I found these in the news paper about 25 years ago and just found the recipe again. As I recall they were quite tastey! Give em a try!

1 (15 1/2 ounce) can salmon
1/4 cup breadcrumbs
1/4 cup diced green onion
1 tablespoon lemon juice
1 tablespoon mayonnaise
1/2 teaspoon dill weed
1/4 teaspoon garlic powder

Steps:

  • Drain salmon.
  • Combine with next six ingredients.
  • Form into 25 balls.
  • Place on greased cookie sheet.
  • Bake in preheated 350 degree oven for 20 minutes.
  • Serve as an appetizer w/tartar sauce or as an entree.

Baked Salmon & Rice Balls image

This is something my mom used to make when I was growing up. It's easy, inexpensive and filling! I always make sure my canned salmon is "wild caught" for a healthier fish. I also like to leave the bones in for the calcium - just crush them up between your fingers (they are really soft) as you come across them when you are mixing everything with your hands. This is a nice recipe to have children help out with and they love to get their hands messy and be able to eat what they "made" for dinner. Goes nicely with a side of cooked green peas.

1/2 cup white rice, uncooked
2 (14 3/4 ounce) cans salmon, drained
1/2 cup carrot, grated (optional)
1/4 cup onion, chopped
2 eggs
salt and pepper
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup water

Steps:

  • Oil an 11x9 pan with cooking spray and set aside.
  • Cook the rice according to package directions and set aside to cool.
  • Remove the skin from the canned salmon (and the bones if you prefer).
  • Put the salmon, cooled rice, carrots, onions and eggs in a large bowl.
  • Add salt and pepper and mix everything together with your hands. When I come across a bone I simply crush it between my thumb and forefinger.
  • Form mixture into 8 tennis-sized balls, about 3/4 c mixture for each ball.
  • Arrange balls in the prepared pan and allow room for them to expand as they cook.
  • Mix the soup and water together well and pour over the balls.
  • Cover with foil and bake in 350 oven for 1 hour.
  • Allow the salmon balls to rest for a few minutes before serving.

2 tablespoons cracked coriander seed
1 tablespoon packed brown sugar
1 teaspoon lemon-pepper seasoning
1 (1 pound) fillet fresh salmon
1 tablespoon melted butter
2 cups cooked white or brown rice
1 mango, peeled, pitted and diced
1 tablespoon finely chopped fresh cilantro
1 teaspoon grated fresh lemon peel

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a shallow 9x13 baking dish.
  • Combine the coriander seed, brown sugar, and lemon-pepper seasoning in a small bowl, and blend well.
  • Place the salmon fillet skin side down in the prepared baking dish. Brush top and sides of fillet with the butter. Sprinkle the fish evenly with the coriander spice mixture, gently pressing it into the fish.
  • Stir the mango, cilantro, and lemon peel into the rice. Spoon the rice mixture around the fish in the baking dish.
  • Bake in preheated oven until fish flakes easily when tested with a fork, 4 to 6 minutes per 1/2 inch thickness. Cut the fish into 4 pieces. Divide rice between 4 serving plates and place the fish on top.

How to Make Japanese Rice Balls (Onigiri) image

This is a recipe for Japanese rice balls. You can put almost any type of filling inside the rice, or even use fried rice! Most popular fillings in Japan are bonito flakes with soy sauce and pickled plums, but you can use anything available to you.

¾ cup short-grain rice
1 cup water
1 teaspoon salt
4 ounces cooked salmon, flaked
1 teaspoon soy sauce, or to taste
½ sheet nori (dry seaweed)

Steps:

  • Pour rice into a bowl and rinse under running water. Give it a good scrubbing with your hands; rinse off the starch and drain.
  • Place rice in a small pot with water and salt. Cover with a tight-fitting lid and turn the burner to high. Cook for 2 minutes, then reduce heat to low and cook for 20 minutes. Turn off the heat and let sit with the lid on to fully absorb the moisture for 10 minutes. Transfer rice to a cutting board to cool slightly.
  • Season flaked salmon with soy sauce.
  • Flatten cooled rice into a rectangle and divide into 6 portions. Place a portion of salmon on top of each section of rice. Wet your hands and pick up a section of rice. Gently cup the rice around the filling; keep cupping until filling is completely covered and you've formed a ball. Mold the rice ball into a triangle shape by placing the bottom on one palm and flattening the back with your fingers. Bend the other hand and press the rice into a triangle on your palm, flattening the front side if needed. Place a strip of nori on the bottom of the onigiri to make it easier to pick up.
  • Repeat to make remaining rice balls, wetting your hands as necessary to prevent the rice from sticking.
