BAKED POMMES FRITES, CHIPS AND FRENCH FRIES
Baked Pommes Frites (french fries or chips) are crispy on the outside and tender on the inside and make a great combo to those burgers on the grill.

Steps:
- Preheat oven to 450 degrees F (232 degrees C)
- Wash and scrub potatoes well.
- Cut potatoes in 1/4 inch lengthwise slices then in long slices (Do not peel as the skin makes them more crispy and adds flavor and nutrients)
- Submerse potatoes into cold water and rinse about 3 times until water runs clear. (If you plan on cooking potatoes later then keep in cold water and put into fridge until ready to bake) This step keeps the potatoes from turning brown due to oxidation.
- Drain and dry potatoes very well in towel
- In large bowl add potatoes, olive oil and salt and toss to coat.
- Line baking sheet with parchment paper or aluminum foil to reduce mess and clean up time and place potatoes in a single layer on baking sheet.
- Place baking sheet of potatoes into oven and cook for about 60 minutes or until golden brown. (Toss potatoes gently every 10-15 minutes so it browns evenly.)
- Serve Baked french fries plain or with ketchup, malted vinegar or our special zesty mayonnaise dip on the side. Enjoy!

POMMES FRITES
Steps:
- Peel the potatoes, and cut them into batons that are about the length and width of your index finger.
- Preheat a deep pot of oil to 325 degrees F.
- For the first fry, deep fry potatoes in the oil for 5 to 6 minutes, or until a light golden color. Do not over load fryer. Fry in 3 batches if necessary. Remove the potatoes using a slotted spoon, and allow them to cool to room temperature.
- Raise the temperature of the oil to 375 degrees F.
- For the second fry, deep-fry the potatoes for 2 minutes, or until crispy. Remove potatoes, and transfer into a colander or bowl. While still hot, salt the potatoes.
- Serve with favorite dipping sauce.

This is a great recipe to get kids started learning how to cook. Take a day, take a week, teach them new things each day. We used this for our 'at-home' camp week. Taught the kids how to cook one new thing each day for an entire week.

- Arrange potato wedges on a baking sheet. Drizzle olive oil over the wedges; season with thyme, pepper, and salt. Turn wedges with a spatula to coat with oil and seasonings.
- Roast potato wedges for 15 minutes, turn, and continue roasting until soft in the center, about 15 minutes more. Transfer wedges to a platter and sprinkle cheese over them.

BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

- Heat oven to 400 degrees. Place a heavy-duty baking sheet in the oven. Scrub and rinse potatoes well, and then cut them lengthwise into 1/2-inch-wide batons. Place potato batons in a medium bowl, and toss them with olive oil, salt, and pepper.
- When baking sheet is hot, about 15 minutes, remove from oven, and spray with olive-oil cooking spray. Place prepared potatoes on baking sheet in a single layer. Return to oven, and bake until potatoes are golden on the bottom, about 30 minutes. Turn potatoes over, and continue cooking until golden all over, another 15 minutes. Serve immediately.

- Peel the potatoes, if desired; cut into 1/2-inch-thick matchsticks. Place in a bowl of cold water to soak for 10 minutes.
- Heat the oil in a large saucepan (at least 5 quarts) to 325°F. Remove the potatoes from water; dry very well with paper towels. Working in batches, blanch potatoes 2 minutes (they will not take on any color). Drain well; cool completely on pans lined with paper towels.
- Raise the heat of the oil to 375°F. Preheat the oven to 250°F. Working in batches, fry potatoes until golden, about 3 minutes. Drain well; place on a rimmed baking sheet. Sprinkle with salt; keep warm in the oven while frying the remaining potatoes. Serve immediately.

- Preheat oven to 450°F.
- Cut each potato into eight lengthwise wedges. Place potatoes in an ungreased baking pan. Spray potatoes evenly with cooking spray.
- Bake 20 minutes. Remove potatoes from the oven, turn them over using a spatula, and return the potatoes to the oven to bake an additional 10 minutes, or until golden.
- Season with salt and serve hot.

- Combine the milk and cream cheese in a small microwave-safe bowl. Heat on HIGH for 1 minute, 30 seconds. Use a whisk and stir until smooth.
- Heat another 30 seconds on high, then whisk again.
- Add grated cheeses and stir constantly until smooth. If necessary, heat at 10-second intervals, stirring in between, until an even consistency is achieved.
- Serve immediately.
