Pita Triangles with Olive Relish image

Combine classic Greek ingredients--olives, garlic, and lemon--to top pita triangles brushed with olive oil.

2 cups mixed olives, pitted, finely chopped
1/4 cup chopped green onions
2 tablespoons olive oil
1 teaspoon lemon juice
1/4 teaspoon freshly ground black pepper
2 garlic cloves, minced
2 (6 to 8-inch) pita (pocket) breads
2 tablespoons olive oil

Steps:

  • In medium bowl, combine all relish ingredients; mix well. Let stand at room temperature for about 1 hour or refrigerate up to 4 hours to blend flavors.
  • Heat oven to 350°F. Line 2 cookie sheets with foil. Cut each pita bread into 6 wedges. Split each wedge to make a total of 24 wedges; place on foil-lined cookie sheets. Brush wedges with 2 tablespoons oil.
  • Bake at 350°F. for 5 to 8 minutes or until crisp. Cool 10 minutes. Serve pita triangles with relish.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut each pita bread into 8 triangles. Place triangles on lined cookie sheet.
  • In a small bowl, combine the oil, pepper, salt, basil and chervil. Brush each triangle with oil mixture.
  • Bake in the preheated oven for about 7 minutes, or until lightly browned and crispy. Watch carefully, as they tend to burn easily!

1/2 cup mayonnaise
1/2 cup freshly grated parmesan cheese
2 teaspoons basil (dried)
2 teaspoons oregano
1 -2 garlic clove, minced
salt and pepper
8 mini pita pockets, split into circles

Steps:

  • Combine ingredients except bread. Using a sharp knife, split pita into rounds. Spread each with a tablespoon or so of mixture and place on a cookie sheet. Freeze uncovered, then transfer into plastic bag. When ready to use, preheat oven to 375°. Cut frozen circles into 6ths (small size) or 8ths (large loaves) using a sharp carving knife. Spread on cookie sheet, in one layer. Bake for 15-20 minutes until they start to brown a little.

These go well wilth all dips and spreads, and we use them with my Spicy Nacho Cheese Dip. I developed them in a quest looking for a healthy chip. I've used these at receptions I've catered, and they always go over really big. In December, I did these for a wedding, and was up most of the night before, baking 760 of these things ... !

2 package(s) pita bread, 6-count (any type)
- olive oil to brush on
- coarse sea salt
- cake cooling racks that will fit over a cookie pan

Steps:

  • To make baked pita triangles, cut the bread into fourths using a pizza cutter. You should be able to do 4-6 at a time, stacked. Spread triangles out on a wire rack over a baking sheet. Brush with olive oil and sprinkle with salt if desired. Bake at 350-375 degrees about 8-12 minutes, until crisp but not too brown. Cool on rack; package in an air-tight container.
  • NOTE: you can also bake them on sheets lined with crumpled aluminum foil. Makes clean up easier, and still no turning over during baking!

2 pita bread rounds, 7 inch size
4 tablespoons plain yogurt
1 tablespoon tahini
1 teaspoon lemon juice
1 tablespoon water
1 garlic clove, minced
1/2 yellow bell pepper
4 tablespoons tomatoes, diced
6 kalamata olives, thinly sliced
2 tablespoons feta cheese, crumbled

Steps:

  • Preheat oven to 425 degrees F.
  • Place whole pitas on baking sheet.
  • Mix yogurt, tahini, lemon juice, water and garlic until smooth.
  • Spread half of yogurt mixture on each pita bread.
  • Cut yellow pepper lengthwise into strips about 1/8 inch wide, then cut strips in half and place decoratively on pitas.
  • Then top each pita with half of the tomatoes, olives and feta.
  • Bake for 8 minutes, until pita begins to crisp and feta is beginning to melt.
  • Remove from oven, cut pitas into 6-8 triangles and serve warm, or leave whole and serve as individual pizzas.
