EASY CREAMY TOMATO & BACON PASTA
Crispy bacon, tomatoes, garlic, cream, and Pecorino Romano make the perfect weekend pasta dinner.

Steps:
- Bring a large pot of salted water to a boil. Add pasta and cook according to package directions (or al dente). Reserve 1-2 tbsp of pasta water.Drain and set aside.
- Cook bacon in a large sauté pan over medium heat until crispy. Set aside and reserve two tablespoons of fat from the pan.
- Over medium heat add olive oil, reserved bacon fat, the chopped garlic, and smoked paprika or red pepper flakes to the pan that you cooked the bacon in and cook until just fragrant, about 30 seconds.
- Immediately add diced tomatoes to the pan to keep garlic from burning and simmer until the liquid is reduced and the tomatoes have thickened. Season with a touch of salt and pepper.
- Once the tomato sauce has slightly thickened add the heavy cream and stir. Lower the heat to low and stir in the cooked pasta and reserved pasta water.Stir until it all comes together and thickens slightly, and season with salt and pepper again (if needed). Add a few fresh basil leaves and stir (optional).
- Shave some of the fresh Pecorino Romano or Parmigiana on top and toss in chopped bacon.
- Serve immediately and top with more cheese, bacon and black pepper.

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Reserve 2 tablespoons bacon fat in the skillet and discard the rest. Chop bacon when cool enough to handle.
- Add 1 tablespoon olive oil and onion to reserved bacon fat in the skillet. Cook over medium-high heat until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Pour vermouth into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon, about 1 minute. Mix in chopped bacon.

- Bring a large pot of salted water to a boil for the spaghetti. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the bacon/pancetta and onion and cook until the onion is caramelized and the bacon is crisp. By now, your water should be boiling. Add the spaghetti. Make sure to cook until al dente--don't overcook the pasta!
- Meanwhile, in a large serving bowl, whisk together the eggs, half and half, and cheese. Scrape in the bacon and onion, along with the cooking fat. If it's really hot, allow the bacon to cool off for 1-2 minutes in the pan before adding it to the bowl.
- Before draining the pasta, scoop out about 1/3 cup of the cooking water and slowly whisk it into the bowl with the bacon and eggs. Drain the spaghetti and add to the bowl. Toss quickly and place a plate on top of the serving bowl to cover completely. Let sit for 5 minutes. Remove the plate and toss with black pepper and nutmeg (if using).

- Bring a large pot of salted water to a boil. Hull the tomatoes and cut a shallow "x" through the skin on the bottom of each. Prepare an ice bath.
- Put the tomatoes in the boiling water and boil for 30 seconds. Remove with a slotted spoon and submerge in the ice bath. Reserve the pot of boiling water. When the tomatoes are cool, use the back of a paring knife to peel the tomatoes. Cut the tomatoes in half lengthwise and squeeze out and discard the seeds, then chop the tomatoes into approximately 1/2-inch pieces.
- Put the bacon in a large cold skillet and cook over medium heat, stirring occasionally, until crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Discard all but about 2 tablespoons of the bacon fat from the skillet.
- Add the onion to the drippings in the skillet and cook over medium heat, stirring occasionally, until soft and pale golden, about 10 minutes. Add the wine and boil until reduced by half, about 3 minutes. Add the chopped tomatoes, red pepper flakes, 1/2 teaspoon salt and pepper to taste, and cook, stirring occasionally, until the tomatoes start to break down, about 5 minutes.
- Cook the spaghetti according to the package directions in the reserved pot of tomato water until al dente, about 10 minutes. Reserve 1 cup of the cooking water, then drain the pasta. Add the pasta to the skillet with the sauce, along with 1/2 cup of the cooking water and toss to coat. Add more water if necessary for desired consistency. Stir in half the bacon and half the herbs and season with salt and pepper. Divide the pasta and sauce among bowls and top with the remaining bacon and herbs. Serve with Parmesan for topping.
