HOW TO COOK SAUSAGE PATTIES IN THE OVEN
Wonderful Breakfast Sausage fried in the OVEN without making a mess! Plus, make many at a time rather than cooking up 2 or 3 and splattering all over your stove! Come on, I'll show you how to cook sausage patties in the oven!

Steps:
- Preheat the oven to 350 degrees. Place a piece of parchment paper across the bottom of a rimmed baking sheet and press down into the corners.
- Remove the wrapping from the sausage. Cut into or shape into 2 oz patties (should make 8) and lay the patties onto the parchment lined baking sheet evenly spaced.
- Once the oven is preheated, place the baking sheet onto the middle rack of the oven and close the door.
- Bake for 10 minutes on one side and then flip using a spatula. Bake for another 3-6 minutes.
- Use a meat thermometer and the patties are done when they reach 165. The centers will be brown with no more pink.
- Drain the patties on a paper towel covered plate until ready to serve. Serve Hot.

- Set one oven rack to the middle position and another one 6 inches from the broiler. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and spray lightly with cooking spray.
- Combine ground pork, maple syrup, garlic, parsley, marjoram, salt, pepper, thyme, and paprika in a bowl; mix gently until well combined. Divide mixture into 6 equal portions and form into patties. Place on the prepared baking sheet and press down with the palm of your hand to flatten.
- Bake in the preheated oven on the middle rack for 8 minutes. Remove from oven and turn on the oven's broiler on low.
- Broil sausage patties on the top rack until they are golden brown, about 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Mix the pork, brown sugar, sage, thyme, ginger, cayenne, 1 1/2 teaspoons salt, 1 teaspoon black pepper and 2 tablespoons water in a large bowl. Form into 2-inch patties; transfer to a baking sheet, cover and refrigerate at least 1 hour or overnight.
- Preheat the oven to 300 degrees F. Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat; add half the sausage patties and cook, flipping once, until browned, about 5 minutes. Transfer to a baking sheet. Add the remaining 1 tablespoon vegetable oil to the skillet and repeat with the remaining patties. Transfer the patties to the oven and bake until cooked through, 3 to 5 minutes.
HOMEMADE SAUSAGE PATTIES

- In a small saute pan, cook the bacon over medium heat until rendered but not crispy, about 3 minutes. Add 1 tablespoon vegetable oil and onions, and cook until the onions are soft and begin to turn golden in color, about 3 more minutes. Add the minced garlic and cook an additional 1 minute, or until fragrant. Remove the pan from the heat, and set aside.
- In a medium bowl, use a fork to mix together the bread crumbs, brown sugar, thyme, cayenne pepper, and salt, and pepper. Add the ground pork, egg yolk, and bacon and onion mixture to the bread crumbs, and gently mix with your hands until just combined. Do not over mix. Divide the mixture into 8 even portions and form into patties, pressing a small thumb indentation in the middle of each so they stay flat when they cook. In a large saute pan, heat 1 tablespoon vegetable oil over medium-high heat. Add the sausage patties and brown on both sides, about 2 minutes per side. Add a tablespoon of water and cover the pan for 3 minutes, or until the sausage is fully cooked. Serve hot.

- In a large bowl, combine the first 9 ingredients. Add pork; mix lightly but thoroughly. Shape into twenty 3-in. patties., In a large skillet coated with cooking spray, cook patties in batches over medium heat until a thermometer reads 160°, 5-6 minutes on each side. Remove to paper towels to drain. Freeze option: Wrap each cooked, cooled patty; transfer to an airtight container. May be frozen for up to 3 months. To use, unwrap patties and place on a baking sheet coated with cooking spray. Bake at 350° until heated through, about 15 minutes on each side.

- Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
- To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
- Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.
SUPER EASY: BAKING SAUSAGE
My daughter taught me to cook bacon with no splatter or mess on the stove top, by baking it instead. So I decided to try baking breakfast link sausage the same way. I use a 10"x15" jelly roll pan or the bottom of a broiling pan. I buy parchment paper for baking in rolls in bulk online. I bake 3 pounds of maple breakfast link sausage at a time and freeze it in individual servings.

Steps:
- Preheat oven to 400 degrees F.
- Line a 10"x15" jelly roll pan with parchment paper for cooking/baking.
- Place one package of sausage links in the jelly roll pan flat on top of the parchment paper in a single layer.
- When the oven comes up to temperature, place the pan with the sausage on the middle shelf of the oven and bake for 15 minutes.
- When the time goes off remove the sausage from the oven and rotate them to the other side.
- Place them back in the oven for another 10 minutes or until sausage is thoroughly cooked through.
- Remove finished sausage to paper towels or brown paper and blot excess grease off of the links with paper towels.
- Repeat process until entire 3-pounds of sausage is cooked.
- Freeze in portion sized bags.
- Afterward, clean-up is a breeze. Wait for grease to cool and then throw away parchment paper.

- In a large bowl, combine the first six ingredients. Crumble sausage over mixture and mix well. Shape into six patties. , In a large skillet, cook patties over medium heat for 6 minutes on each side or until meat is no longer pink, turning occasionally. Freeze option: Prepare uncooked patties and freeze, covered, on a plastic wrap-lined baking sheet until firm. Transfer patties to a resealable plastic bag; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.

- Preheat the oven to 400F and move the oven rack to the center position.
- For easy clean-up, cover a baking sheet with parchment paper or foil.
- Place the sausage patties in a single layer on the baking sheet leaving space in between the patties.
- Bake the sausage patties for a total of 18+ minutes, flipping them over around half-way through cooking (after 8-9 minutes).
- Cook the sausage until the internal temperature reaches at least 160F+, which is easy to test with a digital cooking thermometer. Enjoy!
