10 -12 baby red potatoes
12 slices crumbled cooked bacon
1 (2 ounce) package dry onion soup mix
1 small onion, thinly sliced and diced
1 cup cheddar cheese (optional)
3 tablespoons butter
salt and pepper
sour cream (optional)

Steps:

  • Spray each sheet of foil with cooking spray. Top each piece with equal portions of potatoes, bacon, onion soup mix, onion, and cheese and mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.
  • Grill for 20 to 30 minutes. Or you can bake it in the oven, at 350° for about 35 minutes or till done. Let stand 10 minutes before serving. Serve in foil, topped with sour cream if desired.

This may take a little time to make but well worth the little extra effort, very impressive to serve to your dinner guests, this is one of the best recipes for baked onions you will ever have! The onions may be boiled and the insides removed ahead of time and refrigerated to finish filling and baked later. The original recipe called for only for 4 onions, but I increased and "tweaked" the recipe slightly.

8 onions (about the size of a tennis ball, with outer skin removed, no larger as you will not get the bacon or)
1 -2 tablespoon minced fresh garlic (or to taste)
4 -6 tablespoons oil
1 cup whipping cream (unwhipped)
1 1/4 cups grated parmesan cheese
salt and pepper
8 slices uncooked bacon or 8 slices pancetta, slices

Steps:

  • Cook the onions in boiling water until tender, but not falling apart (about 25 minutes).
  • Remove from pot with a slotted spoon and cool.
  • When cool enough to handle, cut off about an inch off of top of onions with a very sharp knife, and finely chop the tops.
  • Trim the root end of the onions slightly, just enough so they can stand straight.
  • Scoop out about a heaping tablespoon from the center of each onion (make certain to keep the inside intact) and finely chop the center, adding to the rest of the chopped onions.
  • Transfer the hollowed onions to an oiled baking dish (I use an 11x7-inch for 8 onions, if you are only making 4 onions, then use an 8x8-inch).
  • Set oven to 375 degrees.
  • In a skillet over medium heat, saute the chopped onions for about 3 minutes in oil.
  • Stir in whipping cream and remove from heat.
  • Stir in the Parmesan cheese, salt and pepper.
  • Fill the whole onions with some of the sauted onion and Parmesan mixture, then spoon the remainder of the mixture around the onions in the baking dish.
  • Wrap a piece of pancetta or a bacon slice around the middle of each onion and secure with a toothpick.
  • Bake the onions for about 40-50 minutes (depending on the size of your onions).

2 tablespoons lemon juice - about 1/4 lemon
Salt
EVOO - extra-virgin olive oil, for drizzling
1 tablespoon softened butter
6 slices smoky bacon, chopped
8 cippolini, small Italian flat-shaped sweet onion, peeled and thinly sliced--
A medium yellow onion, quartered then thinly sliced may be substituted, but cippolini are
widely available, so check for them in the local market.
1 large clove garlic, finely chopped
1 cup Italian bread crumbs
1/4 cup flat-leaf parsley, a couple of handfuls, chopped
2 tablespoons capers, drained and chopped
2 plum tomatoes, seeded and chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Rinse fish and pat dry. Sprinkle fish with lemon juice and salt. Coat an oven-safe handled large skillet with a drizzle of EVOO and a little softened butter. If your skillets all have rubber handles, coat handle twice with tin foil and it should be fine in the oven. Set

  • Heat a small skillet over medium high heat. Add a drizzle of EVOO and the bacon. Render the fat in the bacon 3 minutes then add onions. Sweeten and soften onions and garlic 10 minutes. Remove pan from heat. Add bread crumbs to the pan and turn them to coat them in drippings. Add parsley and capers combine. Top fish with coating of onions, bacon and bread crumbs. Bake 15 minutes. Transfer fish to dinner plates and top with chopped tomato.

1 green bell pepper, diced
salt and ground black pepper to taste

  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Let bacon cool on a plate lined with paper towel.
  • Drain all but 2 tablespoons fat from the skillet. Stir potatoes, onion, and bell pepper into reserved drippings; season with salt and pepper and cook, stirring every 3 to 4 minutes and pressing the potatoes with the back of a spatula, until potatoes are golden brown and soft, 15 to 20 minutes. 1 pkg dry onion soup mix, divided between the 4 pouches
16 baby red potatoes, thinly sliced
16 slice bacon, cooked and crumbled
1 medium shallot, small diced
1 c cheese (optional)
fresh ground black pepper to taste
4 Tbsp butter
1/2 sprig(s) fresh rosemary for each serving
sour cream for serving (optional)

Steps:

  • 1. Spray each sheet of foil with Pam.
  • 2. Top each piece with equal portions of potatoes, bacon, 1/4 packet onion soup mix and mix it up
  • 3. Add pepper to taste
  • 4. Add 1 tablespoon of butter to each serving
  • 5. Put the rosemary sprig on top of the butter
  • 6. Wrap them up tight
  • 7. Grill for 20 to 30 minutes.
  • 8. Or you can bake it in the oven, at 350° for about 35 minutes or till done (they're better grilled IMHO!)
  • 9. Let stand 10 minutes before serving
  • 10. Serve in foil, topped with sour cream or cheese or both if you want

4 large new red potatoes, peeled and sliced not too thin and not too thick
1 small sweet onion, sliced thin and diced
6-10 slice bacon, cooked lightly crisp and diced
2 sprig(s) curly parsley, minced
1 clove garlic, minced fine
1/4 c bell pepper, diced
2 - 3 medium baby portabella mushrooms
3 Tbsp butter
salt and pepper to taste (i use fresh ground pepper)
3 - 5 shakes of paprika (i use hungarian paprika)
2 - 3 sheet(s) aluminum foil

Steps:

  • 1. Preheat oven to 350 degrees Lay a layer of aluminum foil in the bottom of roasting pan. Cook your bacon until lightly crisped. Place bacon on paper to drain excess grease while preparing the remainder.
  • 2. Using bacon grease from pan and using paper towel, lightly coat the aluminum foil with the grease to help prevent sticking.
  • 3. Put in the foil your sliced potatoes, diced onion, parsley and garlic. Add 1/2 of the bacon and gently toss to mix well. Salt and pepper to taste and sprinkle the paprika.. gently toss to mix well again. Top with remaining bacon. Top with slices of butter.
  • 4. Take the additional piece(s) of aluminum foil placing on the top of the mixture and sealing edges to bottom layer.
  • 5. Bake in oven at 350 Degrees for 35 minutes. Remove foil to brown lightly for about 20 minutes. Let stand 10 minutes before serving. Chef's Note: If cooking on the grill, bake for 20 to 30 minutes or until done. Can top with green onion, cheese, or mix grated sharp cheese into it during the cooking process.

4 strips smoked bacon cut into 4 pieces
4 cloves garlic, each sliced lengthwise into 4 pieces
1 tablespoon chopped fresh thyme
1/4 cup balsamic vinegar
1/4 cup olive oil
1 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Make 4 slices across each red onion within a 1/2 inch of cutting through them. Into these incisions, place 1 piece of bacon and 1 slice of garlic. Place each onion in the center of a piece of foil. Repeat with remaining ingredients.
  • In a small mixing bowl, combine the thyme, vinegar, oil, salt, and pepper. Spoon over each onion. Bring the corners of the foil up over the onion and twist into a tight package. Place on a sheet tray and bake for 1 hour. Remove from oven and allow to cool slightly before removing foil. To serve, heat by fanning on a hot well-oiled grill or in the oven. Serve with a smile.
