Learned from my godmother who was a chef, this recipe brings back a special Southern nostalgia. Simple yet flavorful, a wonderful side dish for any meal. Play with the spice and sugar measurements to suit your own taste.

2 eggs
2 tablespoons milk
2 (14.75 ounce) cans creamed corn
2 tablespoons butter, diced
1 tablespoon all-purpose flour
1 tablespoon white sugar
½ teaspoon black pepper
½ teaspoon celery salt
½ teaspoon onion powder
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl beat eggs with milk. Blend in the corn and butter. Stir in flour, sugar, black pepper, celery salt, onion powder and garlic powder. Transfer to a glass pie plate.
  • Bake in preheated oven for 45 minutes to 1 hour, or until top is golden and bubbly.
  • Allow to cool for 10 minutes before serving.

8 saltines, crushed
1 tablespoon butter, melted
1/8 teaspoon salt
1/8 teaspoon pepper
1 egg
1/4 cup 2% milk

Steps:

  • In a small bowl, combine the corn, saltines, butter, salt and pepper. Transfer to a shallow 2-cup baking dish coated with cooking spray. , In a small bowl, whisk egg and milk; pour over corn mixture. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.

2 Tbsp (28 g) unsalted butter ((for coating the baking dish))
1 14.75 oz can of cream-style corn
1 15.25 oz can of sweet whole kernel corn
1 1/2 c (360 ml) half-and-half
3 Tbsp (23 g) all-purpose flour
2 Tbsp (30 ml) maple syrup
1/8 tsp (2.6 g) chili powder
1 Tbsp (0.2 g) chives ((fresh or freeze dried))
2 cloves garlic ((finely minced or grated, or 3 cloves roasted garlic, as used in the video))
1 tsp (6 g) each, salt & nutmeg ((or to taste))
3 large eggs ((beaten))
1 1/2 cups (170 g) each, cheddar and mozzarella cheeses ((grated))

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Use butter to heavily coat a casserole dish or an 8 x 8 pan.
  • In a large mixing bowl, whisk the cream-style corn, sweet corn, half-and-half, flour, maple syrup, chili powder, chives, and garlic together. Add salt & nutmeg (to taste). Whisk in the beaten eggs and cheeses.
  • Transfer to buttered baking dish. Bake in the center of the middle rack in a preheated oven at 350 degrees F (175 degrees C) for 1 hour or until the edges are golden brown. Allow to cool for 15 minutes before serving.

3 tablespoons extra virgin olive oil
2 cloves garlic, finely chopped
1 medium yellow onion, thinly sliced
1 cup sweet potato, peeled and grated on the large holes of a box grater
fine sea salt, to taste
freshly ground black pepper, to taste
2 cups spinach
2 cups creamed corn
¼ cup fresh herb, such as parsley, chives, sage, or dill, finely chopped
1 pinch cayenne pepper, optional
4 large eggs
¼ cup parmigiano-reggiano, grated, plus more to finish
flaky sea salt, to taste

Steps:

  • In a 10-inch (25 cm) cast iron skillet set over medium heat, add the olive oil, garlic, and onion, and cook until the onion is softened, 5 to 7 minutes.
  • Preheat the oven to 400°F (200°C).
  • Add the grated sweet potato, season with salt and pepper, and continue to cook until the sweet potato is tender, 8 to 10 minutes.
  • Add the spinach and stir until wilted, about 1 minute, then fold in the leftover creamed corn, herbs, and cayenne, if using.
  • Season again to taste and stir until warmed through, about 1 minute.
  • Use the back of a wooden spoon to create four small indentations for the eggs and add each egg, being careful not to break the yolks.
  • Sprinkle with Parmesan cheese and place in the oven.
  • Bake until the egg whites are just set and the top begins to turn golden, about 15 minutes.
  • Sprinkled with flaky salt, additional herbs, and additional Parmesan cheese.
