½ cup shortening
1 cup packed brown sugar
2 eggs
1 cup mashed bananas
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cloves
½ cup chopped pecans
3 cups sifted confectioners' sugar
1 tablespoon butter, melted
¾ teaspoon vanilla extract
3 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream shortening; add brown sugar, beating well. Add eggs and banana; beat well.
  • Sift together flour, baking powder, baking soda, salt, and spices. Add to creamed mixture; mix well. Stir in pecans.
  • Drop dough by rounded tablespoonfuls, 2 inches apart onto greased cookies sheets. Bake for 12 minutes. Remove to wire racks to cool. Dip half of cooled cookies into Powdered Sugar Icing.
  • To Make Icing: Combine 3 cups confectioner's sugar, 1 tablespoon melted butter or margarine, and 3/4 teaspoon vanilla extract. Add milk to yield desired consistency (you may need to add a little extra), beating until smooth.

Steps:

  • Preheat oven to 400°F.
  • Grease cookie sheet.
  • In a large bowl, beat 1 1/4 cup sugar, shortening and vanilla until fluffy.
  • Beat in eggs and then bananas.
  • Combine flour, baking powder, salt and baking soda.
  • Beat into sugar mixture.
  • Chill 30 minutes.

1/2 cup coconut flour (sifted)
1/2 cup mashed banana (about 2 medium ones)
1/4 cup cashew butter (can sub for another nut butter*)
1/4 cup maple syrup (can sub for another sticky sweetener*)
Dairy-free Chocolate chips (optional)

Steps:

  • Preheat the oven to 350 degrees and line a baking dish with baking paper and set aside.
  • In a mixing bowl, combine the coconut flour and banana and mix well- This should be very crumbly.
  • In a microwave safe bowl or stovetop, melt your nut butter with liquid sweetener and pour into the dry mixture. Mix until fully incorporated and a thick batter is formed. Add chocolate chips if desired.
  • Form into balls and transfer to the lined cookie sheet. Press firmly into a cookie shape and bake for 12 minutes. Remove and allow to sit for 10 minutes until they firm up slightly.

1 medium banana, cut into 1/4-inch slices

3 tablespoons creamy peanut butter

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in banana and vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. 2 tablespoons banana instant pudding and pie filling mix
1 1/3 cups powdered sugar

  • Heat oven to 375°F. In small bowl, place 1/2 cup of the dry cake mix; set aside.
