A tasty, easy-to-make chicken dish -- my husband loves it. Sometimes I cut the chicken in strips,and serve over pasta.

⅓ cup balsamic vinegar
½ cup chicken broth
2 tablespoons white sugar
1 clove garlic, minced
1 teaspoon dried Italian herb seasoning
4 skinless, boneless chicken breast halves
1 tablespoon olive oil

Steps:

  • Whisk together the balsamic vinegar, chicken broth, sugar, garlic, and Italian seasoning in a bowl, place the chicken breasts in the marinade, and marinate for 10 minutes on each side.
  • Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade. Place the chicken in the heated pan and cook until they start to brown and are no longer pink inside, about 7 minutes per side. Pour the marinade into the skillet, and cook until it thickens slightly, turning the chicken breasts over once or twice, about 5 minutes.

¼ cup balsamic vinegar
¼ cup olive oil
¼ cup honey
½ teaspoon dried thyme
½ teaspoon dried rosemary
2 pounds bone-in chicken thighs, or more to taste
salt and pepper to taste

Steps:

  • Beat balsamic vinegar, olive oil, honey, thyme, and rosemary together in a bowl until smooth; pour marinade into a resealable plastic bag.
  • Season chicken thighs with salt and black pepper; add to marinade in plastic bag. Squeeze bag to remove air and seal. Marinate chicken in refrigerator for 2 to 8 hours.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour chicken and marinade into a baking dish.
  • Bake chicken in preheated oven until no longer pink at the bone and the juices run clear, 35 to 40 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

You'll love this baked balsamic chicken recipe -- it's so EASY! Balsamic glazed chicken needs just 6 simple ingredients and makes for a delicious dinner.

1 6-lb Whole chicken
3 tbsp Fresh thyme ((chopped))
2 medium Shallots ((minced))
1 tsp Sea salt
1 tsp Black pepper
1 medium Red onion ((chopped))
1/2 cup Chicken broth, reduced sodium
1/2 cup Balsamic vinegar

Steps:

  • Preheat the oven to 350 degrees F (176 degrees C).
  • Pat the chicken dry with paper towels.
  • In a small bowl, combine the thyme, shallots, salt, and pepper. Rub the mixture under the skin of the chicken.
  • Place the onions in a roasting pan (with a lid), then place the chicken on top, skin side up. Pour the broth and vinegar over the chicken. Cover the pan with a lid.
  • Bake balsamic chicken, covered, for 1 hour.
  • Remove the lid and bake for another hour, or until a meat thermometer inserted into the thickest part of the thigh reads at least 170 degrees F (76 degrees C).
  • Let the chicken rest for 15 minutes before carving.
  • Pour the onion balsamic sauce from the pan into a small bowl and skim off the fat. Serve with the chicken.

This is a quick and easy recipe that never fails to please even my picky DDs. Since chicken thighs are usually inexpensive it makes a economical meal. I like to serve these with some type of rice side dish and a green salad.

2 lbs skinless chicken thighs
salt and pepper, to taste
1/4 cup chopped shallot
1/4 cup balsamic vinegar
cooking spray

Steps:

  • Spray large frying pan, preheat.
  • Rinse and pat dry thighs.
  • Season with salt and pepper.
  • Brown well on all sides.
  • Cover, reduce heat to medium and cook for approximately 25 minutes,or'til thighs are done depending on size.
  • Add shallots,cook for 2-3 minutes,until they soften.
  • Stir in balsamic vinegar, cook for about 1 more minute,turn chicken to coat thoroughly.
  • Spoon sauce over thighs to serve.
