Bamboo Rice image

Short grain Chinese Rice with a green-tea like flavor. Good with Summer salads and Asian cooking. Has a somewhat sticky texture. Brightly colored and aromatic.

1 cup rice (Bamboo Rice, do NOT rinse rice!)
1 1/2 cups water

Steps:

  • Bring water to a boil.
  • Add rice and bring back to boiling.
  • Stir, cover, reduce heat to low.
  • Simmer 12-15 minutes.
  • Remove from heat and let stand, covered, 5-10 minutes.
  • Fluff with fork and serve.

Zhu Tong Fan (Taiwanese Bamboo Rice) image

This street food from tribal villages in the the rugged central mountain range and in villages along the east coast of Taiwan is usually made during bamboo cutting season. It is made by stuffing cut stalks of bamboo with rice, vegetables and wild boars meat then steamed over hot coals. Covered with aluminum foil, this handy carrying case made for the ideal picnic meal. This recipe can also be made in a large bamboo steamer rather than in the oven.

4 cups glutinous rice
10 dried shiitake mushrooms
1/2 tablespoon dried shrimp
1/2 lb ground pork
1 teaspoon vegetable oil
3 tablespoons dark soy sauce
3 shallots, chopped
sweet chili sauce (garnish)
cilantro leaf, chopped (garnish)

Steps:

  • Wash the rice thoroughly and drain. Set aside.
  • In a small bowl, place the dried mushrooms and shrimp. Pour boiling hot water over the items until covered. Allow to sit for 10 minutes, drain and then chop into fine pieces.
  • Preheat oven to 500 degrees F.
  • In a hot wok or hot frying pan, stir-fry the pork in the vegetable oil until brown and fully cooked (5-10 minutes). Drain excess oil then add the chopped mushrooms, shrimp, soy sauce and shallots.
  • Mix well and then divide the mixture between 8 large greased ramekins or pudding bowls. Press down on mixture in each bowl with a spoon.
  • Add rice to greased ramekins until each one is 2/3 full. Use the spoon to press mixture down firmly. Keep adding rice until mixture is at the 2/3 full level.
  • Add enough boiling water to each ramekin until level of water is 1/2 inch above level of the rice.
  • Place the ramekins in a baking pan with sides and fill baking pan with boiling water to about 2 inches. Cover loosely with aluminum foil and place into preheated oven.
  • Cook for 30-40 minutes. Turn off oven and allow baking pan to sit in oven for an additional 10 minutes.
  • Remove foil and carefully plate each ramekin by turning the rice out onto a plate or you could just serve the ramekin on a plate. Top with a little sweet chili sauce and some cilantro leaves.

  • Rinse the rice under cold water, by gently rubbing the rice with your fingertips in a circling motion. Submerge the rice in water and pour out the starchy water. Rinse and repeat until the water becomes clear. Soak rice in water for 20-30 minutes. Meanwhile, start preparing the next ingredients. After soaking for 20-30 minutes, drain water completely and set aside for 10 minutes. If you don’t have time to wait, then shake off the excess water the best you can.
  • Add 1 ½ cup water in a saucepan and bring it to almost boil. Add 1 cup packed katsuobushi to the water, reduce the heat, simmer for 30 seconds, and turn off the heat. Set aside and let the katsuobushi sink to the bottom, about 10 minutes.
  • Prepare boiling water and pour over the aburaage to remove excess oil. Cut in half first and then cut into thin strips. Squeeze excess water out.
  • The rice should be drained well by now. Add the rice into the donabe (or rice cooker/heavy bottom pot). Pour 400 ml broth you prepared, and make sure the rice is evenly distributed in the pot.
