POTATO WITH SOY SAUCE ("GAMJA JORIM") RECIPE - (4.3/5)

- Peel the 2-3 medium sized potatoes (15 oz :425 grams worth). Wash and cut them into ¾ inch cubes until you have 2½ cups' worth. Put the potato into a colander under running water to remove the starch. Cut ½ cup's worth of onion into bite sized chunks. Set aside. Add 1 tbs olive oil to a heated pan. Put the potato into the pan. Add 2 cloves of minced garlic and sauté it until the potato looks a little translucent. Add the onion and keep stirring for a few minutes. Add a half cup of water to the pan, 2 tbs of soy sauce, and 1 tbs of corn syrup (or sugar). Mix and simmer over medium heat for about 10 minutes until the liquid is evaporated. Keep stirring so it doesn't burn. Add more water if it looks like it needs some. When the potato is cooked, turn off the stove and add 1 tbs of sesame oil. Sprinkle a pinch of sesame seeds over top and serve with rice.

- Scrub the potato, and prick several time with the tines of a fork. Place on a plate.
- Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 2 tablespoons of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.
- Top with remaining cheese and sour cream, and serve.

AIR FRIED SOY CHICKEN WITH POTATOES RECIPE BY TASTY

- In a bowl, make the marinade by mixing grated ginger and garlic, white pepper, five spice powder, sesame oil, and soy sauce into a marinade.
- Rub marinade all over the chicken evenly, including under the folds and inside the cavity. Chill in the fridge covered with a lid for at least 2 hours. Before air frying, take marinated chicken out from the fridge to bring to room temperature.
- Pre-heat air fryer at 200°C for 3 minutes.
- Optional: peel and cut potatoes or any root vegetables such as carrots or sweet potatoes into pre-heated air fryer as the base.
- Place chicken into the air fryer, breast side down and air-fry at 200°C for 30 minutes.
- Flip the chicken and toss the potatoes every 7-8 minutes to ensure even cooking.
- Serve warm.
MICROWAVE OVEN ROASTED POTATOES
It got this recipe from a Microwave Cooking Class about 20 years ago. I have passed it to many friends and they all love it (even one who "does not cook"). She had her family raving about her potatoes.

Steps:
- 1. Heat first six ingredients on HIGH POWER for one minute.
- 2. Mix and coat the potatoes in the drippings and seasonings that were heated. Cover with plastic wrap and cook 6 minutes on HIGH POWER.
- 3. Stir inwards (circular) or toss and microwave on HIGH POWER for 6 more minutes.
- 4. Rest for 5 minutes. Serve and enjoy.
- 5. I sometimes add an onion cut up and a clove of garlic finely chopped. I put the first 6 ingredients into a zip lock bag and heat and then add potatoes. Toss and place in pan.
JAPANESE SOY GLAZED SWEET POTATO
This is a really tasty dish which we like as part of a Japanese meal- usually we'll serve with a tofu miso soup, steamed short grain rice and a salad made with Recipe #362130. I'm not sure how many serves but would serve 4 in this style meal. To make it faster, I often microwave the potato for 5 minutes first and leave out the water when baking. This way it's done in about 30 minutes.

- Combine first 6 ingredients; stir well with a whisk. Arrange potatoes in a single layer in a 13 x 9-inch baking dish.
- Pour soy sauce mixture over potatoes. Cover and bake at 400° for 50 minutes or until tender.
- Baste with the soy sauce mixture. Uncover, and bake an additional 10 minutes or until liquid is absorbed.
- Sprinkle with sesame seeds and shredded nori, toss and serve.
