BACON QUESADILLAS

Steps:
- Heat a skillet over medium high heat. Top four of the tortillas with shredded cheddar, cheese and a portion of the green chiles.
- Top with remaining four tortillas.
- Add one tortilla "sandwich" to the skillet and cook for 2-3 minutes, until the bottom is toasted and the cheese is melted. Flip and cook the other side for 1-2 minutes.
- Repeat for the remaining assemble quesadillas.
- Slice into wedges and serve with sliced black olives, sour cream, and salsa.

BACON CHEESEBURGER QUESADILLA

- In a large skillet, add ground beef, cooked bacon, onion, garlic and Ro*tel. Cook on medium heat until meat is cooked through, onions are translucent and most of the moisture is cooked off. {We don't want soggy quesadillas!} While meat is cooking, butter one side of each tortilla. Place tortilla in a large skillet or griddle butter side down. Layer with cheese then ground beef mixture then more cheese. Don't be shy with the cheese! Place second buttered tortilla on top of cheese butter side UP. Cook quesadillas for approximately 4 minutes on each side over medium heat. You don't want to cook too fast or the cheese wont melt. And you don't want to cook too slow or the cheese will never melt! Medium heat should do it. Once tortilla turns a golden color on the bottom, flip it and cook additional 3 - 4 minutes on other side. If you aren't sure how to flip it because it's so big, place a plate face down onto your quesadilla. Then using a spatula scoop up the quesadilla onto the plate then flip plate over so it's in the correct position and slide quesadilla off. This will ensure no spillage of yummy insides! Once done, use a knife or pizza cutter to cut into 6 pieces. Serve with ketchup, mustard & pickles!
BARBEQUE BACON QUESADILLAS

- Heat 1 tablespoon olive oil over medium heat in a large skillet. Add onion; cook and stir onions until softened about 5 minutes. Stir in bacon pieces and brown sugar, and cook until bacon pieces are crisp. Remove from skillet.
- Spread 1/4 cup barbecue sauce on one tortilla. Sprinkle with 1/4 of the bacon and onion mixture, 1 tablespoon cilantro, and 1/2 cup Cheddar cheese. Top with a tortilla.
- Heat 1 teaspoon olive oil over medium heat in a large skillet. Place the uncooked quesadilla in the skillet. Cook on one side until browned and crisp, about 3 minutes. Flip, and cook on the other side until the cheese is completely melted, about 2 minutes more. Remove to a paper towel lined plate to cool. Repeat with remaining six tortillas. Slice into quarters using a sharp knife or kitchen scissors when cool enough to handle.

- Cook bacon to desired level of crispiness. Drain and allow to cool slightly.
- Spread one side of each tortilla with cream cheese.
- Crumble cooked bacon slices on one tortilla. Top with the other. Press edges to seal.
- I cook mine in my handy-dandy quesadilla maker until it is golden brown -- but if you don't have one of those, you can use a large nonstick pan on medium heat. Cook, turning once, until golden brown on both sides. This should only take about 1-2 minutes per side.
- Cut into 6-8 wedges and serve warm, topped with salsa.
BACON AND CHEESE QUESADILLAS FOR TWO
A simple, quick, and very tasty lunch, snack or appetizer. Original recipe from Cook's Illustrated, however I've simplified the process.

Steps:
- Cook the bacon in a small non-stick skilled over medium heat until crisp.
- Remove bacon and transfer to a pper towel to drain.
- Pour out all but 1 tablespoon of bacon fat, then return to medium heat.
- Add the minced shallots, pinch of salt and cook, stirring occasionally until softened, about 2 minutes.
- Transfer shallots to small bowl and set aside.
- Wipe out skillet with paper towels and return to medium-low heat and lightly toast each tortilla on ONE side (about 1 minute each).
- Slide the tortillas to a cutting board.
- Divide the cheese, bacon and shallots equally between the four tortillas; spreading the filling over half of each toritilla, leaving a 1/2-inch border around the edge.
- Top with jalapenos and/or adobo sauce.
- Fold the tortillas in half and press to flatten.
- Brush tops generously with oil and sprinkle lightly with salt.
- Place quesadillas in skillet, oiled side down and cook over medium-low heat until crisp and well browned, 1 or 2 minutes.
- Before flipping, brush tops of each with oil and sprinkle salt.
- Flip the quesadillas and continue to cook until the second sides are crsip and well browned, 1 to 2 minutes longer.
- Tranfer to cutting board and cool slightly before cutting in half.
- Serve with salsa and/or guacamole.
