Steps:
- Preheat oven to 400 degrees Fahrenheit.
- Place an oven-safe cooling rack in the same size baking sheet.
- Arrange the bacon strips in a single layer on the rack, taking care not to overlap.
- Bake for 20-22 minutes in the middle rack, depending on the thickness of the bacon.
- Transfer bacon to a plate lined with paper towels and pat dry to absorb any excess fat. Allow bacon to cool. See notes on how to collect bacon grease.
- Working in batches, stack the cooked bacon strips directly on top of each other. Cut the strips in half lengthwise, then crosswise into chunks.
- Continue cutting them until you have the desired size of the bacon crumbles.
- Alternatively, you may transfer bacon to a food processor and pulse into smaller pieces.
- Transfer to a jar and store in the refrigerator until ready to use. May be kept stored in the refrigerator for up to two weeks.

Steps:
- Put the bacon in a container so it lays flat. Pour over the cola to cover. Refrigerate and let soak 2 to 3 hours.
- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil, place a cooling rack over top and spray with cooking spray.
- Drain the bacon from the cola, place on the cooling rack and pat dry. Combine the brown sugar, paprika and black pepper in a bowl and toss to combine and loosen up the brown sugar. Sprinkle the brown sugar mixture on both sides of the bacon, pressing and patting so it adheres. Place the slices on the cooling rack; they can be close to one another but shouldn't touch.
- Bake until the bacon is deeply caramelized but still pliable (it will crisp as it cools), about 20 minutes. Flip the bacon occasionally as it cools to crisp on both sides. Let cool completely.
HOMEMADE FRESH BACON BITS
Fresh is just so much nicer then the pre-packaged kind that uses picnic bacon and tastes like cardboard. These fry quickly and you don't have to crumble the slices after frying them. There is no need to separate the pieces. They will separate during cooking. Use these in any recipe calling for crumbled bacon or bacon bits. Perfect for salads and baked potato toppings or twice baked potatoes.

Steps:
- Partially freeze your package of bacon so that it holds together easier while slicing.
- Use a sharp knife and cut the frozen bacon into long strips about 1/4 inch wide.
- Turn the bacon and cut the strips into pieces also about 1/4 in wide.
- Sprinkle with pepper.
- Fry over a medium high heat until crisp.
- Remove with a slotted spoon and drain on paper towels.
- You can freeze this for later use by placing the bacon bits in a single layer on a cooking sheet. Once they are frozen, place them in a zip lock bag for use in recipes, salads or baked potatoes. Freezing this way allows you to be able to take out just what you need without thawing the entire bag of frozen solid bacon bits.

Steps:
- Fry bacon (or cook in microwave) until bacon is crisp.
- Cool.
- Blot with paper towel to absorb excess grease.
- Crumble and store in ziploc bag in freezer for whenever you need bacon bits!
- I don't add the bacon grease; however, I need two ingredients for the recipe!
- This is not so much a correction as it is an addition we have recently discovered. We will now leave the bacon whole in the plastic ziploc. If we want bacon and eggs we just take what we want and heat in microwave. If we want some for salads we just crumble and use.

- If it isn’t frozen, pop it in the freezer for about 30 minutes. Either way, the bacon should be very cold and a little firmer than straight out of the refrigerator, but you don’t necessarily want it icy. This will make the bacon easier to cut.
- Stack the bacon strips directly on top of one another in piles that are thin enough that your knife can cut through.
