SAUSAGE, APPLE AND PEAR STUFFING WITH CRANBERRIES

Steps:
- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
- In a large skillet set over medium-high heat, cook the sausage, breaking it up with the back of a spoon, until browned through, about 5 minutes. Add the celery, leeks, apples and pears and cook, stirring, until fragrant and softened, about 5 minutes. Stir in the parsley, sage, thyme, salt and pepper and cook for 1 more minute. Add the chicken broth and scrape up any brown bits that have formed on the bottom of the skillet, cooking for an additional minute. Remove from the heat and cool slightly.
- In a large bowl, combine the stuffing and cooled sausage mixture. Add the cranberries and eggs and mix well. Transfer the mixture to the prepared baking dish.
- Bake until golden brown on top, 30 to 35 minutes. Let cool 5 to 10 minutes. Top with additional parsley and serve.
APPLE PEAR STUFFING

- 1) Preheat oven to 350 degrees. 2) In a large skillet, melt the butter over medium heat. Add the apples, onions, celery and cook, stirring occasionally, for 8 minutes or until softened. Transfer to a large bowl. 3) Add the dried pears, bread, parsely, thyme and sage to the apple mixture and season with salt and pepper. Pour the brith over and toss until evenly moistened. 4) Bake in the oven for an hour (45 minutes before the turkey was done).
PORK CHOPS WITH PEAR STUFFING
My husband loves pork and stuffing, so this recipe combines the best of both worlds for him. With a vegetable and salad, this dish really perks up our dinner table during the week.

- In a large skillet over medium heat, cook chops in oil over medium heat for 2-3 minutes on each side or until chops are lightly browned; drain and set aside. Add butter to skillet; saute celery and onion until tender. Remove from the heat Add stuffing mix, pear, pecans, parsley, thyme, salt and pepper; mix well. Add water; toss gently to moisten. , Spoon a fourth of the stuffing on one pork chop; top with another chop and secure with string. Repeat with remaining chops and stuffing. Stand chops vertically, but not touching, in a deep roasting pan. Add water to a depth of 1/4 in. , Cover and bake at 350° for 20-25 minutes or until a thermometer reads 145°. Uncover and bake 5 minutes longer to brown. Remove string.

- In a small saucepan, bring 4 tablespoons broth to a boil. Remove from the heat; add raisins. Let stand for 5 minutes. , In a nonstick skillet coated with cooking spray; saute the apple, celery and onion for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Remove from the heat; stir in the broth mixture, croutons, nuts, pepper and the remaining broth., Make a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove plastic wrap; fill with stuffing mixture. Close roast; tie at 2-in. intervals with kitchen string and secure ends with toothpicks., Place on a rack in a shallow baking pan coated with cooking spray. - Preheat oven to 350°F.
- Heat the oil in a large nonstick skillet over medium-high heat.
- Add pear slices, and cook, without stirring, 2 minutes or until golden brown.
- Carefully turn pear slices; cook for 2 minutes or until golden brown.
- Add onion, celery, and garlic; saute 3 minutes or until lightly browned.
- Add sherry and brandy, and cook until liquid almost evaporates.
- Remove from heat; cool.

- Preheat the oven to 375 degrees F (190 degrees C).
- Cut the stem out of the apple and hollow out the center until it is about 1 1/2 inches wide without going through the bottom. In a small cup, stir together the cinnamon, nutmeg and sugar. Set aside half of this mixture, and mix the rest with the cream cheese and dried cranberries.
- Sprinkle some of the reserved cinnamon sugar into the apple's cavity. Fill with the cream cheese mixture, and sprinkle the remaining cinnamon sugar on the top. Place the apple in a small baking dish.

- Preheat oven to 350 degrees to speed-dry the bread and/or to bake the stuffing separately from the turkey.
- Spread bread slices on baking sheets.
- Place baking sheets in the oven for 20 minutes or until bread is dry.
- Place the 2 tablespoons butter, onion and pear in a large frying pan. Cook over medium heat till tender but not brown, about 4 minutes.
- Set aside.
- Break the dried bread into small pieces, and place in a very large bowl.
- Bring 1/2 water and the 1/4 cup butter to boiling in a small saucepan.
- Add to bread crumbs, and toss just till moistened.
