Made with crabmeat, cheddar and creamy mayo, it's a given that this salad is going to be a hit. But to be on the safe side, you'd better add bacon too!

1 Tbsp. chopped fresh parsley

Steps:

  • Mix ingredients.
  • Refrigerate several hours or until chilled.

1 cup olive oil
1 cup red wine vinegar
2 large garlic cloves, minced
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 cup chopped parsley, leaves
1/4 cup chopped fresh tarragon
1/2 pound cooked lump or back fin crabmeat
1/2 pound cooked special crabmeat
6 cups mixed greens
4 to 6 lemon wedges

Steps:

  • In a non-reactive bowl combine the oil, vinegar, garlic, salt, pepper, parsley, and tarragon. Add the crab and place in the refrigerator. Toss every hour for 4 hours.
  • Serve on a bed of mixed greens and squeeze a lemon wedge over right before eating.

1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons capers, drained and roughly chopped
2 teaspoons Dijon mustard
2 tablespoons minced shallots
3 small inner stalks celery with leaves, finely chopped
1 lemon, zested and juiced (about 1 tablespoon juice)
Kosher salt
Freshly ground white pepper
1 pound lump cooked crabmeat
1/3 cup chopped fresh parsley, plus 1/2 cup fresh parsley leaves
1/3 cup chopped fresh tarragon
20 endive spears (3 to 4 endives)
4 strips cooked bacon, finely chopped

Steps:

  • In a large bowl, combine the mayonnaise, sour cream, capers and mustard. Add the shallots, celery, lemon zest and juice, and stir. Season with salt and pepper. Gently fold in the crabmeat, the chopped parsley and the tarragon.
  • Place the endive spears on a platter and spoon a heaping tablespoon of the crab mixture into the center of the leaves. Garnish with a sprinkle of chopped bacon.

Steps:

  • Fry bacon and drain on a papertowel lined plate. Or buy precooked.
  • Rinse and dry lettuce, red cabbage, carrots, and tomato.
  • Clean mushrooms with a moist towel, do not rinse.
  • Chop the bacon, lettuce, red cabbage, carrots, tomato, and mushrooms.
  • In a large bowl or salad bowl, mix lettuce, carrots, and red cabbage together. Layer mushrooms, tomato, bacon, cheese, crab, and green onions.
  • Serve with Marie's Blue Cheese Viniagrette.

1/2 cup mayonnaise (I add a couple more tablespoons)
