12 thick slices white bread, cut into 1 inch cubes
¼ cup crumbled cooked bacon
2 cups shredded Cheddar cheese
1 ½ cups chopped fresh mushrooms
12 eggs
2 ½ cups half-and-half
1 teaspoon Dijon mustard

Steps:

  • Toss cubed bread with bacon, cheese, and mushrooms, and pour into a 9x13 inch baking dish. Whisk together eggs, half-and-half, and mustard until smooth, then pour evenly over cubed bread. Cover dish with plastic wrap, and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking dish, and bake strata in preheated oven until the top is golden brown, and the eggs are set, about 1 hour. Let stand for 10 minutes before serving.

4 large Handsome Brook Farm's Pasture Raised Organic Eggs
1 tablespoon milk
salt and pepper, to taste
1 tablespoon butter
1 (12 oz) can crescent rolls
8 slices cooked bacon
1 1/2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat, set aside.
  • In a small bowl, whisk together Handsome Brook Farm's Pasture Raised Organic Eggs, milk, salt and pepper.
  • Heat a large sauté pan over medium-high heat. Add the butter and let it melt.
  • Add the eggs and scramble them: use your spatula to push the eggs from one side of the skillet to the other in slow motions until cooked. Remove eggs immediately from heat and transfer to a cool bowl to stop the cooking process.
  • Separate dough into 8 triangles. Lay one piece of bacon inside each triangle of dough. Divide scrambled eggs and cheddar cheese evenly onto the shortest side of each triangle.
  • Loosely roll up each crescent, starting at shortest side, rolling to opposite point. Place on prepared cookie sheet.
  • Bake for 12 to 14 minutes, until golden. Remove from oven and serve immediately!

4 slices bacon
5 large eggs
2 tablespoons chopped chives
4 ounces shredded whole-milk mozzarella
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper
A few shakes hot sauce, such as Tabasco
1 sheet frozen puff pastry, thawed in the refrigerator overnight
6 ounces scallion cream cheese, at room temperature (or 6 ounces plain cream cheese mixed with 2 scallions, finely chopped)
Everything Bagel Topping, recipe follows
Ketchup, for serving
1 teaspoon sesame seeds
3/4 teaspoon poppy seeds
1/2 teaspoon dried minced garlic
1/2 teaspoon dried minced onion
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Put a large skillet over medium heat. Add the bacon and cook, flipping once, until crispy, about 7 minutes. Remove to a paper towel-lined plate to cool, then roughly chop. Set aside.
  • Whisk together 4 of the eggs in a medium bowl until homogeneous, then stir in the chives and mozzarella.
  • Heat the butter in a large skillet over medium heat. Pour the egg mixture into the hot skillet and cook until the bottom is set. Use a spatula to gently pull the bottom cooked parts to the sides of the skillet to make space for more of the mixture to cook. Repeat this gentle pulling process one or two more times until a majority of the mixture is set, then transfer the mixture to a bowl. The eggs should still be be quite wet, as they'll continue to cook in the oven. Season them with salt and pepper and a few shakes of hot sauce.
  • On a work surface, roll out the puff pastry to a 10-by-15-inch rectangle. Cut into six 5-inch squares. Top each of the squares with a schmear of scallion cream cheese, then a bit of the bacon and finally a spoonful of the scrambled eggs, distributing them evenly and leaving a 3/4-inch border around the edges.
  • Beat the remaining egg with 1 tablespoon water in a small bowl to make an egg wash. Brush the edges of the puff pastry squares with the egg wash, fold them in half to make rectangles and pinch the edges to seal them well. Transfer them to the prepared baking sheet, placing them 1 inch apart. Brush the tops with the egg wash and top with the Everything Bagel Topping. Bake until golden brown; begin checking for doneness at 30 minutes. Let cool slightly and serve with ketchup. Leftovers can be refrigerated and reheated in a toaster oven.
  • Combine the sesame seeds, poppy seeds, dried minced garlic, dried minced onion and salt in a small bowl.

1 pound sliced bacon, cut in half

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut each slice of white bread in half horizontally. Spread with cream cheese. Tightly roll each piece of bread with half a piece of bacon. The bacon should be on the outside of the bread. Secure with toothpicks.

1/3 cup finely chopped onion
1 tablespoon butter
3 cups cubed day-old bread
1/4 teaspoon celery salt
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
1 large egg, lightly beaten
10 bacon strips

Steps:

  • In a small skillet, saute onion in butter until tender. In a large bowl, combine the bread cubes, celery salt, garlic powder, salt, pepper and onion mixture; toss to mix evenly. Add egg; toss to coat bread cubes. Roll into ten 1-1/4-in. balls. Wrap a bacon strip around each ball. Secure with a toothpick. Repeat with remaining ingredients., In a large skillet, cook bacon roll-ups on all sides over medium heat for 18 minutes or until bacon is crisp and a thermometer inserted into stuffing reads at least 160°. Found in an online search in response to a request for Bennigan's Cheeseburger Eggrolls. Looks both tasty and easy and so I plan to make 'em for the grandkids next time they're here. Times and size of the egg roll wrap packages are guesstimates.

1 1/2 lbs lean ground beef
8 -10 slices bacon, cut into small pieces
2 cups monterey jack and cheddar cheese blend, shredded
2 (8 ounce) packages egg roll wraps
1 egg
1 -2 cup cooking oil

Steps:

  • Cook bacon pieces in frying pan. Spoon onto paper towel-covered plate to drain grease.
  • Cook ground beef in same fry pan until browned, drain grease. Add bacon bits to ground beef and mix well.
  • Beat egg in bowl. (Egg is used to seal edges of egg roll wrappers; water works too).
  • Take egg roll wrapper (package will tell you how to fold them up.) and put large spoonful of hamburger and bacon on one corner of wrapper. Add pinch of cheddar and Monterey jack cheese on top of meat mixture.
  • Coat edges of egg roll with egg or water. Roll up wrapper and repeat until you have used all the meat or all the wrappers, whichever happens first.
  • In a large deep fry pan, heat about 3/4 inch of vegetable oil. Put egg rolls inches Flip over when first side browned. When both sides browned, place on paper towel covered plate to drain grease.
  • When all egg rolls are cooked, dip them in barbecue sauce (or dipping sauce of your choice) and enjoy.
