MEXICAN LASAGNA
I collect cookbooks and recipes (this one is from my son's mother-in-law). My husband teases me that I won't live long enough to try half of the recipes in my files! He loves this easy Mexican lasagna. -Rose Ann Buhle, Minooka, Illinois

- Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in beans, chilies, taco seasoning and hot salsa., In a greased 13x9-in. baking dish, layer a third of the noodles and meat mixture. Sprinkle with 1 cup of cheese. Repeat layers twice. , Combine mild salsa and water; pour over top. Cover and bake 1 hour or until heated through. , Top with sour cream, olives, onions, tomatoes if desired and remaining cheese. Bake, uncovered, 5 minutes. Let stand 10-15 minutes before cutting.

BAKED LASAGNA
This is the top lasagna recipe in our family. It originally came from a junior league recipe book called River Road Recipes.

Steps:
- Brown meat slowly.
- Add next 6 ingredients to meat (garlic through tomato paste).
- Add one tomato paste can of water.
- Simmer uncovered until thick or about 45 minutes.
- Meanwhile combine cottage cheese with eggs, salt, pepper, parsley and Parmesan.
- Cover and refrigerate until ready to use.
- Also meanwhile, cook lasagna noodles in boiling water until tender.
- Drain and rinse with cold water.
- Spray a 13X9X2 baking pan with vegetable oil spray.
- Place 1/2 of the noodles in the bottom of the pan.
- Spread 1/2 of the cottage cheese mixture over the noodles.
- Next layer 1/2 of the meat mixture over the cottage cheese, then sprinkle 1/2 of the mozzarella over the meat.
- Layer again with noodes, cottage cheese, meat and mozzarella cheese.
- Bake at 375 for 30 minutes, until bubbling and mozzarella has browned some.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Add the cumin, chili powder, garlic powder, cayenne, salt, pepper and tomatoes; heat through. Cover bottom and sides of a greased 13x9-in. baking dish with tortillas. , Pour beef mixture over tortillas; place a layer of tortillas over meat mixture and set aside. Combine cottage cheese, Monterey Jack cheese and egg; pour over tortillas. , Bake at 350° for 30 minutes. Remove from oven; sprinkle rows of cheddar cheese, lettuce, tomatoes, green onions and olives diagonally across center of casserole.

My whole family loves this beefy lasagna flavored with taco seasoning. Even my picky five-year-old will eat it. Serve with shredded lettuce, fresh sliced tomatoes, olives and sour cream.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.

Dinner is ready and waiting in the refrigerator with this make-ahead casserole. If you like food on the hot and spicy side, stir the jalapenos right into the tomato sauce mixture.

- In a large skillet over medium heat, cook garlic, onion, ground beef, chili powder and cumin for 10 minutes until beef is browned and completely cooked.
- Drain if necessary.
- Stir in beans; set aside.
- Combine sour cream and flour until smooth; set aside. Combine tomato sauce and salsa; set aside.
- Place 1 1/2 tortillas in the bottom of lightly oiled 8 cup rectangular baking dish, overlapping slightly.
- Top with half each meat mixture, sour cream mixture and tomato sauce mixture.
- Repeat layers. Cover with plastic wrap and refrigerate for up to 24 hour.
