BAKED BUFFALO MOZZARELLA AND PROSCIUTTO

Australian Gourmet Traveller spring entree recipe for baked buffalo mozzarella and prosciutto.

Number Of Ingredients 9

4 small buffalo mozzarella (about 125gm each)
4 thin prosciutto slices
2 tbsp extra-virgin olive oil
4 thin ciabatta slices
¼ cup each (loosely packed) basil, chervil and flat-leaf parsley leaves
1 tbsp Dijon mustard
1 tsp lemon juice
60 ml (¼ cup) extra-virgin olive oil
Pinch of brown sugar

Steps:

  • Preheat oven to 250C. Wrap each buffalo mozzarella with a prosciutto slice, secure with a toothpick and place on an oven tray lined with baking paper. Drizzle with oil and roast until mozzarella just begins to melt (4-5 minutes).
  • Meanwhile, heat a char-grill over medium-high heat, grill ciabatta slices until golden (3-4 minutes each side).
  • For Dijon mustard dressing, whisk mustard and lemon juice in a bowl to combine, then whisk in oil and sugar, season to taste and set aside.
  • Place a grilled ciabatta slice on each plate, top with a baked mozzarella, season with freshly ground black pepper. Combine herbs in a separate bowl. Serve mozzarella warm with herbs to the side and dressing drizzled over.

I have had a similar recipe in a restaurant and enjoyed so when I saw this in recipe+ I thought I would post.

8 slices prosciutto (thin)
8 basil leaves (large)
3/4 cup basil leaves (extra)
2 garlic cloves (sliced)
4 (150 g) fresh mozzarella balls (buffalo)
1/2 cup olive oil
salt and pepper (to taste)

Steps:

  • Preheat oven to 180C/160C fan forced.
  • For each mozzarella, lay 2 slices of prosciutto on a flat surface side by side slightly overlapping and top with a basil leaf and a few slices of garlic (reserve a few slices to make dressing) and then top with mozzarella, wrap prosciutto to enclose and secure with a toothpick.
  • Season with pepper and place on a baking tray and bake for 3 to 4 minutes or until mozzarella soften slightly and remove from oven and cool slightly and then remove toothpicks.
  • Meanwhile, blend extra basil and reserved garlic in a food processor until finely chopped with a motor running, gradually add oil and process until smooth and season with salt.
  • Spoon basil sauce onto serving plates and top with mozzarella parcels.

2 medium heads radicchio (1 1/2 pounds total), each cut into 6 wedges and cored
3 tablespoons extra-virgin olive oil
1/3 cup balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
6 ounces smoked mozzarella, sliced and torn into pieces
2 ounces thinly sliced prosciutto

Steps:

  • Put oven rack in upper third of oven and preheat oven to 425°F.
  • Arrange radicchio wedges, cut sides up, in a 2 1/2-quart shallow glass or ceramic baking dish (11 by 7 inches), then drizzle with oil and vinegar and sprinkle with salt and pepper.
  • Roast radicchio, turning over once or twice, until wilted and tender, 30 to 40 minutes.
  • Arrange cheese over radicchio, then arrange prosciutto over cheese and roast until cheese is just melted, 3 to 5 minutes. Serve immediately.
