1 1/2 lb extra-lean (at least 90%) ground beef
1/2 cup Progresso™ plain bread crumbs
1/4 cup finely chopped onion
1/4 cup ketchup
2 teaspoons yellow mustard
1/2 teaspoon salt
1 1/4 cups water
3 tablespoons butter or margarine
1/4 teaspoon garlic salt
3/4 cup milk
2 cups mashed potato flakes
1 cup shredded Cheddar cheese (4 oz)
1 medium tomato, chopped
3 slices precooked bacon, crumbled
2 green onions, sliced, if desired

Steps:

  • Heat oven to 375°F. In medium bowl, mix ground beef, bread crumbs, onion, ketchup, mustard and salt. Press mixture in bottom and up sides of ungreased 9-inch pie plate. Bake 15 minutes.
  • In medium saucepan, place water, butter and garlic salt. Heat to boiling. Remove from heat. Add milk. With fork, stir in potato flakes. Stir in 1/2 cup of the cheese.
  • Remove partially baked beef crust from oven; pour off any drippings. Spoon potato mixture evenly into crust. Return to oven; bake 10 to 15 minutes longer or until beef is thoroughly cooked and thermometer placed in center of crust reads 160°F, and potatoes are hot.
  • Remove pie from oven. Top with tomato, remaining 1/2 cup cheese and crumbled bacon; bake 5 minutes longer or until cheese is melted. Remove from oven; top with green onions. Let stand 10 minutes before serving.

Steps:

In the mean time Prep potatoes. Add 1/2 cup cheese and garlic salt to potatoes. Remove partially baked beef crust from oven; pour off any drippings. Spoon potatoes mixture evenly over crust. Return to oven and bake 15 min. Remove from oven and drain drippings again. Bake another 15 min. Remove from oven and top with tomato,remaining 1/2 c cheese and crumbled bacon. My husband and father-in-law love this! It's a bit time-consuming, but worth the spectacular results. Truly a handsome dish! From one of those Pillsbury mini-magazine things you buy at the supermarket. Please note that you can use leftover mashed potatoes as well, or make homemade if you really hate instant!

1 1/2 lbs lean ground beef
1/2 cup plain breadcrumbs
1/4-1/2 cup finely chopped onion
1/4 cup ketchup
2 teaspoons prepared mustard
1/2 teaspoon salt
3 slices bacon
1 1/4 cups water
3 tablespoons margarine or 3 tablespoons butter
1/4 teaspoon garlic salt (I use garlic powder though, and extra of it)
3/4 cup milk (skim is fine)
2 cups instant mashed potatoes
1 cup shredded cheddar cheese, divided in half
1 medium tomatoes, chopped
2 green onions, sliced (or you can use white onion)

Steps:

  • Heat oven to 375 degrees F.
  • Combine ground beef, breadcrumbs, onion, ketchup, mustard and salt and mix well.
  • Press hamburger mixture in bottom and up sides of an ungreased 9 inch pie pan to cover completely.
  • Bake in preheated oven for 15 minutes.
  • While meat mixture is baking, cook bacon until crisp.
  • Drain on paper towel, cool, and crumble.
  • Discard bacon drippings or save for another recipe.
  • In a medium sauce pan, combine water, margarine and garlic salt.
  • Bring to a boil.
  • Remove from heat and add milk.
  • With a fork, stir in potato flakes.
  • Then stir in 1/2 cup of cheddar cheese.
  • Remove partially baked"crust" from oven, pour off any fat.
  • Spoon potato mixture into crust evenly.
  • Return to oven for another 10-15 minutes or until meat is thoroughly cooked, and potatoes are heated through.
  • Remove pie from oven.
  • Top with tomato, remaining cheese and crumbled bacon.
  • Return to oven, and bake for 5 minutes longer, until cheese is melted.
  • Remove from oven, top with green onions.
  • Let stand 10 minutes before serving.

The thick cut bacon adds a nice savory flavor and good texture. I love all the vegetables mixed throughout as well. It's just a great combination of flavors, textures, and ingredients. The cheese really thickens up the broth and it's a "stick to your ribs" kind of meal! Serve this with some crusty bread for sopping up all that goodness.

1 pound ground beef
4 thick bacon slices bacon
2 medium carrots, peeled and diced
2 medium celery, diced
1 small onion, diced
4 cups chicken broth
2 large russet potatoes, peeled and diced
3 tablespoons butter
¼ cup all-purpose flour
1 ½ cups milk
2 cups shredded Cheddar cheese, plus more for garnish
1 teaspoon dried basil
1 teaspoon dried parsley
salt and freshly ground black pepper to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain, discard grease, and set aside.
  • Meanwhile, place bacon in a 3-quart saucepan, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove crisped bacon with a slotted spoon and set on paper towels to drain. Leave bacon grease in the saucepan.
  • Sauté carrots, celery, and onion in the bacon grease until vegetables are tender, about 10 minutes. Add broth, potatoes, and browned ground beef; bring to a boil. Reduce heat, cover, and simmer until potatoes are tender, 10 to 12 minutes.
