BAKED FISH WITH SHRIMP
Easy and delicious way to impress your family and guests with a recipe that's almost too simple! The fillets are covered with cooked shrimp and a simple white sauce. Grated Parmesan cheese is sprinkled over the top of this baked dish. Grouper, snapper, and catfish are all good choices for this recipe.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- In a small saucepan, melt butter over medium low heat. Whisk in flour and salt to make a paste. Gradually whisk in milk. Stirring constantly, cook until sauce is thick enough to coat the back of a spoon.
- Select a pan large enough to accommodate all the fillets in one layer. Coat with cooking spray. Arrange fish in pan, and cover with shrimp.. Pour white sauce over shrimp. Sprinkle with grated cheese.
- Bake, uncovered, for 20 to 25 minutes.

BAKED WHITING
Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place whiting fillets in a baking dish and add enough milk to cover the entire bottom of the dish. Season fillets with garlic powder, onion powder, paprika, and salt. Top each fillet with at least 3 pieces tomato. Add butter to each fillet. Squeeze 1 lemon half over each fillet.
- Bake in the preheated oven until fish flakes easily with a fork, 30 to 45 minutes.

WHITING WITH GARLIC AND LEMON
Steps:
- Clean and fillet fish. Remove heads and tails. In bowl, mix 3/4 cup oil, lemon juice, garlic, parsley, salt and pepper. Dredge fish in flour. In large saute pan, heat remaining oil. Saute fish until golden brown. Remove and pour lemon mixture over and cover. Let sit for 5 minutes and serve.
VAL'S SPICY BAKED SHRIMP
Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes.
- Transfer bacon to a paper-lined plate to drain, reserving bacon grease in the skillet. Dice the bacon once cooled enough to handle.
- Melt butter in the remaining bacon grease over medium heat. Cook and stir diced bacon, Dijon mustard, chili powder, red pepper flakes, basil, thyme, onion, and garlic until onion is tender, about 5 minutes.
- Stir wine and seafood seasoning into onion mixture; add shrimp and toss to coat.
- Pour shrimp and onion mixture into a 9x13-inch baking dish.
- Bake in the preheated oven until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 20 minutes.

SAUTéED WHITING WITH LEMON CREAM SAUCE

Steps:
- Cook shallots, lemon zest and wine in a saucepan over high heat until wine has nearly evaporated. Add crème fraîche and cook on medium-high, watching so it does not boil over, until cream has reduced by half. Season with salt and pepper and set aside.
- Heat oven to 200 degrees. Season bread crumbs with salt and pepper, and spread on a platter. Place fish in a shallow bowl and pour milk over them.
- Heat 1/4 cup oil in a large nonstick or well-seasoned cast-iron skillet over medium heat. Turn fish in milk then dip in crumbs, turning to coat all sides, and place in skillet. Repeat until half the fish are in the skillet. Cook, turning gently with tongs, until browned, cooked through and no longer pink at the bone, 10 to 15 minutes. Repeat with remaining fish and oil. (Or use 2 skillets at once.) Transfer whiting to a baking sheet and place in oven to keep warm.
- Gently reheat sauce and fold in chives. Serve alongside fish.

WHITING BAKED IN CHIPOTLE SAUCE

Steps:
- Take flour & mix with a couple of ounces of cold water to avoid clumping.
- Decide how hot you would like this dish to be. Chipotle Peppers & adobo sauce is pretty concentrated, so if you want dish to be mild, just add 1 or 2 peppers & a little sauce. If want to make dish inferno hot, then just add the whole 7oz can and get ready to breathe fire & brimstone.
- Add peppers into a food processor along with the evaporated milk, flour mix, salt, cumin, basil, onion, garlic, and lemon or lime juice. Mix everything together thoroughly. Set Aside.
- Sprinkle the Lemon Pepper Seasoning on fish fillets (both sides) and saute in the margarine just to season the fish for 5 minutes or so on each side. Don't worry about how raw the fish still is. It will get thoroughly baked in the oven.
- Take large baking dish and place fillets across bottom of dish. Now add the Chipotle sauce mix until the fish is totally submerged. Bake at 425 degrees for about 45 minutes COVERED with foil. The flour will cause the sauce to thicken into a delicious creamy Chipotle mix. Take it out and let it cool for 5 minutes or so on a rack.
- Serve hot with your favorite Spanish rice. Your going to like this very much ! Enjoy!

BAKED WHITING WITH BOK CHOY AND VERMOUTH
Whiting is a delicate and small ocean-going fish, with a white flakey consistency upon being cooked. It has more flavor than flounder, but is by no means a "heavy-tasting" fish. When I've found them locally, they're usually sold whole. You can get your fishmonger to de-gut and clean them, if you'd rather not do this yourself. I personally prefer the sesame oil to the canola oil, but tastes vary.

- Oil the baking pan with the canola or sesame oil and wipe off any excess.
- Lay lay down individual leaves from the bok choy.
- Place the whiting in the pan on top of the bok choy; presentation need not be formal.
- Splash with the Vermouth, and then the teriyaki sauce.
- Squeeze the lemon over the fish.
- Add ground pepper to taste.
- Bake in pre-heated 350 degree F oven for 10-12 minutes.
