Celebrate any occasion with this family-style salmon dinner that you can prep fast (just 5 minutes) and then roast in the oven, leaving you time to round out the meal.

1/2 cup Greek yogurt (2%)
2 tablespoons Dijon mustard
2 tablespoons finely chopped fresh dill, plus sprigs for serving
2 tablespoons finely chopped fresh parsley
Coarse salt and ground pepper
1 side of salmon (3 pounds) or 8 fillets (6 ounces each)
Lemon wedges, for serving

Steps:

  • Preheat oven to 450 degrees. Combine yogurt, mustard, dill, and parsley; season with salt and pepper. Place salmon, skin side down, on a rimmed baking sheet. Spread yogurt mixture on salmon.
  • Roast until opaque throughout, 15 to 20 minutes (8 minutes for fillets). Sprinkle with dill sprigs and serve warm or at room temperature with lemon wedges.

Herb-and-Yogurt Baked Whole Salmon Fillet image

A creamy, tangy, herb-infused yogurt sauce pairs beautifully with salmon and citrus in this easy-yet-impressive meal. The yogurt sauce, a light take on creamy Green Goddess dressing, mellows when baked and the herbs infuse the fish with flavour. If you don't want to pull out your food processor to make the yogurt sauce, you'll need to finely chop the herbs, then just whisk the sauce ingredients together in a bowl. Feel free to substitute any variety of fresh herbs that you like. Rosemary, thyme, and oregano are all good choices.

0.5 cup(s) Chives (125 ml), chopped fresh, (plus more for garnish)
0.5 cup(s) Fresh parsley (125 ml), packed, flatleaf
0.25 cup(s) Fresh basil (60 ml), packed fresh leaves
2 tbsp(s) Fresh tarragon (30 ml)
3 tbsp(s) Fresh lemon juice (45 ml)
0.5 tsp(s) Sea salt (2 ml)
2 pound(s) Uncooked farmed skinless salmon fillet(s) with skin is recommended
0.125 pinch Black pepper (0.5 ml) freshly ground (or to taste)
1 medium Lemon(s) cut into 8 wedges

Steps:

  • Preheat oven to 400°F.
  • In a food processor, puree yogurt, herbs, lemon juice and salt (herbs can be finely processed or left a little chunky).
  • Place salmon, skin-side down, on a foil-lined baking sheet (or use a baking sheet coated with cooking spray). Spread a thick layer of yogurt sauce over salmon; bake until salmon is cooked through, 18 to 20 minutes.
  • Transfer salmon to a serving platter; garnish with extra herbs, ground pepper and lemon wedges.
  • Serving size: 3 1/2 oz

Baked Salmon with Herbed Yogurt image

This elegant dinner is fit for guests but very easy to make. You can even prepare it ahead of time and serve it cold!

Number Of Ingredients 10

1 1/2 pound salmon fillet
2 teaspoons olive oil
kosher salt (to taste)
freshly ground black pepper (to taste)
1 teaspoon dried oregano
1/2 lemon
1/2 cup plain Greek yogurt
1 tablespoon chopped fresh mint leaves
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh basil

Steps:

  • Preheat oven to 325 degrees F, and line a baking sheet with parchment paper. (If you have a toaster oven, you can use that instead of heating up your large oven!)
  • Place salmon on parchment skin side down. Drizzle fish with olive oil, and sprinkle with salt, pepper, and oregano. Rub oil in to evenly coat the fish, and bake in preheated oven for 25 minutes or until cooked through.
  • Meanwhile, stir together juice from half the lemon, yogurt, and herbs. Season with salt and pepper to taste.
  • Serve the salmon topped with the yogurt sauce or serve the sauce on the side. If desired, zest the lemon over the finished dish for color and an extra pop of lemon flavor.

500g skinless salmon fillet, cut into 4cm cubes
For the marinade:
4 tablespoons Greek yogurt
1 tablespoon garlic granules
1 heaped tablespoon rose harissa
1 teaspoon ground turmeric
1 teaspoon paprika
Finely grated zest of 1 unwaxed lime and a good squeeze of juice
1 teaspoon olive oil
Generous amount of Maldon sea salt flakes and freshly ground black pepper
To serve:
Tortilla wraps
Sliced tomatoes
Finely sliced onion
Coriander leaves
Greek yogurt

Steps:

  • Preheat your oven to its highest setting (with fan if it has one). Line a baking tray with baking paper.
  • Mix all the marinade ingredients together in a mixing bowl. Add the salmon and turn until well coated in the marinade.
  • Spread the salmon out on the prepared baking tray and roast for 10 minutes until cooked through. Remove from the oven and serve immediately with tortilla wraps, tomatoes, finely sliced onion, coriander leaves and Greek yogurt.
