SPAGHETTI SAUCE

- In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
- Amen.
WEIRD SPAGHETTI
Traditionally this is Cincinnati Chili, although I grew up with it as "Farmer's Market Spaghetti" that my Grandmother discovered at the 1933 World's Fair. I deemed it Weird Spaghetti as a child, but "Good weird! A family favorite, we enjoy with just pasta and cheese. Cincinnati Chili is served with shredded Cheddar, oyster crackers, chopped onion and kidney beans.

- In a large saute pan over medium heat, brown the ground beef while breaking the mass into smaller pieces. While the meat is cooking and still a little pink, add the onion and saute until the beef is fully cooked and the onion turns translucent. Drain all of the fat from the pan. Add all the dry spices and cook for 2 to 3 minutes more, then stir in the tomato sauce. Once combined, incorporate the beef stock, vinegar and Worcestershire sauce. Bring to a simmer and cook for 1 hour. Put the cooked bucatini in a serving bowl and add the meat sauce. Garnish with Parmigiano-Reggiano and serve.
BEST EVER SPAGHETTI SAUCE
This is my favorite spaghetti sauce recipe. It comes from a freezer cookbook called Once a Month Cooking. This makes alot so plan on freezing about half of the recipe. You can use this sauce on spaghetti, manicotti, veal (or chicken) scallopini, or French bread pizza

- Brown the sausage with the onion and drain.
- Add the rest of the ingredients and simmer, partly covered, for 2 hours.
- Simmering can be done in a crockpot, if desired.
- This makes alot of sauce and can be frozen beautifully.
NOT YOUR AVERAGE SPAGHETTI SAUCE
This recipe started as an accident in the kitchen trying to make a dessert and a dinner at the same time. The outcome was a surprise and has become the family favorite. It is definitely out of the ordinary but worth it! Serve over your favorite pasta.

- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes.
- Stir spaghetti sauce and peach preserves with the sausage to coat. Pour water into the sauce jar and swirl it around to collect any extra sauce from the sides of the jar; pour into the skillet and stir. Bring mixture to a simmer, reduce heat to medium-low, and cook until the sauce thickens slightly, adding more water as needed to keep sauce from becoming too sticky, about 10 minutes.

THE GODFATHER'S SPAGHETTI SAUCE
It is claimed that in 1973, Glamour Magazine posted this recipe based on a scene in the movie "The Godfather": "Heh, come over here, kid, learn something. You never know, you might have to cook for 20 guys someday. You see, you start out with a little bit of oil. Then you fry some garlic. Then you throw in some tomatoes, tomato paste, you fry it; ya make sure it doesn't stick. You get it to a boil; you shove in all your sausage and your meatballs; heh...? And a little bit o' wine. - Heat the oil over medium heat in a large pot.
- Add garlic and cook for a few minutes. Do not let the garlic burn.
- Add tomatoes and tomato paste. Cook for about 5 minutes, stirring continuously so that a relatively smooth consistence is reached.
- Add sausages and meatballs and stir until the meat is coated.
- Add a splash of red wine, then the sugar according to taste.
- Reduce heat to medium-low and let simmer for a minimum of 20 minutes, stirring occasionally to prevent scorching.
- Serve by ladling over cooked pasta.
- Tip: It's not in the movie, but a teaspoon each of basil and oregano is suggested.
- Tip 2: If you're using canned whole tomatoes, draining them and then crushing them by hand will result in a chunky sauce. Canned crushed tomatoes will create a slightly thinner sauce, while canned chopped tomatoes will result in a thicker sauce.

NOT QUITE YOUR WISE GUY SPAGHETTI SAUCE
Years ago the Sicilian owners of a nail shop gave me their family sauce recipe. I've changed it over the years to my own tastes. Their recipe was olive oil, garlic,hot pepper flakes, tomatoes and cheese. The rest is mine. Sauce is a family thing, but this one has just the right sweet/hot ratio for me.

Steps:
- Warm the olive oil in a saute pan and add the onions, cooking gently until translucent. Add red pepper flakes, salt and pepper, tomatoes.
- Using a microplane grate the garlic into the mix.Add dried herbs if using. If using fresh, delay.
- Simmer slowly checking every 30 minutes or so until most of the liquid is evaporated and the sauce is quite thick. Add wine.
- Continue the simmer until sauce has thickened to the right consistency. Usually about 2 hours in total.
- Shut off heat, add the cheese, any fresh herbs, and taste for sweetness and add sugar if desired.
- Best if you can let this sit for a hour or two. Reheat slowly, adding meatballs if desired.
