4 jalapeno peppers, stemmed
4 cloves garlic, peeled
1 ½ teaspoons cracked black pepper
1 tablespoon coarse salt
¼ cup lime juice
1 tablespoon dried oregano
1 ½ pounds top sirloin steak

Steps:

  • Combine jalapenos, garlic, pepper, salt, lime juice and oregano in a blender. Blend until smooth.
  • Place steak in a shallow pan or large resealable plastic bag. Pour jalapeno marinade over the steak, and turn to coat. Cover pan or seal bag; marinate in the refrigerator 8 hours or overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grill grate.
  • Drain and discard marinade. Grill steak 5 minutes per side, or to desired doneness.

It's so thin he can cook it in steam coming off a skillet of sizzling onions, tomatoes and jalapeños.

1 medium onion, halved and sliced
2 medium Roma tomatoes, coarsely chopped
1 medium red bell pepper, cut into julienne strips

1 cup unsalted chicken broth
8 fresh bay leaves
1 pound shaved beefsteak

  • In each of 2 large skillets, heat 1 tablespoon of olive oil over medium-high heat and add half of the onion, tomatoes, bell pepper and chilies, season with salt and pepper, and cook, stirring, until slightly softened, about 2 minutes.
  • Add half of the broth and bay leaves to each skillet and bring to a simmer. Lay beef slices over top, season with salt and pepper and cook, turning beef once, until it loses its pink color, about 3 minutes total. Transfer meat to a platter or plates. Simmer pan juices until slightly thickened, 1 to 2 minutes. Spoon vegetables and juices over the beef and sprinkle with cilantro.

1 jalapeno, seeded and finely chopped
1 clove garlic, minced
1 bone-in rib-eye steak (about 1 1/2 pounds and 1 1/2 inches thick), room temperature
Kosher salt and freshly ground pepper
Vegetable oil, for grill
Flaky sea salt, such as Maldon
Peppery greens, such as upland cress or arugula, and thinly sliced onions, for serving

Steps:

  • Stir together butter, jalapeno, and garlic in a small bowl. Heat grill to medium-high, with an indirect-heat zone. Generously season both sides of steak with kosher salt and pepper. Lightly brush grates with oil.

1 chicken bouillon cube
1 tablespoon butter or 1 tablespoon oleo
1/4 cup evaporated milk
2 beef t-bone steaks, at room temp

Steps:

  • Grill, broil or pan fry steaks to your preference.
  • In a fry pan add butter chopped onion and chopped jalapeno (if less heat wanted seed and devein peppers) and cook for 1-2 minutes.
  • Add evaporated milk and chicken cube to pan and bring to boil stirring often.

1 tablespoon water
1/4 teaspoon salt
3 tablespoons extra-virgin olive oil
8 cups mixed salad greens
1 mango, cut into 1/4-inch slices
1/2 small avocado, cut lengthwise into 8 slices

1 shallot, very thinly sliced and separated into rings
2 tablespoons shaved firm Cotija cheese or Parmesan

Steps:

  • Preheat charcoal grill to medium heat.
  • Place the jalapeno peppers on grill over medium, ash-covered coals. Grill uncovered, for about 11 to 13 minutes or until evenly blistered and blackened. Place in a food-safe plastic bag; close bag. Let stand 10 to 15 minutes until skins are loosened.
  • Press black pepper evenly onto beef steaks. Place steaks on grill over medium, ash-covered coals. Grill, uncovered, 10 to 12 minutes for medium rare to medium doneness, turning occasionally. Remove from grill and let stand while preparing vinaigrette.
  • Meanwhile prepare Jalapeno Vinaigrette:
  • Remove and discard skins, seeds and membranes from jalapeno peppers. Place peppers, lime juice, cilantro, water and salt in food processor container. Cover and pulse on and off until combined. With motor running, slowly add oil through opening in cover, processing until well blended.
  • Arrange salad greens on serving platter. Fan the mango and avocado slices over greens.
  • Carve steaks into slices and season with salt, to taste. Arrange over salad. Top with shallots and drizzle with vinaigrette. Sprinkle with cheese.

1 teaspoon beef bouillon granules
¾ cup water
2 tablespoons cornstarch
¼ cup water
2 tablespoons red wine vinegar
2 tablespoons spaghetti sauce
1 tablespoon steak sauce
1 tablespoon salsa picante
1 tablespoon brown sugar
1 teaspoon ground ginger
1 tablespoon butter
1 teaspoon soy sauce
1 ½ pounds boneless beef sirloin steak, cut into serving size pieces
½ teaspoon garlic powder
½ teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground black pepper
1 onion, thinly sliced
4 mild yellow pepper rings, drained

Steps:

  • Bring the rice and 1 1/2 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Put the cooked rice into a large serving bowl.
  • While the rice cooks, bring beef bouillon and 3/4 cup water to a boil in a saucepan; cook until the bouillon dissolves completely. Whisk the cornstarch and 1/4 cup water together in a small bowl until smooth; stir the red wine vinegar, spaghetti sauce, steak sauce, salsa picante, brown sugar, and ginger into the cornstarch mixture; pour the resulting sauce into the bouillon and water. Simmer until hot, about 5 minutes.
  • Melt the butter with the soy sauce in a large skillet over medium heat; cook the beef in the melted butter mixture until it begins to brown, about 5 minutes. Pour the sauce from the saucepan into the skillet; season with the garlic powder, cinnamon, salt, and pepper.
