Jacket potatoes with home-baked beans image

Cold nights require comfort food, and there's no better than jacket potatoes - give yours a health boost with home-baked beans

4 baking potatoes
1 tbsp sunflower oil
1 carrot , diced
1 celery stalk, diced
400g can haricot beans , drained
2 tomatoes , chopped
1 tsp paprika - choose sweet or hot depending on taste
1 tsp Worcestershire sauce
2 tbsp chopped chives , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Scrub the potatoes and dry well, then prick in several places with a fork. Bake directly on the oven shelf for 1-1½ hrs, until they feel soft when squeezed.
  • After 30 mins, heat the oil in a pan and gently cook the carrot and celery for 10 mins until softened. Add the beans, tomatoes and paprika and cook gently for a further 5 mins until the tomatoes are softened and pulpy. Stir in 100ml water and the Worcestershire sauce, cook for a further 5 mins then cover and keep warm.
  • Split open the potatoes and spoon in the beans. Scatter with chives and serve.

2 sweet potatoes
½ x 400g can cannellini beans , drained
2 tbsp fresh pesto
2 tbsp cream cheese
100g can tuna in water, drained
½ red onion , finely chopped
1 lemon , zested
25g pine nuts , toasted
small handful basil leaves

Steps:

  • Heat oven to 180C/160C fan/gas 4. Pierce the potatoes a few times, then bake for 40 mins, or until really soft. Alternatively, microwave on High for 7 mins.
  • Mix the beans, pesto, cream cheese, tuna, red onion, lemon zest and some seasoning. Split the baked potatoes and stuff with the tuna filling. Top with the pine nuts and basil leaves.

4 medium baking potatoes
1 cup fat-free cottage cheese
1 can (5 ounces) albacore white tuna in water, drained and flaked
1 celery rib, chopped
1 medium onion, finely chopped
1/2 cup shredded cheddar cheese, divided
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 15-20 minutes or until tender, turning once., When cool enough to handle, cut each potato in half lengthwise. Scoop out the pulp, leaving thin shells., In a small bowl, mash the pulp. Add the cottage cheese, tuna, celery, onion, 1/4 cup cheese, paprika, salt and pepper. Spoon into potato shells. Place on a baking sheet. Bake, uncovered, at 350° for 18-22 minutes or until heated through. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted.,

16 ounces tuna fish
16 ounces black beans
1 lemon, juice of
1/2 teaspoon olive oil
1/2 teaspoon chopped parsley
1/2 teaspoon parmesan cheese

Steps:

  • Heat oven to 425 degrees.
  • Scrub potatoes and prick all over with a fork for even cooking.
  • cook 1 to 1/2 hours until easily skewered.
  • Mix drained tuna with beans.
  • Add chopped parsley and squeeze of lemon juice.
  • Cut open top of potato and spoon out half of potato into bowl with tuna and bean mixture.
  • Spoon back into potato and top with olive oil and sprinkle with parmesan cheese.

1 (15 ounce) can black beans, rinsed and drained
1 tablespoon dried onion, minced
1 tablespoon white vinegar
1 tablespoon lime juice
1 tablespoon sesame seeds, toasted
2 green onions, sliced
1/2 teaspoon garlic powder
1 -2 tablespoon cilantro, chopped
1 (8 ounce) package cream cheese, softened
1 (5 ounce) can tuna, packed in water (drained)
1 1/2 tablespoons mayonnaise (or more to taste)
cracker, for serving

Steps:

  • Combine first 8 ingredients in a small bowl and set aside.
  • In medium bowl, beat cream cheese then add tuna and mayonnaise, stir well.
  • Add black bean mixture to cream cheese mixture and combine.
  • Serve with whole wheat or saltine crackers.
  • Can also be spread onto flour tortillas, rolled into spirals and sliced for appetizer sandwiches.
