3 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small-diced walnuts
1 cup granola
1 cup sweetened shredded coconut
Dried banana chips, granola, or shredded coconut, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.
  • Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve.

Steps:

  • In a large bowl, combine dry ingredients. In another bowl, mash the bananas. Add egg, oil and vanilla; mix well. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups half full. , Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.

250g self-raising flour
1 tsp baking powder
½ tsp bicarbonate of soda
110g caster sugar
75g butter, melted
1 tsp vanilla extract
2 eggs
2 large ripe bananas, mashed
125ml buttermilk (or add 1 tsp of lemon juice to milk and leave for 20 mins)
50g pecans, chopped, plus extra to decorate (optional)

Steps:

  • Heat the oven to 190C/170C Fan/gas 5. Line a 12-hole muffin tin with paper cases. Sift together the flour, baking powder, bicarbonate of soda and caster sugar with a big pinch of salt. In a separate bowl mix the melted butter, vanilla extract, eggs, mashed bananas and buttermilk.
  • Make a well in the centre of the dry ingredients and pour the wet ingredients in. Roughly mix together with a fork, being careful not to over-mix. Scatter in the chopped pecans, if using, then spoon the mixture into the muffin cases. Top with pecan halves, then bake for 20-25 mins, until golden brown. Cool on a wire rack.

1/4 cup apples or 1/4 cup orange juice
1/2 cup low-fat buttermilk
2 egg whites
1 tablespoon vegetable oil
3 tablespoons honey
1 1/2 cups unbleached white flour
1/3 cup stone-ground white cornmeal, ground
2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon ground cardamom
2 bananas, diced

Steps:

  • Preheat oven to 375F and prepare muffin pans by either lining with cupcake papers or a light spritz with cooking spray.
  • Combine raisins and juice, let stand for 5 minutes.
  • Add buttermilk, egg whites, oil, and honey; whisk until smooth.
  • Sift flour, cornmeal, baking powder, baking soda together; add brown sugar and spices, whisk until mixed.
  • Add bananas and toss lightly.
  • Combine wet and dry ingredients and stir 'just to mix' (it will be lumpy).
  • Pour into prepared muffin tin, bake for 25 minutes (or until done).

1 lg Ripe banana; coarsely mashed
120 g Porridge oats
1/2 ts Ground nutmeg
1 tb Runny honey
4 tb Natural yoghurt
2 1/2 ts Baking Powder
90 g Sultanas
180 g Plain flour
1 ts Ground cinnamon
2 lg Eggs

Steps:

  • Preheat the oven to 200C/400F/gas 6. Grease a 12 hole muffin tin. In a large bowl, mix together the oats and milk and set to one side. In a bowl, sift together the flour, baking powder, cinnamon, nutmeg and salt. Add the yoghurt, honey and eggs to the oats and mix well. Then add the dry ingredients to the oat mixture along with the mashed banana and sultanas and fold together until just combined. Spoon the mixture into the greased wells and bake for 20-25 minutes. Heat oven to 190C/170C fan. Crack the eggs into a mixing bowl and whisk well with a fork. Add the sugar and carry on whisking, add the oil and whisk again, making lots of bubbles. Peel and mash the bananas, then drain the soaked sultanas and add them both to the eggs, sugar and oil. Mix well.
