BACON CHEDDAR PATTY CAKES
I always seem to have leftover mashed potatoes in my fridge. This is a great recipe to use them up.

Steps:
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Remove the bacon slices, crumble, and set aside. Leave the bacon drippings in the skillet.
- Mix the mashed potatoes, eggs, onion powder, salt, and black pepper together in a bowl; stir in the crumbled bacon and Cheddar cheese.
- Form the mixture into 8 patties. Heat the bacon drippings over medium heat, and pan-fry the patties in the drippings until crisp on each side, about 4 minutes per side.

LEFT-OVER POTATO CAKES
I love my leftovers. I go out of my way to make too much so I have thigns for future meals and to play around with. I think Thanksgiving is the Alpha and Omega of holidays for leftovers. I came up with this recipe as an easy meal that uses leftover prepared ingredients. It can also be adjust to meet your tastes. Just remember that the potates are prepared mashed potatoes (with butter, milk, etc.) You can use any kind of flavors you like so don't worry if you just made plain-jane mashed potatoes or you made cheddar mash with bacon and sour cream. If you don't have left over stuffing or do not want to use it just replace the amount with more potatoes. You can add in meat, cheese, etc as you want also. My husband topped his cakes with leftover turkey and poured some turkey gravy over it and loved it (he went back for 3rds)

Steps:
- Mix cold mashed potatoes, cold stuffing, eggs, and biscut mix together until well blended. If you are adding anythign else such as meat or cheese this is the time to mix that in too. If you put the mixture into the refridgerator for 30 mintutes or so it will tighten up some and be easier to work with.
- Preheat the oven to 400. Combine the bread crumbs and friend crushed onions together in a shallow bowl. Prepare a rimmed cookie sheet by spraying it a healthy amount with nonstick cooking spray.
- Work with 1/4 cup of potato mixture at a time and form into patties. Press into the crumb mixture. and arrange it on the cookie sheet.
- Place in the oven and cook for 20 minutes. Use a spatula to flip the cakes and continue cooking 20 more minutes.
- Let the cakes set 5-10 minutes before serving.
EASY CHEDDAR POTATO CAKES (MADE WITH INSTANT POTATOES)
If you looking for ways to use your instant potato flakes then here is a really great recipe! feel free to adjust all amounts to taste, this takes only minutes to make and my family loves them, don't try this recipe using regular mashed potatoes, it will not work --- this recipe was tested using Idahoan brand mashed potato flakes but I am sure any brand will work fine, servings is only estimated.

- In a bowl combine the first 9 ingredients.
- In another bowl mix the milk with egg and melted butter whisk until well combined; add to the dry mixture; mix well.
- Let mixture stand for about 10-12 minutes until the liquid is absorbed.
- Heat oil in a skillet over medium heat.
- Using slightly wet hands tightly shape into small balls (about 2 tablespoons) place into hot oil then press down lightly with back of a spoon).
- Cook about 3 minutes on each side or until browned adding in more oil as needed.
- Remove to paper towels.

- Preheat oven to 350 degrees. Peel potatoes, and cut into 1-inch chunks. Place in a large saucepan, and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, and reduce to a simmer. Cook until tender and easily pierced with a paring knife, about 20 minutes. Transfer to a colander to drain; return to pan, cover, and set aside.
- Meanwhile, heat a large skillet over medium heat. Add bacon, and cook until crisp and browned, turning once. Transfer to paper towels to drain; let cool, andcrumble into pieces.
- Using a fork, mash the potatoes in pan until light and fluffy. Add the cream cheese, butter, and sour cream, and stir until combined and smooth. Add theonion and any onion juice, chives, 2 cups cheese, half the bacon, salt, and pepper. Stir until well combined.
- Transfer to a buttered 3-quart baking dish. Top with remaining 1/2 cup cheese. Bake until top is slightly golden and potatoes are heated through, about 30 minutes. Remove from oven; garnish with remaining bacon. Serve immediately.

- Measure out 1/4 cup level amount of potato mixture OR a slightly heaped ice cream scooper (this is what I use because using the lever, it pops out easily) and drop onto panko/flour. Repeat to fill plate / baking tray (don't crowd, difficult to handle).
- Use an egg flip (or base of cup) to pat it down to 1.5cm/2/3" thick patties, then flip and pat to coat the other side with panko/flour. Set aside and repeat with remaining potato mixture.
