BAKED CHICKEN AND DRESSING
This dish is good enough for company. It is an easy dish to make and looks good. The chicken stays very moist.

Steps:
- Place chicken in baking dish, sprayed with no-stick spray.
- Put cheese on top of each piece of chicken.
- Mix soup and water and pour over the top.
- Mix melted margarine with dressing and sprinkle on top of cheese.
- Bake 1 hour, uncovered, at 325 F degrees.
BAKED HEN AND DRESSING

Steps:
- Remove giblets from bird. Wash giblets and bird well, inside and out. Place all ingredients including giblets in large pot, cover with water, and bring to a boil. Reduce heat and simmer until tender, approximately 2 to 2 1/2 hours. Skim fat from pot at end of cooking time. (You will need to reserve stock for stuffing and gravy.) In the meantime, prepare and cook corn bread.
- Preheat oven to 350 degrees. Combine all ingredients and pour into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.
- Preheat oven to 350 degrees. Crumble dried white bread slices, cornbread, and saltines; mix together and set aside. Sauté chopped celery and onion in butter until transparent, approximately 5 to 10 minutes. Pour over corn bread mixture. Add stock; mix well and taste; add salt, pepper, sage, and poultry seasoning. Add beaten eggs and mix well. Reserve 2 heaping tablespoons of this mixture for the giblet gravy. Pour into a greased pan. Place bird on top of dressing and bake until dressing is done, about 45 minutes. If hen browns too quickly, make a tent of foil and place over bird.
- Bring stock to a boil along with giblets and the meat that has been removed from the neck. Add bouillon cubes and raw stuffing mixture. Mix cornstarch with water and add to boiling stock, stirring constantly. Reduce heat and continue to cook for 2 to 3 minutes. Add salt and pepper to taste, and add sliced boiled egg. Serve with hen.
SOUTHERN CHICKEN AND DRESSING
Steps:
- Mix together cornbread batter according to your cornbread recipe or mix instructions. Add diced celery and onions to the batter and bake as directed. Remove cornbread from oven and allow to completely cool. Shred rotisserie chicken. Set aside.
- Preheat oven to 375° Fahrenheit.
- Finely crumble up cornbread and stale bread. Add salt, pepper and poultry seasoning. Mix together well. Toss together with shredded chicken.
- Add eggs. Mix well with fork or hands. Mix in butter and 1.5 cups broth with hands or fork
- Spoon cornbread dressing into a greased 9x13 pan or 5 quart casserole dish. Pour remaining chicken broth over the top. Bake covered with foil or a lid for 25 minutes and uncovered for 20 minutes. Chicken and Dressing is done when top is browned and edges are bubbling.
SOUTHERN HEN DRESSING
Great holiday dish. From the Twentieth Century Club Cookbook, Gilmer, TX. Freezes well. Can be cooked in a roaster.

Steps:
- Mix together crumbled corn bread, crackers and biscuits.
- Heat 2 1/2 c.
- broth to boiling point.
- Pour into bread mixture.
- This should be mixed until ingredients blend together.
- Simmer onion and celery in oleo with remainder of broth until clear.
- Mix together eggs and soup.
- Add the onion-celery mix, egg mix, remaining broth.
- Add seasonings and green onions.
- The green onions add color.
- Mix well.
- Add additional broth until consistency you prefer for drier or juicier dressing.
- Pour into a greased 9X13X2 baking dish.
- Bake at 350 F.
- until done- about 30-40 minutes.
- Dressing should be lightly browned.
- Serves 12 generously.
SUPER EASY SUPER MOIST OVEN ROASTED HEN

- 1. Preheat oven to 375 degrees.
- 2. Rinse hen with cold tap water; drain and pat dry with paper towels.
- 3. Generously sprinkle seasonings inside of hen. Place 3 to 4 Tablespoons cubed butter inside cavity of hen. Stuff celery, onion, and apple inside cavity as well. Generously rub outside of hen with soft butter; cover with strips of bacon. Secure bacon with toothpicks. Generously salt and pepper outside and dust lightly with poultry seasoning.
- 4. Bake 25 minutes per pound or until internal meat reaches 180 degrees F internal heat (using meat thermometer). NOTE: if you purchase hen with a thermometer, don't remove from oven until it pops out. Once the hen is baked, remove from oven and cover with a tent of aluminum foil; allow it to rest 30 minutes before slicing and serving.

- In a large saucepan, saute onion and celery in butter until tender; remove from the heat. Stir in the broth, seasonings and eggs. EVA CLAIBORNE'S HEN AND DRESSING
Got this off of the Taste of Home Website last year. This is some awesome dressing! The original poster said this recipe had been in her family for over 70 years! I made this and brought it over to my brother's house for Thanksgiving. Everyone raved! It's a bit of work, but oh so worth it! I did it in stages. The day before, I cheated and baked some Pillsbury biscuits and 2 pans of Jiffy cornbread. I also used chicken parts instead of a whole bird, and made the broth the day before also. This is a true "Southern" dressing! Prep time does not include time for biscuits or cornbread. Note: Don't be alarmed at how thin this appears before it bakes. All the moisture will be absorbed by the cornbread and biscuits. Just make sure you stir frequently while it bakes, to ensure the moisture gets evenly distruted into the dry ingredients.

- Place chicken, 1 onion, 2 stalks celery, and salt in a large pot enough water to cover.
- Bring to a boil.
- Reduce heat, and gently boil 90 minutes, or until chicken meat falls easily from the bone.
- Drain, reserving broth.
- Chop chicken, and set aside.
- Preheat oven to 350.
- Lightly grease a large baking dish.
- In a large bowl, mix crumbled cornbread, crumbled biscuits, 2 cups celery, 2 large onions, sage, poultry seasoning, seasoned salt, and red pepper.
- Stir in eggs and reserved chicken broth.
- The mixture should be very thin.
- Transfer mixture to the prepared baking dish.
- Bake 45 minutes in the preheated oven, stirring often.
- Mix chicken into the dressing mixture.
- Continue baking 15 minutes, until lightly browned.
BAKED CHICKEN & PLAIN DRESSING
This recipe is for "picky eaters" like me. Even grown-ups seem to like it for a change. To make a more traditional dressing you may add sauteed onions, celery and hard boiled eggs before baking, Instead of cornbread mix, a homemade cornbread recipe may be used. Note: Chicken may be baked with 2-3 cups of water instead of boiled.

- 1. Bake cornbread- Mix according to directions with eggs and milk. Note: I use an iron skillet that has been greased and heated then sprinkle cornmeal over the bottom before adding prepared cornbread mixture and baking.
- 2. Allow baked cornbread to cool. Break pieces into large bowl. Add spices and enough broth to moisten well. Reserving some broth to pour over chicken.
- 3. Place dressing into a buttered 9x13 inch baking dish. Note: May use cooking spray in place of butter.
- 4. Place (cooked) boiled whole chicken rubbed with salt, pepper and other spices as desired in the center of dressing. Pour broth over chicken making dressing a little soupy.
- 5. Bake uncovered for about 45 minute @ 350 until chicken is browned and dressing is hot. May increase oven temperature to 400F during last 15 minutes.
