BAJA-STYLE CHICKEN BOWL
For a little extra flavor, add the salsa while cooking instead of after.

Steps:
- Heat oil in a skillet over medium heat. Cook and stir chicken, corn, and red pepper in hot oil until heated through and pepper is slightly softened, about 5 minutes. Season with salt and pepper.
- Spoon rice into 2 bowls, divide chicken mixture between the two bowls, and top each with salsa and Monterey Jack cheese.

BAJA CHICKEN
This is my version of a recipe that was used at our Mexican station at work. Originally it included peeled and diced tomatoes, oranges and limes. I reworked it to save labor and time.

Steps:
- mix all ingredients except chicken in a bowl.
- add chicken and let marinate 24 - 48 hours.
- take chicken out of marinade and place in a 9x13 baking dish.
- bake uncovered in a 425 degree F oven for 30 minutes.
- cover and bake at 325 degrees F for 30 more minutes.
- while still warm place in a mixer and slowly beat with paddle to shred or shred by hand when cool enough to do so.
- serve over rice or wrapped in a tortilla.
- Alternate cooking method using a grill.
- reserve 1/3 of marinade.
- mix chicken into the rest of marinade.
- marinate 24 - 48 hours.
- cook the chicken on a grill until outside is slightly blackened.
- put in a 9x13 pan
- add the reserved marinade.
- cover and bake at 325 degrees F for 30 minutes.
- shred as described above.

BAJA CHICKEN PIZZA

- PREHEAT oven to 400 degrees F. Spray large skillet with cooking spray. Add chicken; cook on medium heat until chicken is cooked through, stirring occasionally. Stir in salsa. Reduce heat to medium-low; simmer 5 min.
- SPOON chicken mixture evenly over crust; sprinkle with peppers and cilantro. Top with cheese.
- BAKE 10 to 15 min. or until cheese is melted.

BAJAN CHICKEN

Steps:
- Rinse and dry the chicken pieces and put them into a shallow glass dish.
- Put the allspice, peppercorns, and cinnamon stick into a spice grinder and grind to a powder. To a full sized blender add the onion, peppers, scallions, garlic, scotch bonnet, thyme, lime juice, olive oil, butter, and ground spices. Blend to a puree; add some water if it is too thick. Pour this over the chicken, cover, and refrigerate for at least 4 hours or overnight. Remove the chicken from the refrigerator 1/2 hour before you cook it.
- Heat the oven to 375 degrees F.
- Put the remaining 3 tablespoons oil in a large, oven-proof saute pan over medium-high heat. Remove the chicken from the marinade and season it with salt. Brown the chicken on both sides, then place the pan in the oven and roast until the chicken is cooked through, about 20 minutes. Serve garnished with cilantro leaves.
BAJA GRILLED CHICKEN TACOS
I modified this taco recipe for a party of 40, and it was a huge hit. Thighs are a good substitute for chicken breasts, especially with marinating and grilling. They do not dry out as quickly and are very forgiving. Fill warm tortillas with sauteed chicken and serve with your choice of garnishes and black bean and corn salad.

- Combine cumin, oregano, sazon, garlic powder, salt, and cayenne pepper in a large bowl. Add lime juice and olive oil and stir to make the marinade. Add chicken and refrigerate for 30 minutes to 12 hours.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Grill marinated chicken until no longer pink at the bone and juices run clear, about 8 minutes per side. Transfer to a bowl and shred chicken with forks.
- Spray canola oil onto the tortillas and heat on the grill approximately 45 seconds per side. Transfer to a plate and cover with a paper towel to keep warm. Serve with shredded chicken.

DAN'S BAJA CHICKEN
In my many years in the kitchen, I stumbled upon this recipe in my experimentations with cooking for clients who wanted something "different." The most important part of this recipe is the marinade. Once marinated, the chicken can be broiled, grilled, fried, or cooked any other way, depending on your dietary wishes/requirements. Best served with "Party Rice" (which I will post a recipe for later ;-)), this dish also goes well with baked potatoes or Penne tossed in garlic and olive oil.

BAKED CHICKEN BAJAN STYLE
"It is difficult to travel abroad without picking up an idea or two about cooking," Pierre Franey opened his 1982 column that featured this recipe. Spicy from hot red-pepper flakes and crisp from a mix of oil and seasoned flour, this chicken dish is inspired by a chef cooking at a Barbados restaurant. One guest, he wrote, "mistakenly assumed that the chicken had been deep-fried Southern style." Instead, it was baked, as it is here, yielding a crisp skin without nearly as much oil.

- Heat the oven to 450 degrees. To prepare this dish properly, partly bone chicken, leaving legs and thighs attached. Bone thighs first by place them skin side down on a flat surface. Using small paring or boning knife, scrape meat away from each bone. Sever bone to separate it from leg bone. To bone legs, scrape around the bone almost but not down to the end. Using sharp, heavy knife, cut off major part of bone, leaving about one inch at end. Chop off very bottom of each leg bone.
- Leave breasts and main wing bones attached. Cut off and discard tip of each wing. Cut off and set aside second wing joints. Bone breasts but leave skin intact. Do not remove main wing bone. Use back bone for soup or discard.
- Sprinkle chicken with salt, pepper and half of oregano.
- Put oil in baking dish large enough to hold chicken in one layer when it is added. Add chicken and rub it in oil.
- Blend flour with remaining oregano, paprika, hot red pepper flakes, salt and pepper.
- Dredge each piece of chicken on all sides in flour mixture. Shake off excess.
- Return chicken pieces skin side up to baking dish.
- Place chicken in oven and bake 40 minutes without turning.

- In a blender or food processor, combine the salad dressing, salsa, lime juice and cilantro. Cover and process on high for 1-2 minutes or until smooth; set aside.
