Steps:
- Wash and scrub the potatoes, then slice them into ¼ inch slices lengthwise. Think "French fry" size. You can leave the skins on, if desired. I left mine on.
- Cover the potatoes in a bowl with cold water and let them soak for at least 10 minutes. 60 minutes is better.
- Drain and pat the potatoes as dry as you can get them.
- Preheat oven to 350 degrees F.
- Toss the potatoes with olive oil, Cajun seasoning blend and a bit of salt and pepper. Be sure to get them nicely coated.
- Spread the fries out onto baking sheets and bake them for 20 minutes, tossing them a bit about half way through.
- Increase the heat to 450 degrees and bake for another 20-25 minutes, or until the baked Cajun fries and nice and crispy.

- Grease and line an 8x8 pan with parchment paper, with two sides overhanging to use as handles. In a large saucepan, bring chicken (or veggie) broth and milk to a boil. Once boiling, turn heat down to medium. Slowly add polenta into saucepan, whisking constantly. Reduce heat immediately to medium-low or low, continuing to whisk almost constantly until thick and creamy, about 7-8 minutes. You'll want a lower heat that keeps it from splattering.
- Remove from heat and add butter, nutritional yeast, thyme, and salt and pepper to taste. Stir to combine. Transfer to prepared pan. Press polenta into an even layer and smooth top with a spatula. An extra piece of parchment is helpful in pressing polenta into pan.
- Refrigerate for two hours or overnight. When ready to bake, preheat oven to 450 degrees Fahrenheit. Gently lift out slab of polenta using parchment handles and transfer to cutting board. Slice polenta into 18 (4 x 1-inch) strips and place onto a greased baking sheet. Brush each strip with olive oil and sprinkle with salt.
- Bake for 15 minutes, carefully flip over strips, and bake for about 10 to 15 minutes more or until crispy and browned on the edges.

- Put a kettle on to boil. Arrange oven rack in bottom most position of the oven and preheat oven to 425 degrees F. Line a large baking sheet with paper towels.
- Meanwhile, cut potatoes into batons/French fries, about 1/3 to 1/2-inch thick. Place in a large bowl.
- When water boils, pour over the potatoes and let sit 3 minutes. Drain thoroughly and spread over the towel-lined baking sheet. Blot with more towels. Dry the bowl and return the potatoes to it. Add oil, Cajun seasonings and salt and toss until the potatoes are completely coated. Discard paper towels and dry baking sheet if necessary. Coat the baking sheet with cooking spray. Spread the potatoes out in an even layer on the baking sheet.
- Bake on the bottom rack until golden on the bottom, 12 to 15 minutes. Turn over with a spatula and continue baking until golden and cooked through, 15 to 18 minutes longer, stirring one more time.

- Heat oven to 425 degrees F (218 C) and use the convection setting if you have it. This will allow the fries to become more crispy on the edges and cook faster. If you don’t have a convection setting, no worries. You’ll just bake for slightly longer. Convection simply speeds up the process.
- Line 1 large or 2 small baking sheet(s) with parchment paper or silicone baking mats and set aside (this is important or the fries will stick). (See notes for best way to cook large batches of fries.)
- Wash and scrub your potatoes clean but leave the skin on. Add to a large saucepan or pot and cover with water by 1 inch. Add a pinch of salt.
- Bring to a boil over high heat and cook until a knife slides in easily and is easily removed — ~25-35 minutes depending on the size of your potatoes. You don’t want them to be cracking or falling apart, but you do want them to be tender and pretty much cooked through. Remove from the water and allow to cool on a cutting board (~5-10 minutes).

- Soak you potatoes! If you can, soak your potatoes in a bowl of water overnight or at least an hour. If that isn't possible, even 15 minutes of soak time will help and is much better than not soaking them at all.
- To prevent steamed, mushy potatoes, remove your potatoes from the water and pat them dry with a paper towel. This may take a few extra minutes but is definitely worth it!
- Place the dried off potato strips in a large bowl and toss with olive oil, oregano, garlic powder, onion powder, paprika, salt, thyme and ground pepper until coated well. Add the cayenne pepper and red pepper flakes now or see notes on when to add them.
