as an aphrodisiac which made it much more popular. I have used their spirit as inspiration for this sweet and spicy rice pudding.

4 cups water
2 cups white rice
2 teaspoons ground cinnamon
2 cups milk
1 cup white sugar
½ cup cocoa powder
1 tablespoon cayenne pepper
1 teaspoon vanilla extract

Steps:

  • Combine water, rice, and cinnamon in a large pot; bring to a boil. Reduce heat to medium low, cover pot, and simmer until all the water has been absorbed, about 20 minutes.
  • Mix milk, sugar, cocoa powder, cayenne pepper, and vanilla extract into rice mixture, increase heat to high; cook, stirring constantly, until thickened, 5 to 10 minutes.
  • Remove pot from heat and pour pudding into a large glass bowl; let sit for 30 minutes before serving.

This creamy pudding has been a family favorite for 40 years. It's delicious with a dollop of whipped cream on top, but my husband-a true dairy farmer-just pours on more milk!

2-1/2 cups milk
1/2 cup uncooked long grain rice
1 egg, beaten
1/4 cup sugar
1/4 cup packed brown sugar
3 tablespoons baking cocoa
1/4 teaspoon salt
1 teaspoon butter
1/2 teaspoon vanilla extract
Whipped cream or additional milk

Steps:

  • In a medium saucepan, bring milk and rice to a boil. Reduce heat; cover and simmer for 30 minutes. Remove from the heat and let stand 10 minutes. Stir together egg, sugars, cocoa and salt in a bowl; add a small amount of rice mixture to bowl and mix well. , Return all to saucepan along with butter and vanilla. Cook over low heat for 5 minutes, stirring constantly. Remove from the heat; cover and let cool in a saucepan for 1 hour. Serve with whipped cream or milk.

This recipe is the closest I could come to the rice pudding my husband remembers his mother made when he was a boy. I experimented for a long time trying to match that unwritten recipe from the past. Now this is one of my husband's favorite desserts!

4 cups cold whole milk
1 package (3.9 ounces) instant chocolate pudding mix
1/4 cup raisins
1/4 teaspoon ground cinnamon
1 cup quick-cooking rice
1 large egg, well beaten
1/8 teaspoon ground nutmeg

Steps:

  • In a medium saucepan, combine all ingredients. Bring to a boil over medium heat. Cool for 5 minutes, stirring twice. Chill until serving.
