This recipe was shared with me by a special friend in Atlanta, GA. It has long been a favorite, and everyone who tastes it says it is the best they have ever had.

1 (1 pound) sweet potato
½ cup butter, softened
1 cup white sugar
½ cup milk
2 eggs
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Steps:

  • Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
  • Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
  • Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

2 medium sweet potatoes, boiled, peeled and mashed
1 cup firmly packed dark brown sugar
1/2 cup sweetened condensed milk
1/4 cup (1/2 stick) butter or margarine, melted
2 Tbsp. flour
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 eggs, slightly beaten
1 tsp. vanilla
1-1/2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Preheat oven to 400°F. Mix sweet potatoes, sugar, milk, butter, flour, spices, eggs and vanilla in large bowl until blended.
  • Pour into pastry shell. (Shell will be quite full; filling will not rise over sides.)
  • Bake 30 to 35 minutes or until top is puffed and browned. (Filling will be soft, but will set while cooling.) Cool on wire rack at least 2 hours. Serve each slice with 2 tablespoons whipped topping.

1 1/2 cups canned sweet potatoes or 2 to 3 roasted, peeled and pureed sweet potatoes
3/4 cup sugar
2 large eggs
4 tablespoons (1/2 stick) butter, softened
1/4 cup milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch salt
1 unbaked 9-inch pie shell, homemade or store-bought

Steps:

  • Preheat the oven to 300 degrees F.
  • In the bowl of an electric mixer, combine the sweet potatoes and 1/2 cup of the sugar, as well as the eggs, butter, milk, vanilla, cinnamon, nutmeg and salt. Beat until thoroughly blended and smooth. Pour the mixture into the pie shell and sprinkle with the remaining 1/4 cup sugar. Allow the pie to stand for 15 minutes before baking to allow the sugar to melt.
  • Bake until a toothpick inserted in the center comes out clean, about 1 hour. Cool before serving.

4 medium sweet potatoes
1/2 stick butter, softened
1/4 cup sugar

1 teaspoon pure vanilla extract

1/8 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°F. Bake sweet potatoes for 1 hour in the oven on a baking sheet. When done, let cool. Scrape the pulp out of the skin, transfer to a large bowl, and mash. Set aside. In a medium bowl, beat together butter, sugar, and brown sugar until creamy. Add eggs, vanilla, cinnamon, ginger, nutmeg, allspice and salt. Add evaporated milk and stir mixture into sweet potatoes. Beat together with mixer until smooth and pour into an unbaked pie shell. Bake on bottom rack of oven for 1 hour or until center of pie is firm. Serve warm. Add dollop of whipped cream if desired. The Pink Tea Cup is a soul food restaurant that has been in Greenwich Village for more than five decades. I was sad to read recently that Greenwich Village is going to lose a little bit of its soul because the Pink Tea Cup has announced it is closing. Third-generation owner Lisa Ford said the eatery will close Jan. 3, 2010 because of a weak economy and rising costs. Ford began working at the restaurant after graduating from college 20 years ago. Her great-aunt, Florida native Mary Raye, opened The Pink Tea Cup in 1954. The restaurant, which seats 42 people, is painted pink inside and out, and is known for its fried chicken, smothered pork chops and catfish. Ford said business has been declining since the Sept. 11 attacks. One of their famous desserts is their Sweet Potato Pie. I had clipped the recipe for this delight some 25 years ago. I am now posting it here for posterity, since it won't be available to enjoy at the restaurant.

2 lbs yams, peeled and cut into chunks
1/2 cup butter
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt

3 large eggs, separated
1/2 cup orange juice
1 tablespoon grated orange rind
1/2 cup evaporated milk
1 unbaked pie shell
whipped cream

Steps:

  • Peel and boil yams until mashable.
  • Preheat oven to 450°F Add butter, spices, salt, and sugars to hot yams. Beat until light and smooth.
  • Beat egg yolks until light and add to mixture. Stir in orange juice, rind, and milk.
  • Beat egg whites until stiff and fold into egg yolk mixture. Pour mixture into unbaked pie shell.
  • Bake at 450°F for 10 minutes, reduce heat to 350°F and bake for 30 minutes, or until pie puffs up and is firm in the middle.
  • Cool on rack, and add whipped cream, if desired.

Steps:

  • Cook the sweet potatoes in a large pot of boiling water until fork-tender, about 25-30 minutes. Drain and let cool completely.
  • Preheat the oven to 365˚F (185˚C).
  • Peel the sweet potatoes, then transfer to a large bowl and mash thoroughly with an electric hand mixer or fork.
  • Add the melted butter, sugar, nutmeg, cinnamon, and salt. Beat to combine, then scrape down the sides of the bowl with a rubber spatula. Add the eggs, 1 at a time, beating to incorporate each addition. Add the self-rising flour, buttermilk, vanilla, and lemon extract, and beat to combine.
  • Divide the sweet potato filling between the frozen pie crusts and smooth the tops.
  • Bake for about 1 hour, until pies are set in the center. Cover the crusts with foil if it is getting too dark before the pies finish baking.

500g sweet potatoes
320g sheet of shortcrust pastry
125g butter
250g caster sugar
150ml whole milk
3 eggs
grating of nutmeg
½ tsp ground cinnamon
1 tsp vanilla bean paste

Steps:

  • Fill a large pan with boiling water from the kettle and set over a medium-high heat. Cook the whole, unpeeled sweet potatoes for 30 mins until very tender when pierced with the tip of a sharp knife. Drain well and leave to cool for 10 mins, then peel.
  • Heat the oven to 180C/160C fan/gas 4. Unravel the shortcrust pastry and use it to line a 23cm fluted tart tin. Line with baking parchment and fill with baking beans, then bake for 20 mins. Remove the parchment and beans and bake for another 5 mins.
  • Tip the peeled sweet potatoes into a large bowl with the butter and mash with a potato masher until completely smooth. Tip in the sugar, milk, eggs, spices and vanilla and whisk until everything is combined and smooth.
  • Tip the sweet potato filling into the pastry case, smoothing the top with a spatula. Bake for 50-55 mins until the pastry and the surface of the pie is golden and the middle is set. Leave to cool completely in the tin, then remove to a cake stand or serving plate and cut into slices to serve.

We especially love the technique of sprinkling the crust with brown sugar before adding the filling, which creates a layer of delectable syrup.

1 Pie Dough
All-purpose flour for dusting
8 tablespoons (1 stick) unsalted butter, melted, divided
3/4 cup packed light brown sugar, divided
Kosher salt
2 large orange-fleshed sweet potatoes (about 1 3/4 pounds)
1/2 cup granulated sugar
2 large eggs, lightly beaten
1/4 cup half-and-half
3/4 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg

Steps:

  • Prepare the pie shell:
  • Roll out prepared dough into a 13" round on a lightly floured surface. Roll dough loosely around rolling pin then carefully unfurl into 9" deep dish pie plate. Lightly press into plate. Leave 1" dough hanging over edge, trimming any excess dough. Tuck dough under itself, then crimp edge as desired. Cover with plastic wrap and chill while making filling, at least 30 minutes or overnight.
  • Put oven rack in middle position and preheat oven to 400°F.
  • Uncover pie shell, prick bottom with a fork, and brush bottom and sides with 1 Tbsp. melted butter, leaving edge unbuttered. Sprinkle 1/4 cup brown sugar over bottom. Bake until pie dough is set and just beginning to brown, about 15 minutes. Cool completely in pan on rack, about 30 minutes. Reduce oven temperature to 350°F.
  • Make the filling:
  • Bring a large pot of lightly salted water to a boil over high heat. Add sweet potatoes and reduce heat to medium. Simmer until sweet potatoes are tender, 35-40 minutes. Drain, rinse under cold water, and peel.
  • Transfer sweet potatoes to food processor and mix to form a very smooth purée. Measure purée, then return 2 1/2 cups to food processor (reserve any remaining purée for another use). Add granulated sugar, eggs, half-and-half, cinnamon, nutmeg, and remaining 7 Tbsp. butter and 1/2 cup brown sugar. Mix until smooth. Spread filling into prepared pie shell, smoothing the top.Place pie pan on a baking sheet and place in oven. Bake until crust is lightly golden and filling is almost set with a slight jiggle in center, about 1 hour. Cool completely on a wire rack. Cover and refrigerate until ready to serve.Pie is best eaten the same day but can be baked 1 day ahead and cooled completely, then chilled, covered. Bring to room temperature before serving.
