BAKED BLOOMING ONION WITH SPICY DIPPING SAUCE
This Baked Blooming Onion is an easy recipe that's good for you. This Gluten Free Healthy Blooming Onion uses almond flour and the spicy dipping sauce includes Greek yogurt, hot sauce and chili powder for a kick!

Steps:
- Preheat your oven to 400º F
- Cut off the top of your onion (not the root), remove the outer layer of the onion and discard.
- Place the recently cut, flat part of the onion on the cutting board, root side up.
- Starting about ½ inch from the root, cut the onion straight down. Go all the way around the onion with evenly spaced cuts.
- Turn the onion back over and allow the onion petals to fan out, then remove the center of the onion.
- Place the onion on a cookie sheet.
- In a small bowl, whisk together eggs and water.
- In a second bowl, mix together the almond flour, garlic salt, paprika, and pepper.
- Lightly sprinkle the onion with the flour mixture. Then spoon some of the egg mixture and, using a silicone basting brush, coat the onion with the egg mixture. (You may not need to use all of the egg mixture)
- Cover the onion with the almond flour mixture. Using a spoon to get into all of the layers of the onion.
- Bake your onion for 20-25 minutes until browned and onion petals are soft.
- While the onion is baking, mix the Greek yogurt, hot sauce, chili powder, and garlic salt together in a bowl. Set aside in the fridge until you're ready to serve.

- While the onion is air frying, mix the Greek yogurt, hot sauce, chili powder, and garlic salt together in a bowl. Set aside in the fridge until you're ready to serve.

- Preheat oven to 400°F/200°C degrees.
- Peel and cut off the top 1/4 inch of the onion.
- Place the onion cut-side down. Starting 1/2 inch from the root, make a downward cut all the way through to the board.
- Repeat to make four evenly spaced cuts around the onion.
- Continue slicing between each section until you have 16 evenly spaced cuts.
- Turn the onion over and use your fingers to gently separate the outer pieces.
- Melt the coconut oil and brush the oil on both sides of the onion petals.
- In a bowl, combine panko, salt, pepper, cayenne, and cilantro. Sprinkle the panko mixture on the onion.
- Bake in the oven for about 30 - 40 minutes.
- In the meantime, place all the ingredients for the sauce except for the potato starch in a small pan.
- Bring to a boil. Reduce heat to medium and let boil for 3 - 5 minutes.
- In a small bowl, dissolve potato starch in 1 Tbsp of water. Reduce heat to low and add the potato starch mixture.
- Stir for a minute or so until the sauce is thickened.
- Taste the sauce and adjust the amount of sugar or chili.
- Infuse love and serve with the sauce on the side.

- Beat together the egg and buttermilk in a medium bowl.
- Combine the flour, salt, pepper, cayenne, oregano, thyme, cumin and old bay in a separate bowl.
- Slice 3/4" to 1" off the top and bottom of the onion and remove skin.
- Cut out a 1" core and slice about 3/4 of the way down to create petals.
- Place the onion in boiling water to separate the petals.
- Let cool.
- Dip the onion into the milk mixture.
- Dip the coated onion into the flour mixture, covering liberally.
- Repeat process.
- Let onion set in the refrigerator for 15 minutes before frying.
- Heat vegetable oil in a deep fryer or pot to 350 degrees.
- Fry the onion right side up for 10 minutes until brown.
- Drain on a rack or paper towel.
- Combine ingredients for dipping sauce and serve.

Snagged this recipe from a copycat cookbook I saw at BJ's. I had to keep repeating it in my head over and over again on the way home. Well worth the mental effort, though. Not only is it good for the onions, but it makes a great sandwich spread, especially on turkey breast.
