Steps:
- Preheat the oven to 400 degrees F.
- Bake the potatoes until tender, 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper.
- Adjust the oven temperature to 450 degrees F. Spray two 12-hole muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin hole. Use your fingers to gently press down the sides and bottom in each muffin hole to make a nest. Spray again with cooking spray. Then bake for 15 to 20 minutes. Watch and make sure they do not burn.
- Allow the nests to cool and lower the oven temperature to 400 degrees F. Then crack an egg into each nest. Sprinkle with salt and pepper and bake until the whites are set, about 15 minutes.

COUNTRY EGG, CITY EGG MASHED-POTATO BAKED EGGS
Always motivated to get dinner on the table quicker than the night before, I create leftovers to get ahead on the next night's meal. I'm forever looking for inventive and savory ways to incorporate my leftovers into the simplest preparations. This recipe is an inspired short version of the irresistible original, "lifted" from my very favorite egg cookbook, "Country Egg, City Egg," by Gayle Pirie and John Clark. Served with a simple salad, this is a great midweek meal.

- Peel a russet potato, using a sharp knife or a mandolin slice the potato very thinly. Prepare custard cups or ramekins by spraying them with a non-stick cooking spray. Take the thin potato slices and place them on the bottom and sides of the cups. Brush the potatoes with olive oil.
- Place the custard cups on a baking sheet and put them in the oven for 10 minutes. The potato should be slightly tender when poked with a fork.
- While the potatoes are baking prepare the eggs. Add the eggs to a bowl and beat slightly. Add the remaining ingredients, salt and pepper to taste, mix until well blended. Divide the egg mixture between the two cups. Place the potato cups back into the oven and continue to bake for 37 to 39 minutes or until the eggs are set. Sprinkle with cheddar cheese, place back into the oven and bake for an addition minute or two or until the cheese is melted.

- Heat your oven to 350 degrees. Then microwave the potatoes until they are just warm - this will probably just take a minute or two. Stop halfway to stir the potatoes. The potatoes are easier to work with when they are warm, and more importantly, by heating them a little it insures that the potatoes will be hot when the eggs are cooked.
- Use half of the butter to grease a pie pan. Then add the warm potatoes. Use a spoon to create four spaces to hold the eggs. Crack the eggs into these spots, sprinkle a bit of salt and pepper over the eggs. Then sprinkle the cheeses over. Melt the remaining butter and drizzle it over.
- Then move it to an upper rack and cook under broil for 5 more minutes. The whites of the eggs should be solid, and the yolks should still be soft. Let sit for 3-5 minutes before serving.
