Creating in the kitchen is therapy to me. I get an idea and run with it. This chicken dish is easy and so delicious. I received rave reviews from my guys. Sure to be one our family favorites.

6 - boneless skinless chicken thighs
3 - eggs, beaten
1 cup(s) instant potato flakes, dry
1 cup(s) panko bread crumbs
- garlic powder, salt &pepper, parmesan cheese
12 slice(s) canadian bacon
8 slice(s) swiss cheese
2 cup(s) fresh spinach
1 can(s) condensed cream of chicken soup
1/2 cup(s) milk

Steps:

  • In a shallow bowl add three eggs and beat. In another shallow bowl combine panko crumbs, instant potatoes, garlc powder, salt & pepper and parmesan cheese.
  • Dip each piece of chicken in beaten egg then in crumbs. Place in a 9x13 baking dish.
  • Place chicken in oven; broil for 10 minutes on each side or till browned. (Check to make sure it doesn't get burnt.)
  • Remove from oven and place cheese on top of chicken then bacon and top with spinach. Combine soup and milk adding more parmesan to the mixture. Mix well. Pour soup all over the chicken to cover. Bake in a 350F oven, covered with foil for 45 minutes.

8 boneless skinless chicken thighs (3 to 4 oz each)
3 slices bacon, chopped
2 large carrots, chopped (1 1/2 cups)
2 small onions, sliced
3 cloves garlic, chopped
1/2 cup chicken broth
1 bag (8 oz) fresh baby spinach leaves (6 cups)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped fresh or 1/2 teaspoon dried sage leaves
1 tablespoon grated lemon peel

Steps:

  • In 12-inch skillet, cook chicken and bacon over medium-high heat 5 minutes, turning chicken once.
  • Stir in carrots, onions, garlic and broth. Cook uncovered 15 to 20 minutes, turning chicken and stirring frequently, until juice of chicken is clear when thickest part is cut (at least 165°F) and vegetables are tender.
  • Remove pan from heat; add spinach, salt and pepper. Stir mixture about 3 minutes or until spinach wilts. Stir in sage and lemon peel until well blended.
