1 tablespoon powdered sugar
2 tablespoons butter or 2 tablespoons margarine
1/4 teaspoon vanilla extract
1/2 teaspoon water
1/4 cup all-purpose flour
jelly (for filling)

Steps:

  • Stir together powdered sugar, butter, vanilla, water and flour until the flour disappears.
  • Roll the dough between your fingers and make 12 small balls, 1/2 inch each.
  • Place a few balls at a time on an ungreased sheet or pan with space between them.
  • Press your thumb into the middle of each ball to make a thumb print.
  • Bake 10 to 12 minutes, then remove.
  • Repeat until all the cookies are baked. When the cookies are cool, fill each thumb print with jelly.
  • Makes 12 cookies.

Perfect Thumbprint Cookies image

My mother, Pauline, made really nice thumbprint cookies, but I never wrote down her recipe. I knew the ingredients, but unless you have the right proportions, you won't get that perfect melt-in-your-mouth texture. So, I did an image search and found a recipe that looked very similar, credited to a great-grandma named Mitzi. Since my last name is Mitzewich, that pretty much sealed the deal. In case you can't decide between a shortbread-focused cookie and a more jammy one, here's how to make both.

1 stick unsalted butter, at room temperature
⅓ cup unsifted powdered sugar
1 teaspoon vanilla extract
⅛ teaspoon almond extract
¼ teaspoon fine salt
1 large egg yolk
1 ¼ cups all-purpose flour
⅓ cup white sugar, or as needed
½ cup fruit jam, divided
1 cup powdered sugar, or as needed
1 tablespoon milk, or as needed

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Mix butter and powdered sugar together with a rubber spatula until creamy. Add vanilla extract, almond extract, salt, and egg yolk. Mix with the spatula. Add flour and blend until just combined.
  • Use a sorbet scoop to portion dough into 1/2-ounce (1-tablespoon) balls. Roll balls in a plate of white sugar to coat; roll again between your palms. Place several inches apart on a silicone-lined baking sheet. Flatten balls lightly with your fingers.
  • To make shortbread cookies with a little jam, poke a well into each cookie using the end of a thick wooden spoon dusted with powdered sugar or using one of your fingers. Fill cookies with fruit jam. Tap baking sheet against the counter to let jam settle.
  • Bake in the preheated oven until tops are barely blonde and bottoms are slightly golden, about 15 minutes. Let cool on a wire rack before icing.
  • Meanwhile, mix powdered sugar with a little milk until you have a consistency that will hold its shape when piped. Pipe icing on top of cookies in a zigzag pattern. Let sit for 15 minutes before serving.
  • For a more jam-forward cookie, press your thumb into the cookies to make large, shallow indentations. Spoon in jam. Tap baking sheet against the counter.
  • Bake until not quite golden brown, about 15 minutes. Let rest on pan for 5 minutes before transferring a wire rack. Dust with powdered sugar.

3/4 cup packed brown sugar
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour

1-1/2 cups "extras" (any one or combination of the following: chocolate, butterscotch, toffee or peanut butter chips, chopped candied cherries or nuts)

Steps:

  • In a bowl, cream shortening and sugars. Add eggs and vanilla. Combine flour, salt and baking soda; add to the creamed mixture and mix well. Fold in 1-1/2 cups "extras". Shape into a 15x2-in. roll; wrap tightly with plastic wrap. Chill 2 hours or up to 1 week. , To bake, cut into 1/2-in. slices. Place 3 in. apart on ungreased baking sheets. Bake at 350° for 10 minutes. Cool 5 minutes; remove to wire racks.

1/3 cup Nutella
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs

1-1/4 cups white baking chips

Steps:

  • Cream butter, Nutella and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture. Stir in chips., Divide dough in half. Roughly shape each portion into a 12-in. roll along the edge of a 12x12-in. sheet of waxed paper. Tightly roll waxed paper over dough, using it to mold the dough into a smooth roll. Place wrapped rolls in airtight containers. Freeze until firm, about 1 hour. , Preheat oven to 375°. She says that they are easy to make and great for the holidays and suggests using different kinds of preserves for a variety of flavors.

3 cups rolled oats
3/4 cup dates, pitted
1 1/2 cups almond butter
1/2 cup shredded coconut
1 orange, zested and juiced
1/2 teaspoon cinnamon
1 pinch sea salt (optional)
all-fruit preserves

Steps:

  • Soak dates in warm water to cover for 10-15 minutes.
  • Grind oats in a blender or food processor.
  • Pour into a bowl and set aside.
  • Place dates in the food processor with 1/2 cup of soaking liquid and puree.
  • Add to oats, along with almond butter, coconut, orange zest and juice, and spices.
  • Knead together until a dough is formed.
  • Form into balls and press down in middle with thumb.
  • Place a small amount of preserves in the indentation.
  • Refrigerate for at least 1 hour.
