BABY'S FAVORITE PRUNE CAKE

Baby's Favorite Prune Cake image

I made this when my cousin wouldn't part with her recipe for prune cake, and none of the recipes I could find seemed to match the goodness of her baking. This is almost an exact replica, and for all I know could be exactly what she uses. You will find that this cake is a very old-fashioned quick bread that uses baby food to keep it moist and provide that extra burst of flavor. I am sure it will quickly become one of your favorites!

1/2 teaspoon clove
1 teaspoon salt
1 cup chopped walnuts
2 cups pitted prunes, snipped into raisin-sized pieces
2 tablespoons sorghum molasses

  • Tastes good plain though.

BABY FOOD PLUM CAKE

Baby Food Plum Cake image

Everyone was baking this cake in the 70s! Virginia Schimmel, my senior English teacher, my inspiration for becoming an English teacher, and later my mentor at Woodham High School in Pensacola, gave it to me. Not only is it delicious, but it's very special because of the person who shared it with me. Photo:...

Provided by Sandy Young

Categories     Cakes

Time 45m

Number Of Ingredients 11

2 c sifted self-rising flour
2 c granulated sugar
1 c vegetable oil
1 tsp vanilla extract
3 eggs
2 jar(s) baby food plums
1 tsp cinnamon
1 tsp ground cloves
ICING
1 c sifted confectioners' sugar
enough lemon juice to make a "drizzle"

Steps:

  • 1. Sift together flour, sugar, cinnamon, and cloves.
  • 2. Add oil, vanilla, eggs, and plums. Beat until thoroughly mixed.
  • 3. Pour batter into a greased Bundt pan. Bake at 350 for 45 minutes.
  • 4. Icing: Mix the sifted confectioners' sugar and lemon. Just make a little more if this isn't enough icing to give as much flavor as you'd like.
  • 5. SANDY'S NOTE": I've had a hard time finding baby food plums lately. Apples and Blueberries will probably work just as well. Just anything with a purple color, but I don't know how well prunes will do.

  • Preheat oven to 350 degrees F. Line an 8 inch square pan metal with foil and spray with cooking spray.
  • Put the egg, egg whites, sugar, prune puree (or applesauce), vanilla , espresso powder and salt in a mixing bowl. With a whisk or a mixing spoon, stir well. Try not to beat any extra air into the mixture, just stir it. When mixed, add the cocoa powder and stir until blended. Stir in the flour. When flour is incorporated, stir in the chocolate chips.
  • Pour into the pan and spread evenly. Hold pan about 1 ½ inches from the counter and drop it on the counter a couple of times to release any air bubbles. You probably won't have air bubbles, but it's kind of fun to do anyway.
  • Bake on center rack for 27 minutes or until set (will still be shiny). Let cool completely, then chill if desired.
