BACON-WRAPPED ONION RINGS
Steps:
- Preheat the oven to 375 degrees F.
- Wrap 2 slices of bacon through the middle of each onion ring and fully around to cover, leaving the center of the ring open. Transfer to a baking rack on a baking sheet. Bake until the bacon is fully cooked, about 25 minutes.

- Peel the onions, but leave the root end intact. Pour about 2 inches of water into a large saucepan and set up a collapsible steamer inside. Steam the onions until easily pieced by a knife, about 30 minutes. (For more tender onions you may steam them a little longer; however, they might be somewhat harder to hollow out. Either way they're delicious!) Set aside to cool.
- Slice off about a third of the top portion of each onion. Using a paring knife, cut out the insides of each onion, leaving about 4 outside layers intact, to make a container for stuffing. Chop the onion insides and tops.
- Preheat the oven to 400 degrees F.
- Heat a large skillet over medium-high heat. Add the bacon and cook, stirring, until crispy and the fat has rendered, about 3 minutes. Add the chopped onion, herb sprigs, 1/8 teaspoon salt, and sugar. Season with pepper and cook, stirring occasionally, until lightly browned, about 12 minutes. Add the wine and cook until dry, scrapping the bottom of the skillet with a wooden spoon to get up any browned bits, about 2 minutes. Stir in the cream and remove from the heat. Remove and discard the herb sprigs. Stir in the cheese and mustard.
- Lightly butter a baking dish. Season the inside of the onions with salt and pepper, and spoon the stuffing into each onion cavity, mounding it slightly on top. Set the onions in the dish.
- Heat the butter in the skillet. Add the breadcrumbs and stir until they absorb the butter. Spoon the buttered breadcrumbs on top of each onion.
- Roast the onions until well browned and heated through, about 40 minutes. Serve warm or at room temperature.
BACON-WRAPPED GRILLED ONIONS
Start these a day ahead to really get a burst of flavor! I'm pretty sure that this was a Southern Living recipe. Doesn't matter where it came from - these are awesome!

Steps:
- COMBINE sugar, vinegar, and molasses in a zip-lock bag. Squish bag to combine ingredients.
- WRAP onion wedges with bacon; secure with long wooden picks. Place in zip-lock bag.
- PUT in refrigerator overnight. Turn bag over a couple of times.
- REMOVE onion wedges from marinade; reserve marinade.
- BAKE in a 350 degree oven until bacon starts to crisp, about 15 minutes.
- GRILL to finish cooking onion and bacon. Basting with reserved marinade.
- Don't cook too long, the onion should still be crisp-tender.
- OR if you don't want to grill the onions, let them finish in the oven. Basting occasionally.
- PREP TIME reflects the overnight in the fridge.

BACON-WRAPPED BAKED ONIONS
This may take a little time to make but well worth the little extra effort, very impressive to serve to your dinner guests, this is one of the best recipes for baked onions you will ever have! The onions may be boiled and the insides removed ahead of time and refrigerated to finish filling and baked later. The original recipe called for only for 4 onions, but I increased and "tweaked" the recipe slightly.

Steps:
- Cook the onions in boiling water until tender, but not falling apart (about 25 minutes).
- Remove from pot with a slotted spoon and cool.
- When cool enough to handle, cut off about an inch off of top of onions with a very sharp knife, and finely chop the tops.
- Trim the root end of the onions slightly, just enough so they can stand straight.
- Scoop out about a heaping tablespoon from the center of each onion (make certain to keep the inside intact) and finely chop the center, adding to the rest of the chopped onions.
- Transfer the hollowed onions to an oiled baking dish (I use an 11x7-inch for 8 onions, if you are only making 4 onions, then use an 8x8-inch).
- Set oven to 375 degrees.
- In a skillet over medium heat, saute the chopped onions for about 3 minutes in oil.
- Stir in whipping cream and remove from heat.
- Stir in the Parmesan cheese, salt and pepper.
- Fill the whole onions with some of the sauted onion and Parmesan mixture, then spoon the remainder of the mixture around the onions in the baking dish.
- Wrap a piece of pancetta or a bacon slice around the middle of each onion and secure with a toothpick.
- Bake the onions for about 40-50 minutes (depending on the size of your onions).

- Line a half sheet pan with a layer of heavy duty foil, parchment, or a silpat. In a pie plate, use a fork to toss together the brown sugar, cayenne pepper, salt, granulated garlic, and onion until evenly combined.
- Take one slice of bacon and gently stretch it to lengthen it. Hold one edge against an onion ring and wrap it around the onion, just barely overlapping the bacon by 1/8-inch or so. If needed, use part of a second strip to finish wrapping the onion. Use a toothpick to secure the bacon to the onion. Place the bacon wrapped onion ring in the bowl of brown sugar and flip. Use your hands to help sprinkle over the onion ring to ensure the entire thing is covered generously with the brown sugar mixture. Place on the prepared pan.
- Repeat with the remaining bacon and onion rings. Place in a cold oven and turn the temperature to 325°F. Bake for 30 minutes before removing from the oven and gently flipping the Easy Bacon Wrapped Onion Rings. Bake for another 20 to 30 minutes, or until the bacon is crispy and deep mahogany in colour. Transfer to a paper towel or paper bag lined plate to cool in a single layer for at least 5 minutes before serving.
