3 cups rolled (not instant) oats (if gluten free, make sure they are certified)
1/2 cup brown sugar
2 tsp cinnamon
2 tsp baking powder
1 tsp salt
2 T flax meal (optional)
1 cup milk
2 eggs
2 tsp vanilla
1/4 cup butter, melted
3/4 cup dried fruit

Steps:

  • I used a 4 quart round crockpot. You're baking this, but no need to vent the lid of the crock; keep all the moisture in. I really wanted this to take 6 hours on low so I could see if it could be done overnight. It took 4 3/4 on low for me----so unless you hardly sleep, do this in the day time so you can keep an eye on it. Mix all the ingredients together in the crockpot. I dumped in all the dry stuff, then added the melted butter and milk. Stir well with a spoon---make sure the baking powder gets dispersed evenly. Cover and cook on low for 3-5 hours, checking every so often. This is done when the edges are brown and are beginning to crust, and the center is set. An inserted knife should come out clean. Let it sit in the cooling crockpot for at least an hour before attempting to cut. The longer you let it sit, the more set and brownie-like the pieces will be.

1 tablespoon butter, melted
1/2 cup dried fruit

Steps:

  • Mix dry ingredients in crockpot. It is not necessary to grease it first.
  • Mix wet ingredients in bowl, then add to crockpot and mix well.
  • Cover and cook on low 3-5 hours.
  • Dish is done when edges are brown and beginning to crust and the center is set.
  • Inserted knife should come out clean.
  • Let sit in crockpot AFTER turning it off for an hour or more before cutting and storing.

1 pinch salt
1 cup half-and-half cream
¼ cup brown sugar, or to taste

Steps:

  • Just before going to bed, combine the oats and water in a slow cooker. Set on Low, cover, and let cook overnight. In the morning, stir in the salt and half-and-half. Scoop into bowls, and sprinkle brown sugar over the top.

Tip for oatmeal: make it in the crock pot overnight! It comes out very creamy from the slow cooking, and I love being able to get up and have that hot steamy bowl right away without having to do anything at all. You do have to clean up the crock pot, but you can make a large quantity and refrigerate the leftovers to be heated in the microwave for the next several days. I use two cups of oatmeal at a time, which is enough for four breakfasts (for me, anyway; probably more for people who don't have huge bowls like I do).

2 cups old fashioned oats (I get this in bulk from my food co-op, if you used the quick cooking ones, it might be even creamier)
6 cups water, I think you need more than usual because of the long cooking time
cinnamon (optional)
dried fruits (optional)
spices (optional)

Steps:

  • Put the oats and the water, along with anything else you want to add to the mix in the crock pot, turn on to low, and go to bed thinking about what a great breakfast you're going to have!
  • I scoop it out of the crock pot and eat it with maple syrup, or blueberry syrup, or pourable fruit, and soy milk--yum!
  • To reheat leftovers, I usually add a little water, and stir it a couple of times while microwaving until it's hot.
  • You can add other flavorings as you like, such as dried fruits, other sweet spices, diced apples, etc.
  • I usually put raisins on after it's cooked because I like them chewy.
  • I've been meaning to try dried cranberries.
