SAUCY BACON ROLL UPS



Saucy Bacon Roll Ups image

These are very easy to make for a buffett or appetizer party. I usually double this, because they go fast! Note: The last time I made these, I fried the bacon after I cut it into thirds until it was almost done, cooled slightly on paper towels then wrapped around the water chestnuts and secured with toothpicks. The sauce was a lot less greasy. I cooked for about 5 minutes less. Enjoy!

1 lb bacon
1 (19 ounce) can water chestnuts, drained
toothpick
1/4 cup chili sauce
1/4 cup mayonnaise
1/2 cup brown sugar

Steps:

  • Preheat oven to 350.
  • Seperate bacon into slices; cut each slice in thirds.
  • Wrap each cut slice of bacon around a water chestnut.
  • Secure with a toothpick.
  • Place in a baking dish.
  • In a bowl combine chili sauce, mayonnaise, and brown sugar.
  • Pour sauce over bacon roll ups and bake in the preheated oven for 35 to 40 minutes.

2 packages (8 ounces each) cream cheese, softened
1 envelope ranch salad dressing mix
5 green onions, chopped
1 can (4 ounces) chopped green chiles, drained
1 can (3.8 ounces) sliced ripe olives, drained
1 celery rib, chopped
1/4 cup chopped sweet red pepper
2 to 3 tablespoons real bacon bits
8 flour tortillas (10 inches)

Steps:

  • In a small bowl, beat cream cheese and dressing mix until blended. Beat in the onions, green chiles, olives, celery, red pepper and bacon. Spread over tortillas. Roll up. Cut each into 1-in. slices. Refrigerate leftovers.

This is a wonderful appetizer, and works well for potlucks too. I think I saw it in the Sunday paper advertising section about 10 years ago. If you can make your own fresh pico de gallo or salsa, wonderful, but if not, jarred salsa works just fine. Cooking time includes 1 hour chilling time.

4 ounces cream cheese, softened
4 ounces shredded cheddar cheese (preferably sharp)
4 ounces diced green chilies (canned)
1/2 cup sliced scallions or 1/2 cup green onion
1/2 cup chopped black olives
4 (6 ounce) flour tortillas (fresh)

Steps:

  • In medium bowl, blend cheeses, chiles, scallions and olives.
  • Spread 1/2c cheese mixture on each tortilla and roll up jelly-roll fashion.
  • Wrap each roll tightly in plastic and chill at least one hour.
  • Using a very sharp knife, cut each roll into twelve half-inch thick slices; serve with salsa.

1 (8 ounce) package cream cheese, softened
1 (4 ounce) can chopped green chilies, drained
1/4 teaspoon garlic salt
2 tablespoons picante sauce
3 -4 large flour tortillas
picante sauce (for dipping)

Steps:

  • Mix cream cheese, chilies, garlic salt and 2 tablespoons picante together.
  • Spread on tortillas.
  • Roll tortillas tightly, like a jelly roll and wrap in plastic wrap.
  • When ready to serve, cut in 1/2-inch pieces.
  • Serve with additional picante sauce for dipping.
