- Preheat oven to 450 degrees. Combine yogurt, mustard, dill, and parsley; season with salt and pepper. Place salmon, skin side down, on a rimmed baking sheet. Spread yogurt mixture on salmon.
- Roast until opaque throughout, 15 to 20 minutes (8 minutes for fillets). Sprinkle with dill sprigs and serve warm or at room temperature with lemon wedges.

HERB-AND-YOGURT BAKED WHOLE SALMON FILLET
A creamy, tangy, herb-infused yogurt sauce pairs beautifully with salmon and citrus in this easy-yet-impressive meal. The yogurt sauce, a light take on creamy Green Goddess dressing, mellows when baked and the herbs infuse the fish with flavour. If you don't want to pull out your food processor to make the yogurt sauce, you'll need to finely chop the herbs, then just whisk the sauce ingredients together in a bowl. Feel free to substitute any variety of fresh herbs that you like. Rosemary, thyme, and oregano are all good choices.

- Preheat oven to 400°F.
- In a food processor, puree yogurt, herbs, lemon juice and salt (herbs can be finely processed or left a little chunky).
- Place salmon, skin-side down, on a foil-lined baking sheet (or use a baking sheet coated with cooking spray). Spread a thick layer of yogurt sauce over salmon; bake until salmon is cooked through, 18 to 20 minutes.
- Transfer salmon to a serving platter; garnish with extra herbs, ground pepper and lemon wedges.

BAKED SALMON WITH HERBED YOGURT
This elegant dinner is fit for guests but very easy to make. You can even prepare it ahead of time and serve it cold!

- Preheat oven to 325 degrees F, and line a baking sheet with parchment paper. (If you have a toaster oven, you can use that instead of heating up your large oven!)
- Place salmon on parchment skin side down. Drizzle fish with olive oil, and sprinkle with salt, pepper, and oregano. Rub oil in to evenly coat the fish, and bake in preheated oven for 25 minutes or until cooked through.
- Meanwhile, stir together juice from half the lemon, yogurt, and herbs. Season with salt and pepper to taste.
- Serve the salmon topped with the yogurt sauce or serve the sauce on the side. If desired, zest the lemon over the finished dish for color and an extra pop of lemon flavor.
YOGURT AND SPICE ROASTED SALMON
