Quick and easy. Be ready to try to hold the relatives back. I usually have to make a double batch. I don't know where I got this recipe but its been a favorite in my home for over 30 years.

2 tablespoons vegetable oil
½ cup unpopped popcorn
2 cups dark brown sugar
1 cup butter
½ cup white corn syrup
1 teaspoon salt
½ teaspoon vanilla extract
½ teaspoon baking soda

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Heat oil in a large saucepan over medium-high heat. Put 4 popcorn kernels into the oil and cover until popped; add remaining kernels to the saucepan in an even layer. Cover and remove from heat, about 30 seconds. Return to heat and gently shake pan back and forth over the burner until popping slows to several seconds between pops, 1 to 2 minutes. Remove from heat and transfer to a large bowl.
  • Combine brown sugar, butter, corn syrup, and salt in a 2-quart saucepan. Bring to a boil, stirring constantly. Let boil for 5 minutes more without stirring. Remove from heat and stir in vanilla extract and baking soda. Stir well. Pour over the popcorn; mix until evenly coated. Transfer to a shallow oven-safe pan.
  • Bake in the preheated oven, stirring every 15 minutes, until a cooled piece of popcorn is crunchy, about 1 hour.

Steps:

  • Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.
  • Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.
  • Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.
  • Pour syrup over warm popcorn, stirring to coat evenly.
  • Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.
  • Cool; break apart. Store in tightly covered container.

1 cup light brown sugar
½ cup butter
¼ cup light corn syrup
½ teaspoon salt

Steps:

  • Preheat oven to 200 degrees F (95 degrees C).
  • Pour popcorn into a very large bowl.
  • Combine brown sugar, butter, corn syrup, and salt in a saucepan over medium-low heat. Cook, stirring continuously, until mixture begins to bubble, but not boil, about 10 minutes. Remove from heat; stir in baking soda carefully. Pour over popcorn; mix until evenly coated.

12 quarts plain popped popcorn
1 pound peanuts
2 cups butter, cubed
2 pounds brown sugar
1/2 cup dark corn syrup
1/2 cup molasses

Steps:

  • Preheat oven to 250°. Place popcorn in 2 large bowls. Add 1/2 pound peanuts to each bowl. In a Dutch oven, combine remaining ingredients. Bring to a boil over medium heat; cook and stir 5 minutes. , Pour half of the syrup over each bowl of popcorn and stir to coat. Transfer to large roasting or 15x10x1-in. baking pans. Bake 1 hour, stirring every 15 minutes., Remove from oven and break apart while warm. Cool completely. Store in airtight containers.

1 cup butter (NO substitutions)
2 cups brown sugar (firmly packed)
1/2 cup light corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
5 quarts popped corn (it is best if you do it the "old-fashioned" way with oil and popcorn in a pan on the stove...microwa)
2 cups nuts (your choice) (optional)

Steps:

  • melt butter.
  • stir in brown sugar, corn syrup and salt. bring to a boil stirring constantly.
  • boil without stirring 5 minutes (this is crucial).
  • remove from heat, gradually stir in baking soda and vanilla.
  • place your popcorn and nuts in a large bowl. gradually pour the caramel mixture onto the popcorn mixing well.
  • place popcorn on baking sheets and bake at 250 degrees for 1 hour stirring every 15 minutes.
  • remove from oven and let cool completely. break apart and store in air tight container.

Oh LORD, have mercy! LOL! This stuff is the kind-of snack you sit down in front of the tv with and you look down and it's all gone! The best part about this recipe is (other than the end product) the fact no candy thermometer is necessary.

2/3 cup unpopped popcorn
2 tablespoons oil (for popping)
1 cup butter
2 cups brown sugar
1 teaspoon salt
1/2 cup corn syrup
1 teaspoon baking soda

Steps:

  • Preheat the oven to 200°.
  • Spray your largest cookie sheets.
  • Pop the popcorn in the oil and set aside. I do this in two batches. Place in a very large bowl. (Plastic bowls work really well because the caramel won't stick; you could also spray the bowl with a bit of Pam).
  • Over medium heat in a heavy saucepan, melt butter and stir in brown sugar, salt and syrup. Bring to a rolling boil.
  • When it starts to boil, boil a full 5 minutes stirring constantly with a wooden spoon. (I used a plastic spatula and ended up sacrificing it)
  • Remove from the heat and add the soda. Pour caramel directly on the popcorn and stir to coat completely.
  • Pour popcorn onto the sheets and bake for 1 hour, stirring every 15-20 minutes. Allow to cool and break into pieces. Store in zip-top bags.

3/4 cup corn kernel, popped
1/2 cup butter
1/4 cup light Karo syrup
3/4 cup brown sugar
1/4 cup Splenda granular
1/2 teaspoon salt
1/2 teaspoon vanilla
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 250 and coat roaster pan with butter or cooking spray - I use a non-stick roaster, which is just perfect for this recipe.
  • Pop popcorn right into roaster pan.
  • Over medium heat (don't go any higher or it might burn - I set my burner at 4.5 on a 9 scale), combine butter, brown sugar, splenda, karo syrup and salt.
  • Bring to a boil - Boil for 5 minutes without stirring.
  • Remove from heat and stir in vanilla and baking soda.
  • Working quickly, dump caramel mixture onto popcorn and stir until well distributed.
  • Bake for 30 minutes stirring once after 15 minutes to even out the caramel making sure that all pieces are coated nicely.
  • If you like, cool popcorn on parchment paper, especially if you aren't using a non-stick pan - I just leave mine in the non-stick roaster, stirring every once in awhile until completely cool.
  • Store in covered tupperware dish - if you have any leftover!
