BAKED COD IN CREAM SAUCE
This baked cod is hands-down my favorite fish dish. It turns out perfectly flaky every time. The flavorful, creamy sauce puts it over the top!

Steps:
- Preheat oven to 400-degrees.
- Prepare cream sauce (see instructions below) and set aside, keeping warm.
- Spray a 9x13 baking dish with cooking spray and place cod fillets in the dish. Sprinkle with salt.
- Combine melted butter and garlic and brush over fillets, reserving any leftover butter mixture.
- Sprinkle seasoned breadcrumbs over fillets and pour remaining butter mixture over the top.
- Pour cream sauce in the spaces between the cod fillets so it fills up the baking dish and just the tops of the fillets are visible.
- Place in the preheated oven and bake for 25-30 minutes or until the cream sauce starts bubbling.
- When the sauce starts bubbling up, set oven to "broil" and broil for about 3-5 minutes or until the fillets start to turn golden brown.
- Keep a CLOSE eye on it to make sure it doesn't start to burn.
- Remove from oven and serve with potatoes, rice, or vegetables.

Here you can use just about any kind of white fish fillets instead of cod. Sea bass and sole are two good options.

- METHOD 1 Preheat your oven to 220 C or 428 F. 2 Combine the melted cooking fat, mayonnaise, minced onion, dried dill and dried thyme in a bowl and mix well. Season to taste with sea salt and freshly ground black pepper. 3 Grease a baking dish with some cooking fat, place the fish in it and pour the creamy sauce over it. 4 Bake in the preheated oven until the fish is just cooked through, about 10 minutes per inch of thickness.

- Preheat oven to 425 degrees F. Line two baking sheets with aluminum foil and spray the foil generously with nonstick cooking spray. Set aside.
- Place the flour in a wide shallow dish or pie plate. In another similar dish, combine plain panko bread crumbs, Old Bay, garlic powder, parsley, salt, pepper, and olive oil. In a third shallow dish, lightly beat the eggs.
- Dredge a piece of fish in all-purpose flour, coating both sides. Transfer to a separate piece of foil temporarily. Repeat with remaining pieces of fish.
- One by one dip the flour coated fish first into the egg, allowing excess to drip back into dish, then into panko mixture, coating both sides of the fish well. Place on the prepared, foil lined baking sheets and repeat the process with the remaining flour coated fish.

- Preheat oven on conventional setting to 425 F or 220 C. Rinse and pat dry the fish, then sprinkle on the lemon juice and worcestershire sauce.
- Using an oven-safe skillet, let 1 Tbsp of butter melt in it over medium high heat, then add in the flour and allow to brown for a minute.
- Gradually add in the wine while stirring, then add the milk and sour cream and let simmer on medium-low heat for a couple of minutes. Season with the mustard and nutmeg, then add salt and pepper to taste.
- Add salt, pepper and paprika to both sides of the fish, add to the skillet and ladle the sauce over it. Finally add a few small pieces of butter on top.
