My husband and I just kind of 'winged-it' last night creating a new salmon recipe and it was soooo delicious. I hope you like it.

1 large lemon
1 blood orange
1 navel orange
¼ cup brown sugar
2 (8 ounce) salmon fillets
1 pinch salt
1 pinch ground black pepper
1 pinch garlic salt
¼ cup champagne, or more to taste
1 pinch fresh dill, or more to taste

Steps:

  • Cut the lemon, blood orange, and naval orange into halves. Cut 1 half into slices and juice the other half of each.
  • Whisk lemon juice, blood orange juice, and navel orange juice together in a bowl with the brown sugar until dissolved.
  • Season salmon fillets with salt, pepper, and garlic salt. Poke holes into each fillet about 2 inches apart using a fork. Place salmon in a resealable plastic bag and pour juice marinade into bag; coat with the marinade, squeeze out excess air, and seal the bag. Marinate salmon in the refrigerator, at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place salmon, skin-side down, into a baking dish. Drizzle marinade and champagne over salmon and sprinkle with dill. Arrange lemon, blood orange, and navel orange slices over salmon.
  • Bake in the preheated oven until salmon is cooked through and flakes easily with a fork, about 20 minutes.

1 lb fingerling potatoes, halved ( or sub-mini potatoes)
2 tablespoons olive oil
3 shallots, cut into thick wedges
1 1/2 cups kumquats, halved ( or sub 2 tangerines, mandarins, Meyer lemons, thinly sliced)
generous pinch salt and pepper
1 lb wild salmon - skinless, and portioned into 4, 4-ounce pieces
a few thyme sprigs
2 tablespoons olive oil
1 tablespoon honey
2 garlic cloves, finely minced ( use a garlic press)
zest from one orange, divided
juice from one orange, divided
1 teaspoon kosher salt
1/2 teaspoon cracked pepper
1/4 teaspoon cayenne

Steps:

  • Preheat oven to 425F (you will turn this down later in recipe)
  • Place potatoes, shallots, and citrus on a parchment-lined baking sheet and drizzle with olive oil and sprinkle with salt and pepper. Toss to coat well and spread out. Bake 20-25 minutes, or until potatoes are fork-tender.
  • While the potatoes are roasting, make the citrus marinade. Stir the olive oil, honey, garlic, 1/2 of the orange zest, 2 tablespoons of the orange juice, salt, pepper and cayenne in a small bowl. Place the salmon in a shallow bowl and pour the marinade over top, turning salmon to coat all sides. Leave on the counter.
  • When the potatoes are fork-tender, lower heat to 375F .give them a quick toss and nestle the salmon in between the potatoes, drizzling any remaining marinade over the salmon filets. Scatter with a few thyme sprigs and bake until salmon is cooked to desired doneness (8-12 minutes, depending on thickness or the filets). If you have a broiler in your oven, broiling the salmon for the last few minutes adds beautiful color.
  • Garnish with remaining orange zest, thyme and a squeeze of orange juice to taste.
  • Serve with the Everyday Kale Salad!

1 orange slice, cut into 4 wedges

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan with cooking parchment paper or foil. In small bowl, grate lime peel. Squeeze enough juice to equal 2 tablespoons; add to peel in bowl. Grate orange peel into bowl. Squeeze enough juice to equal 2 tablespoons; add to peel mixture. Stir in agave syrup, salt, pepper and garlic. In small cup, measure 1/4 cup citrus mixture for salmon (reserve remaining citrus mixture).
  • On pan, place salmon fillets, skin-side down. Using 1/4 cup citrus mixture, brush tops and sides of salmon. Bake 13 to 17 minutes or until fish flakes easily with fork. Lift salmon pieces from skin with metal spatula onto serving plate. Sprinkle with green onions. Top each fish fillet with lime and orange wedges. Serve each fillet with 3 tablespoons reserved sauce.

This is great on grill, but works equally well in the oven. If you can't find the garlic butter, you can always make your own by combining garlic powder with butter or margarine. I use one large salmon filet, which is usually between 2-3 lbs. The salmon filet and the Tones Citrus Grill can be found at Sam's Club.

4 slices fresh lemon
4 slices fresh orange
4 (6 to 8-ounce) skinless salmon fillets
Sea salt and freshly ground black pepper
2 tablespoons freshly chopped dill
2 tablespoons sun-dried tomatoes in oil, plus 1 tablespoon oil from jar
2/3 cup white wine

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large 9 by 13 shallow baking dish place 1 lemon slice with 1 orange slice side by side so you'll end up with 4 groups. Each salmon fillet will have its own bed of citrus. Season each fillet with salt and pepper then place each salmon fillet over the 2 slices of lemon and orange. In a small bowl mix the dill, sun-dried tomatoes and tomato oil. Divide mixture on top of the salmon fillet, then drizzle with the wine. Place the baking dish in the oven and cook for 8 to 10 minutes.

  • Set a rack in the center of the oven and heat the oven to 425 degrees.
  • In a medium bowl, combine the olive oil, clementine or mandarin juice, lime juice, cilantro, shallot and garlic; set aside citrus sauce.
  • Scrub the potatoes and slice them into ¼-inch-thick rounds. In a large (12-inch) cast-iron skillet (or similar oven-safe pan), fan out the potato rounds, overlapping them a little, to cover the surface of the skillet.
