BACON WRAPPED DATES
Plump and sweet Medjool Dates are stuffed with creamy goat cheese and wrapped in bacon.

Steps:
- Preheat the oven to 375F. Line a half sheet pan with foil or parchment paper.
- Using a paring knife, slice through the top half of each medjool date, then pull the two sides apart to expose the pit. Do not slice all the way through. Discard the pit, and also check the inside to make sure there are no signs of bugs or black mold (very rare, but important to check).
- Stuff each date with about a tablespoon of goat cheese. I find this easiest to do by using a butter knife to carve out a hunk of cold goat cheese and pressing it in, using the knife.
- Cut the bacon slices in half, then wrap each date with a bacon half, securing with a toothpick by pushing it through the entire piece.
- Place all the bacon wrapped dates on the tray and bake for 30 minutes, flipping the dates halfway through. This is essential for even cooking of the bacon.
- Let the dates cool enough to handle, then transfer to a platter to serve. Enjoy!

- Preheat oven to 400 degrees F. Cut a slit in each date. Place almonds inside slits. Press together the dates to close slits. Wrap each date with a piece of bacon.
- Line a shallow baking pan with Reynolds Wrap® Aluminum Foil. Add a roasting rack; place the dates on rack. Roast for 15 to 20 minutes or until bacon is crisp. Serve immediately with toothpicks. Dates will be hot inside.

BACON WRAPPED DATES STUFFED WITH MANCHEGO
Steps:
- Preheat the oven to 400 degrees F.
- Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper. Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.
- Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.

- Preheat oven to 450 degrees. Stuff each date with 3 or 4 pistachios. Lay a stuffed date and apricot strip on top of each bacon slice; wrap to enclose.
- Transfer to a rimmed baking sheet. Bake until bacon is crisp, about 10 minutes, flipping each wrapped date after 8 minutes. If frozen, bake at 400 degrees for 10 minutes; flip, and bake 10 minutes more. Transfer wrapped dates to paper towels to drain. Serve with toothpicks.

- Heat broiler. Stuff pitted dates with whole blanched almonds. Cut bacon strips into thirds; wrap each bacon piece around a date. Place bacon-wrapped dates, seam side down, on a baking sheet. Broil until bacon is crisp, turning once, 6 to 10 minutes. Drain on paper towels; serve warm.
BACON-WRAPPED DATES
A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

- Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
- Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
- Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.

- Microwave bacon for about 2 minutes, until partially cooked, but not browned.
- Wrap each date with a strip of bacon and secure with a wooden toothpick.
- Broil on low 3 minutes, turn dates, and continue broiling 3 to 4 minutes longer, or until browned.
- Drain on paper towel and serve warm.
