40 CLOVES AND A CHICKEN
Steps:
- Preheat oven to 350 degrees F.
- Season chicken with salt and pepper. Toss with a 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat. Remove from heat, add oil, thyme, and garlic cloves. Cover and bake for 1 1/2 hours.
- Remove chicken from the oven, let rest for 5 to 10 minutes, carve, and serve.

MOM'S CHICKEN CACCIATORE
When Valerie Bertinelli was growing up, chicken cacciatore was a standard weeknight dinner. It's one of many recipes she learned from her mom, Nancy, over the years. "I've been making it so long, I don't remember when I started!" she says. Using just one pot makes for an easy cleanup, and though her mom originally incorporated the whole chicken, Valerie's version calls only for thighs. "They're more forgiving, especially for beginners.

Steps:
- Sprinkle the chicken thighs with salt and pepper on both sides, then toss them in a bowl with the flour to lightly coat.
- Heat the olive oil in a large wide pot over medium-high heat until shimmering. Add the thighs and cook until golden brown on both sides, 3 to 5 minutes per side. (Do this in batches if necessary.) Remove the thighs to a plate.
- Add the onion and mushrooms to the pot and cook, stirring, until the onion is softened and the mushrooms are lightly golden, about 5 minutes. Add the garlic and bell pepper and cook, stirring, until the pepper is just starting to soften, about 1 minute. Add the wine and bring to a boil, then cook, scraping up any browned bits, until reduced by about half. Add the oregano and rosemary. Add the tomatoes and their juices and bring to a simmer. Add the olives and capers.
- Return the chicken to the pot, nestling it in the sauce. Reduce the heat to keep the sauce at a gentle simmer and cook until the chicken is cooked through, 25 to 30 minutes. Season lightly with salt and pepper and top with the basil.
"BADA-BING" 40 CLOVE CACCIATORE
Steps:
- 1. Dice onion on a cutting board and layer onto the bottom of the slow cooker. 2. Place 20 whole cloves of garlic on top of the pile of onions 3. Place the chicken in the crock pot over the garlic-onion mixture 4. In a large bowl, combine ingredients 4-14 mixing well with a spatula until all spices are incorporated, making the tomato sauce 5. Pour the tomato mixture over the chicken 6. Place another 20 cloves of garlic on top of the tomato mixture and push them down into the slow cooker so that they are imbedded into the sauce 7. Put the lid on the slowcooker and cook on low heat for 6-7 hours, or on high heat for 3-4 hours.
" CHICKEN WITH 40 CLOVES OF GARLIC " CASSEROLE
Other than peeling the 40 cloves of garlic, this casserole "spin" on the classic dish is a cinch. And, as long as everybody partakes in this delicious meal, nobody has to worry about "garlic breath"!! ;)

- Preheat oven to 375 degrees.
- Place the chicken pieces close together in a single layer in a shallow 9x13-inch baking dish. Distribute the peeled garlic cloves evenly over the chicken.
- Drizzle with the wine and olive oil. Distribute the celery on top of the chicken. Sprinkle with the basil, oregano, parsley, red pepper flakes, lemon juice, salt and pepper.
- Cover with aluminum foil coated with cooking spray and bake for 40 minutes. Uncover and bake for 15 minutes longer, or until the chicken is cooked through.

- Mix all ingredients in a small cooking pot. Heat on low / low-medium and stir until brown sugar and butter melt together and all ingredients are blended smooth. Continue to keep warm.
- Take 12 fresh chicken wing pieces (or frozen) and drop into fryer that has been preheated to 350 degrees. Cook for 9-12 minutes until crispy and golden brown. (NOTE: may cook faster with fresh chicken).
- Take large Tupperware container with lid and place chicken wings into container. Pour some sauce into bowl, cover and shake. Repeat until sauce is gone. Serve with celery and either blue-cheese or ranch. Guaranteed to make your friends sweat as well as beg for more. Great if served with beer. (I like Heineken) Supply the ladies with extra beer. Trust me, its way more effective -- .
BADA BING CHERRY PIE

- 1. Preheat the oven to 450°F. Prepare the Classic Pie Crust as directed for a 9-inch double-crust pie.
- 2. Place the cherries in a large bowl. Mix orange and lemon juices with the cornstarch, then combine with sugar, cinnamon, and salt. Toss with the cherries. Let rest for 15 minutes.
- 3. Add the almond extract and the orange zest; toss well.
- 4. Line a 9-inch pie plate with one crust and prick all over with a fork. Spoon the cherry filling evenly into the crust. Dot all over with butter. Cover with a top crust. With water, moisten the crusts where they meet, then turn the top crust under the bottom and flute the edge. Cut a few slits in the top to allow steam to escape. Decorate the surface if you wish by rolling out the scraps and cutting several cherry, leaf, and stem shapes.
- 5. Bake pie in center of the oven for 10 minutes at 450°F. Reduce heat to 350°F and bake 45 to 55 minutes more, or until the crust is nicely golden. Let cool on a rack before serving warm or at room temperature.
