1 egg
¼ cup finely chopped celery
¼ cup sliced green onion
1 tablespoon chopped fresh dill weed
½ teaspoon garlic powder
⅓ cup wheat germ
3 tablespoons olive oil

Steps:

  • In a medium bowl, mix together the salmon, egg, celery, green onion, dill, and garlic powder. Form the mixture into golf ball sized balls, and roll in wheat germ to coat.
  • Heat oil in a large skillet over medium heat. Flatten the balls slightly, and fry for about 10 minutes, turning as needed, until golden brown.

2 large carrots, peeled, diced and roasted until golden brown
1/2 cup ground matzoh meal (or grind your own matzoh)
1/4 cup chopped parsley or dill
2 tbsp mustard (use your favorite: grainy, spicy, honey, etc.)*
2 eggs
1/2 cup diced onion
2 garlic cloves, minced
Salt and pepper to taste
Olive oil for brushing baking sheet and croquettes
Red pepper flakes (optional)

Steps:

  • 1. Preheat oven to 425 degrees and place baking sheet inside to pre-heat with the oven 2. Sauté onions and garlic over medium heat until translucent and cooked through 3. In a large bowl mix to combine salmon, roasted carrots, egg, matzoh meal, herbs, onion and garlic mixture, and mustard 4. Sprinkle with a pinch of salt and pepper 5. Remove baking sheet from oven and grease with olive oil 6. Form salmon mixture into small patties or croquette shapes and place on greased baking sheet 7. Brush croquettes with olive oil 8. Bake for 4-6 minutes or until a brown crust forms on one side, flip and cook another 2 minutes 9. 1 large egg (whisked)
1 clove garlic (minced)
1 cup panko bread crumbs
2 tablespoons fresh chives (minced)

1 tablespoon fresh parsley (minced)
1 tablespoon creamy Dijon mustard

Steps:

¼ cup minced onion
1 cup all-purpose flour
¼ teaspoon salt
1 cup milk
1 (16 ounce) can salmon, drained and bones removed
2 cups cornflake crumbs, or more as needed
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Melt butter in a saucepan over medium heat. Add minced onion; cook and stir until translucent, 3 to 5 minutes. Stir in flour and salt until combined. Add milk and stir until mixture is thickened, 2 to 3 minutes.

2 eggs
1/4 cup all-purpose flour
1 onion, chopped
1 teaspoon black pepper
1/2 teaspoon seasoning salt
1 cup cornmeal
Nonstick cooking spray

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix all of the ingredients, except cornmeal, in a large bowl. Using your hands, form the salmon mixture into small balls, and then roll the balls in cornmeal. Spray a cookie sheet with nonstick spray, arrange the balls on the cookie sheet, and flatten each ball on the surface.
  • Bake for 25 minutes or until browned. Serve hot.

My DH is not a fan of any fish that is not deep fried, or of Salmon, I had to find something that he would like and would fit into his diet! I combined an oven fried eggplant method into this and he loved it!

7 1/2 ounces pink salmon (1 can)
1/4 cup seasoned bread crumbs (more if needed)
1 large egg, beaten
1 1/2 tablespoons mayonnaise

1/2 teaspoon lemon pepper
1/8 teaspoon pepper
mayonnaise, as needed
1/2 cup panko breadcrumbs

  • Mix Salmon, and first 8 ingredients together, use large egg, if seems dry, add mayo untill it seems moist enough form into 4 patties and refrigerate for at least 1 hour, to firm. Mix rest of dry ingredients in a bowl. When oven is hot, spread patties with mayonaise, one side at a time, place in panko mixture, to absorb as much as possible, repeat with other side, place on cookie sheet sprayed with cooking spray and bake in 425 degree oven for 10 min., turn patties over and cook for 10 minutes more, checking to see if they are done to your likeness. Oven fries or sweet potato fries can be done at the same time and go great with this!

2 russet potatoes (about 1 1/4 pounds), peeled and cut into 1-inch cubes
Kosher salt (we use Diamond Crystal) and freshly ground pepper
2 large eggs, plus 2 large yolks
1/4 cup chopped scallion greens (whites reserved for another use)
1 teaspoon grated lemon zest, plus 1 tablespoon fresh juice
3 tablespoons unbleached all-purpose flour
7 1/2 ounces red salmon (1 tin), drained and flaked, any skin and bones removed and discarded, or cold-smoked salmon
1 1/2 cups panko breadcrumbs
Vegetable oil, such as safflower, for frying
Flaky sea salt, such as Jacobsen
Zesty Tomato and Curried-Sour-Cream Dipping Sauces, for serving

Steps:

  • In a saucepan, combine potatoes and enough cold water to fully submerge them. Bring to a boil. Season with 2 teaspoons kosher salt and boil until potatoes are easily pierced with the tip of a knife, 10 to 12 minutes. Drain; let potatoes cool 5 minutes, then press through a ricer or colander and stir until smooth (or mash until smooth). Transfer to a large bowl; let cool completely.
  • Stir egg yolks, scallions, lemon zest and juice, flour, 2 teaspoons kosher salt, and 1/4 teaspoon pepper into mashed potatoes. Fold in salmon. Form mixture into golf-ball-size rounds, then flatten into 1/2-inch-thick disks. Transfer to a parchment-lined tray and refrigerate until cold, at least 2 hours or, loosely covered, up to 1 day.
  • Whisk whole eggs in a shallow bowl and season with kosher salt and pepper. Place panko in another shallow bowl and season. Pour a scant 1/2 inch oil into a medium heavy-bottomed skillet, such as cast iron. Heat over medium until oil shimmers and bubbles form instantly around a breadcrumb dropped in (350°F on a deep-fry thermometer). Working in batches, dip croquettes in egg, allowing excess to drip back into bowl, then coat in panko, pressing to adhere.
  • Fry, flipping once and adjusting heat as needed to maintain a level temperature, until crisp and golden brown, about 5 minutes. Drain on a wire rack set over a rimmed baking sheet, then sprinkle with flaky salt; keep warm in a preheated 200°F oven while frying the rest. Serve warm, with dipping sauces.

1 stalk celery, chopped

1 jar (15 oz.) CLASSICO Four Cheese Alfredo Pasta Sauce, divided
40 saltine crackers (about 1 sleeve), crushed, divided
1 large cucumber, cut into 24 slices

Steps:

  • Heat oven to 400°F.
  • Mix egg, salmon, celery, onions, 1/2 cup pasta sauce and 1/4 cup cracker crumbs until blended. Refrigerate 15 min.

Made from simple ingredients, they're also a great use of leftovers, putting to work those halves of onion and bell pepper from last night's dinner, and any remaining salmon, though you can also use canned (boneless works best). The filling may be a little delicate when you put it together, but a quick pop in the fridge or freezer makes it easier to work with. Serve the croquettes alone as an appetizer with tartar sauce or hot sauce, or make them a bigger meal alongside grits.

  • Heat olive oil in a large sauté pan over medium and sauté peppers and onions until translucent, 3 to 5 minutes. Add garlic and sauté for another 30 seconds; let cool slightly.
  • Add the sautéed veggies to the bowl with the salmon, along with 1 egg, 1/4 cup flour, the parsley, seafood seasoning, hot sauce, salt and pepper. Chill the mixture in the refrigerator for 20 minutes, or pop into the freezer for 5 to 10 minutes.
  • Using your hands, shape the chilled mixture into 1-inch-thick patties.
  • Set up three separate plates or shallow bowls: one filled with the remaining 1/4 cup flour, another with the egg and a third with the panko. Season the panko with the seasoning of your choice, then lightly dip each croquette into the flour, egg then panko, coating to cover. Set the croquettes aside.
  • Wipe out the same pan, and heat about 1/4 cup vegetable or canola oil over medium. Drop a bread crumb in the oil, and see if it sizzles.
  • Gently place croquettes in oil, making sure not to crowd the pan, and pan fry until golden brown on both sides, about 3 to 5 minutes per side.
  • Transfer to a paper towel-lined plate and serve warm, with tartar sauce or hot sauce if desired.
