1 lb fresh tilapia fillet
1/2 cup white wine
1 -2 garlic clove, finely chopped
4 tablespoons freshly chopped mixed herbs
6 onions, diagonally sliced
salt & freshly ground black pepper
1/2 ounce butter
1 teaspoon cornstarch, blended with a little cold water
2 tablespoons creme fraiche

Steps:

  • Preheat oven to 350 degrees F.
  • Arrange the Tilapia side by side in a lightly oiled roasting tin or ovenproof dish.
  • Pour over the wine, then sprinkle over the chopped garlic, most of the herbs, the salad onions and seasoning to taste.
  • Place half the butter on each fish. Cover with a sheet of lightly oiled foil, seal in the fish.
  • Bake in a preheated oven 350 degrees F, for 30-35 minutes.
  • Transfer the Tilapia to a serving dish and keep warm.
  • Pour the juices into a pan, stir in the blended cornflour and simmer for 2 minutes.
  • Stir in the creme fraiche, pour over and serve immediately, sprinkled with the remaining herbs.

1 lb tilapia fillet (any mild white fish, ie -- sole, orange roughy, would also work)
1 tablespoon olive oil
1 large portabella mushroom, diced (or 4 oz. mushrooms)
1/2 yellow bell pepper, chopped
3 green onions, chopped
1/4 teaspoon salt or 1/4 teaspoon salt substitute
1/4 teaspoon paprika
1/2-1 teaspoon dried tarragon, crumbled
3 -4 tablespoons dry sherry

Steps:

  • Preheat oven to 450°F.
  • Spray a baking dish (about 11"X7") and arrange filets in a single layer.
  • Overlap slightly if necessary.
  • Sprinkle with salt and paprika; Set aside.
  • In a small skillet, heat olive oil; quickly saute portabello, green onion and yellow pepper, about 2-3 minutes.
  • Add sherry and tarragon, and simmer 2-3 minutes more.
  • If this mixture is very wet, simmer to reduce another minute or two.
  • Spoon contents of skillet over fish.
  • Bake@ 450F 20-30 minutes, depending on the thickness of your filets.

Coarse salt and ground pepper
3 tablespoons light mayonnaise
1/2 cup finely chopped parsley
2 tablespoons finely chopped fresh dill
Lemon wedges, for serving

Steps:

  • Preheat oven to 375 degrees. Place fillets on a rimmed baking sheet, flat side down; season generously with salt and pepper. Divide mayonnaise evenly over top of fillets; using a butter knife, spread, coating evenly.

2 8-oz Fresh tilapia gutted and descaled (up to 10 oz)
15 g Butter
1 Clove garlic finely chopped (up to 2)
6 onions, salad diagonally sliced
4 tb mixed herbs Freshly chopped

Steps:

  • Arrange the tilapia side by side in a lightly oiled roasting tine or ovenproof dish. Pour over the wine, sprinkle over the chopped garlic, most of the herbs, the salad onions and seasoning to taste. Place half the butter on each fish. Cover with a sheet of lightly oiled foil, seal in the fish then bake in a preheated oven 180?C/350F/Gas Mark 4 for 30-35 minutes. Transfer the tilapia to a serving dish and keep warm. Pour the juices into a pan, stir in the blended cornflour and simmer for 2 minutes. Stir in the creme fraiche, pour over the fish and serve immediately, sprinkled with the remaining herbs.

2 ea cloves garlic finely chopped
1/2 cup white wine
6 ea green onions diagonally sliced
1 tablespoon butter cut in small pieces
salt and pepper to taste
2 tablespoons creme fraiche substitute combine 1 tablespoon sour cream and 1 tablespoon whipping cream
1 teaspoon Corn starch blended with a little cold water
4 tablespoons freshly chopped mixed herbs (parsley, thyme, sage)

Steps:

  • Preheat oven 350 degrees. Arrange tilapia fillets side by side in a lightly oiled baking dish. Pour the wine over the fillets; sprinkle with chopped garlic, green onions and most of the herb mixture. Season with salt and pepper to taste. Dot each fillet with butter pieces. Cover with a sheet of lightly oiled foil. Bake at 350 degrees for 30 to 35 minutes. Transfer fillets to a serving dish and keep warm. Pour juices into saucepan. 4 tablespoons unsalted butter, softened
2 tablespoons chopped fresh tarragon or basil
8 ounces sliced mixed mushrooms (about 4 cups)
4 stalks celery, sliced
1 bunch scallions, sliced
Kosher salt and freshly ground pepper
4 6-ounce tilapia fillets

Steps:

  • Preheat the oven to 400 degrees F. In a small bowl, mix the butter and tarragon until combined; set aside.
  • Lay out 4 large pieces of foil. Layer the vegetables in the center of each piece of foil, starting with the mushrooms, then the celery and scallions. Dot the vegetables with some of the herb butter (use about half) and season each portion with 1/4 teaspoon salt, and pepper to taste. Lay the tilapia fillets over the vegetables; dot with the remaining herb butter. Sprinkle each fillet with 1/4 teaspoon salt, and pepper to taste.
  • Bring the foil ends together, fold over and crimp closed on all sides to make sealed packets. Place the packets on a baking sheet and bake until the fish is cooked through but still moist, 18 to 22 minutes. Remove the packets from the oven and let sit 2 minutes before opening. Transfer the fish and vegetables to plates and drizzle with the cooking juices.
