TURKEY AND PEPPER HOAGIES



Turkey and Pepper Hoagies image

Delicious turkey breast and veggie sandwiches - dinner ready in just 15 minutes!

1/2 cup fat-free mayonnaise or salad dressing
1 teaspoon Italian seasoning
1/2 lb smoked turkey breast slices, cut into strips
2 cups frozen bell pepper and onion stir-fry (from 1-lb bag)
4 hoagie buns (6 inch), split

Steps:

  • In small bowl, mix mayonnaise and Italian seasoning; set aside.
  • Heat 10-inch nonstick skillet over medium-high heat. Add turkey and bell pepper and onion stir-fry; cook and stir 1 minute. Cover; cook 2 minutes.
  • Meanwhile, spread about 1 tablespoon mayonnaise mixture on cut sides of buns.
  • Uncover skillet; cook and stir 1 to 3 minutes longer or until liquid evaporates and bell pepper is tender.
  • Spoon turkey mixture evenly onto bottom halves of buns. Cover with top halves of buns. Wrap each sandwich securely with foil; take with you for an on-the-go dinner.

1/4 cup sun-dried tomato spread
4 romaine leaves
8 ounces thinly sliced cooked turkey
8 very thin slices red onion
4 slices (1 ounce each) mozzarella cheese
1/4 cup sliced ripe olives

Steps:

  • Spread bottom halves of rolls with mayonnaise; spread top halves with tomato spread. For each sandwich, layer ingredients in this order: romaine, turkey, onion, cheese and olives.
  • Cut each sandwich in half. Serve immediately or wrap each sandwich in plastic wrap. Refrigerate until serving or up to 24 hours.

Steps:

  • Place opened roll onto a clean work surface. In a small bowl, combine olive oil, vinegar, and basil. Drizzle the vinegar mixture on the inside top half of the roll. 1 (1 pound) loaf unsliced French bread, cut in half horizontally
1 (18 ounce) can Progresso™ Recipe Starters™ creamy three cheese cooking sauce
4 teaspoons spicy brown mustard
3 cups shredded cooked turkey
1 medium red bell pepper, cut into rings
1 medium green bell pepper, cut into rings
6 slices Cheddar or Swiss cheese

Steps:

  • Heat oven to 375 degrees F. Place bread on piece of heavy-duty aluminum foil (28 to 30 inches long) on large ungreased cookie sheet.
  • In medium bowl, beat 1 cup of the cooking sauce and the mustard with whisk until smooth. (Reserve remaining cooking sauce.) Stir in turkey until well mixed. Top bottom half of bread evenly with turkey mixture. Alternate red and green bell pepper rings over turkey mixture; top evenly with cheese. Place top of bread on top. Wrap loaf loosely in foil.
  • Bake 25 to 30 minutes or until cheese is melted and sandwich is thoroughly heated. Heat remaining cooking sauce until hot; serve as dipping sauce as desired.

1/2 small onion, sliced into rings
1 garlic clove, chopped
1 tablespoon olive oil
4 slices turkey breast
blue cheese, a smear
hot pepper relish, Chopped
1/4 teaspoon dried thyme or 1/4 teaspoon summer savory
salt and pepper
1 hoagie roll

Steps:

  • In hot skillet (I use wok), add oil and then onion and garlic. Add pinch of salt and fresh ground pepper.
  • Add thyme or summer savory.
  • Saute until onions are brown.
  • Cut open hoagie roll and smear bleu cheese on one side. Add onion/garlic mixture on top of cheese. In the same wok (still hot), lay turkey slices around the sides long enough to heat. Turn and heat the other side. Pile turkey slices over onion/garlic mixture and top with pepper relish.
  • More ground black pepper if you like. Top with hoagie top and enjoy! Tip: This is a fairly pungent sandwich packed full of flavor.
  • A sprig of fresh parsley should take care of things afterwards.
