These Healthy Banana Protein Muffins are the perfect nutritious breakfast! Gluten/dairy free and packed with protein, they're delicious + easy to make!

1 cup mashed banana (approx 2 large bananas)
1 egg
4 tablespoons honey
3 tablespoons coconut oil (melted+ cooled)
3/4 cup oat flour (gluten free if necessary)
1/2 cup vanilla protein powder (whey works best)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 cup dark chocolate chips (optional)

Steps:

  • Preheat oven to 350 and prepare a lined or greased muffin tin.
  • In a bowl, mash bananas until smooth. Stir in egg, honey, and coconut oil until combined.
  • Add in oat flour, protein powder, baking powder, baking soda and cinnamon. Stir until combined.
  • Pour batter into cups, filling 3/4 of the way. Do not overfill!
  • Bake muffins for 15 minutes or until the tops are golden brown and a toothpick comes out clean when inserted in the center of the muffin.

1 tablespoon powdered stevia baking blend
1 tablespoon ground cinnamon
1 teaspoon maple-flavored extract
1 teaspoon baking powder
½ teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 15 muffin cups or line with aluminum foil liners.
  • Mix oats, bananas, peanut butter, eggs, flax meal, almond flour, yogurt, agave nectar, vanilla extract, stevia, cinnamon, maple-flavored extract, baking powder, and baking soda in a stand mixer or food processor until batter is smooth. Fill each muffin cup 3/4-full with batter.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 25 minutes. Cool muffins in the muffin cups for 5 minutes before transferring to a wire rack to cool completely.

1 ¼ cups oat flour
½ cup white sugar
½ cup chopped walnuts
2 scoops chocolate protein powder (such as Premier Protein®)
3 teaspoons ground cinnamon
1 ½ teaspoons baking powder
½ teaspoon baking soda
3 overripe bananas, mashed
½ cup unsweetened applesauce
¼ cup milk
2 large egg whites
3 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Mix together oat flour, sugar, walnuts, protein powder, cinnamon, baking powder, and baking soda in a medium bowl.
  • Mix together mashed bananas, applesauce, milk, egg whites, and vanilla extract in a large bowl. Slowly add flour mixture to banana mixture; stirring until just combined. Transfer batter into the prepared loaf pan.

1-1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 medium ripe bananas
1 large egg, room temperature
1/3 cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine dry ingredients. In another bowl, mash the bananas. Add egg, oil and vanilla; mix well. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups half full. , Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.

2 large bananas (1 cup mashed)
1 egg
2 tbsp maple syrup
½ tsp vanilla
¾ cup oat flour
½ cup protein powder
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
¼ cup chocolate chips - and optional to sprinkle more on top.

Steps:

  • Preheat oven to 350F and line a muffin tin with liners. Spray liners with non-stick spray as well.
  • In a large bowl, mash two bananas very well until no lumps remain.
  • Whisk in egg, maple syrup, and vanilla. Set aside.
  • In a smaller bowl, mix together oat flour, protein powder, baking powder, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients and stir until combined.
  • Fold in chocolate chips.
  • Scoop into muffin tins until about ¾ full. I like to use a cookie scoop to make this easy! If you are adding more chocolate chips on top, add them now.
  • Bake at 350F for 15 minutes or until toothpick inserted in the middle comes out clean.

1 large egg
1 tbsp vanilla extract
3 tbsp light brown sugar
2 tbsp cane sugar
1 tsp ground cinnamon
1 1/2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tbsp coconut oil
3 tbsp coconut oil
1/4 cup cane sugar
1/2 tsp ground cinnamon

Steps:

  • Grease a standard muffin pan (or line with paper muffin liners). Preheat the oven to 350°F. Mash bananas in a mixing bowl. Add protein shake, egg, vanilla, brown sugar, cane sugar, and cinnamon and stir well to combine. In a separate small bowl stir together flour, baking powder, baking soda and salt. Add to the banana mixture and stir, just to combine. Gently stir in coconut oil. Don't over-mix the batter. Spoon the batter into the prepared muffin pan and bake for 15 minutes. Makes 12 muffins. To make the cinnamon and sugar topping: Combine the sugar and cinnamon in a small bowl. Put melted coconut oil in a separate small bowl. Dip muffin tops into melted coconut oil and then into cinnamon-sugar. Serve warm or let cool completely.
