B.E.G. SANDWICHES (BACON-EGG GRIDDLE SANDWICHES)

Steps:
- Cook the bacon on a griddle (or in a large skillet) over medium heat, turning occasionally, until crisp, 8 to 10 minutes.
- Meanwhile, whisk the eggs and sour cream in a medium bowl. Remove the bacon from the griddle and drain on paper towels; pour the fat into a small bowl and set aside.
- Add the egg mixture to the griddle and cook, stirring with a rubber spatula, until just set. Layer 1 slice of cheddar, some scrambled eggs, a piece of bacon and another slice of cheddar on each of 4 slices of bread. Top with the remaining bread.
- Return the bacon fat to the griddle; add the butter and let melt over medium heat. Place the sandwiches on the griddle, cover and cook until the bread is golden brown and the cheese melts, about 4 minutes per side.
BACON, EGG AND PESTO SANDWICHES
Steps:
- Preheat the broiler. Line a broiler pan or baking sheet with aluminum foil.
- Place the bacon on the pan and broil until the bacon begins to brown and shrivel, 3 to 5 minutes. Flip the bacon, and continue to cook until crispy, about 3 to 5 minutes depending on how hot your broiler is. Transfer the bacon to a paper towel-lined plate to drain.
- Meanwhile, lightly toast the pine nuts by heating them in a medium dry skillet set over medium heat, shaking the pan frequently, until they just begin to turn golden, 3 to 4 minutes. Keep an eye on them, because they toast pretty quickly.
- Combine the toasted pine nuts and garlic in a food processor or blender until a paste forms. Add the basil and continue processing until a creamy, green paste has formed. With the motor running, slowly pour in 1/2 cup olive oil, processing until the oil is fully incorporated. Transfer the paste to a bowl and fold in 1 cup Parmesan with a rubber spatula. Season to taste with salt and pepper. Set aside.
- Split the croissants and broil on a baking sheet until golden, 1 to 2 minutes. Set aside.
- Heat the remaining 2 tablespoons oil in a large skillet over medium heat. Spray 4 egg rings with cooking spray. Put the rings in the skillet and crack 1 egg into each rings. Cover the skillet to trap the steam and cook until the eggs set, 2 to 3 minutes. Season with salt and pepper.
- Spread the pesto on the cut sides of each croissant. Place 2 slices of bacon on each croissant, top with an egg and sprinkle with more Parmesan. Enjoy!

- Spread 1 slice of bread with Miracle Whip.
- Add the fried egg.
- (While the egg is cooking, I flatten it with a metal spatula to break the yolk-it fits the bread better.) Spread the egg thinly with Miracle Whip.
- Add crisp bacon in a single layer.
- Next, a layer of tomato slices.
- Cover with other slice of bread spread with Miracle Whip.

- In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until slightly thickened, 3-5 minutes. Stir in cheese, pesto, nutmeg and pepper. Keep warm., Place 2-3 in. of water in a large saucepan or skillet with high sides. Bring to a boil; adjust heat to maintain a gentle simmer. Break one egg into a small bowl; holding bowl close to surface of water, slip egg into water. Repeat with remaining eggs., Cook, uncovered, until whites are completely set and yolks begin to thicken but are not hard, 3-5 minutes. - Beat the eggs in a bowl with the sour cream until blended, and stir in the Cheddar cheese.
- Spray a skillet with cooking spray, and cook and stir the onion and pesto sauce over medium heat until the onion is translucent, about 6 minutes. Stir in the tomatoes, and pour the egg mixture into the skillet. Cook and stir the egg mixture until the eggs are cooked but not dry, about 3 minutes. Remove eggs from the skillet, and set aside.
- Place the turkey bacon into the skillet, and fry, flipping once, until the bacon is thoroughly cooked and starting to crisp, about 3 minutes per side. When the bacon is cooked, place the artichokes into the skillet to heat for about 1 minute, and remove the bacon and artichokes from the pan.
- Spray the skillet with cooking spray, and place the tortilla into the hot skillet. Heat the tortilla until warm and flexible, and remove to a plate.
- Spoon the eggs, turkey bacon, and artichokes into the center of the tortilla, and season with salt and pepper. Fold the bottom 2 inches of the tortilla up to enclose the filling, and wrap tightly.

- In a small saucepan, combine the balsamic vinegar and brown sugar. Stir with a wooden spoon to combine. Heat the mixture over medium heat until it comes to a gentle boil. Reduce heat to low and continue to simmer until the mixture reduces by half and becomes thick and syrupy. This should take about fifteen minutes.
- While the balsamic is reducing, fry the bacon in a skillet until it is cooked through. Remove cooked bacon from skillet and place it on a paper-towel lined plate to cool and drain excess grease.
- In a separate skillet, melt one teaspoon of the butter. Crack an egg over the pan and fry the egg until the egg white is solid enough to flip without much difficulty, being careful not to break the yolk. Continue to cook the egg for another 30 seconds to one minute. The goal is for the egg white to be completely solid (not runny) without cooking the yolk completely through. Repeat this process with each of the remaining three eggs.
- To assemble the sandwiches, spread a liberal amount of pesto on both the top and bottom of bagel halves. Layer two pieces of bacon atop the pesto, followed by one fried egg. Sprinkle on some crumbled goat cheese and then drizzle on desired amount of balsamic reduction. Replace the top half of the bagel and enjoy.
