Amazing potatoes that are easy and don't require a lot of ingredients. Using I Can't Believe It's Not Butter!® Light not only makes the potatoes really soft and yummy it also cuts the calories and fat in half.

12 small red potatoes, quartered
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
1 pinch dried oregano, or to taste
½ cup light butter-flavored spread (such as I Can't Believe It's Not Butter ® Light)

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Spray four sheets of aluminum foil with cooking spray.
  • Divide potatoes evenly among the sheets of aluminum foil; season with salt, pepper, garlic powder, and oregano. Place 2 tablespoons of the butter flavored spread over each mound of potatoes. Create packets by folding and sealing the aluminum foil. Place the foil packets on a baking sheet.
  • Bake in the preheated oven until potatoes are tender and easily pierced with a fork, 55 minutes to 1 hour. Drain melted butter-flavored spread before serving.

1 cup chopped onion
2 tablespoons butter
1/2 teaspoon salt

  • On two pieces of heavy-duty foil (about 18 in. x 18 in.), divide potatoes, onion, butter, salt and pepper. Fold foil around potato mixture; seal tightly. Cook on a covered grill over medium heat for 20-30 minutes or until potatoes are tender.

My family, especially my husband, loves lots of flavor with his potatoes. We were getting bored with the same old baked potatoes. So we started doing this with them and they are fantastic. I put measurements for the seasonings, but I always just use a pinch or two of them. It's all according to taste.

4 potatoes, washed and patted dry
4 tablespoons butter, divided
1 onion, sliced
1/2 lb fresh mushrooms, sliced
1 teaspoon garlic salt, divided
1 teaspoon thyme, divided

Steps:

  • Preheat oven to 350 degrees.
  • Cut 4 pieces of tinfoil big enough to wrap everything up.
  • Slice one potato into thin slices and place on a piece of tinfoil.
  • Top with some sliced mushrooms and onions, to your taste.
  • Sprinkle with a pinch of garlic salt and thyme.
  • Top with 1 tbs butter.
  • Wrap tinfoil tightly around.
  • Repeat with remaining potatoes.
  • Place potato packets in oven.
  • Bake 30-40 minutes or until potatoes are tender.

3 tablespoons water
2 bacon strips, diced
1 small onion, thinly sliced
4 ounces process cheese (Velveeta), cubed

Steps:

  • Place potatoes and water in a microwave-safe bowl. Cover and microwave on high for 2-3 minutes or until almost tender. Meanwhile, in a small skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain., Drain potatoes. On a double thickness of greased heavy-duty foil (about 18 in. square), layer half of the potatoes, bacon, onion, cheese and butter. Repeat layers., Fold foil around potato mixture and seal tightly. 1 sheet aluminum foil (18X24 heavy duty)
1 small onion, sliced
4 medium red potatoes, cut in bite size pieces
2 tablespoons olive oil
1 teaspoon season salt
1/2 teaspoon dried dill
1/4 teaspoon pepper

Steps:

  • Preheat oven to 450* or preheat grill to medium high. Spray foil with nonstick cooking spray.
  • Center sliced onions on sheet of heavy duty aluminum foil. Layer potatoes evenly on top of onion. Drizzle with oil. Sprinkle with seasonings.
  • Bring up sides of foil and double fold. Double fold ends to form one large packet, leaving room for heat circulation inside packet.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
